Also I know a lot of folks are opposed to eating bugs, but that's a very common bear food. Vegetarian Breakfast Recipes

So for those who don't know @emoryvalentine14 (my wife) is vegetarian, and I am not but we respect each other's food choices because we love each other very much.
When Taylor first came to my house, she was used to only eating Knorr Butter Noodles and canned corn and green beans. It honestly, was quite tragic. For those who don't know her story, she comes from a very abusive household and has a mother who is a drug addict. I may post a post about that later. Her mother essentially starved her for 25 years of her life and right now she is only 97lbs (she has gained 4lbs since September which I am very proud of her because autistic beans don't always grow like they should because of food OCD basically)
Anyways, she was terrified of eating new things because of her OCD about textures and tastes so I made her a deal: if you try a bite and don't like it I will never cook it again.
In my teen years I had been a die-hard vegan for 5 years, and so I had a bit of background in cooking vegan (and later vegetarian). I decided I would make it my mission to make her good & healthy vegetarian food.
Fast-forward a few months now from September and she is now trying new things without fussing, up to eating all sorts of good and healthy foods, and raves about how great a cook I am lol.
I would like to share some of her favorite recipes since Valentine's Day just passed!
Breakfast
Vegetarian Bagel with Swiss, Ripe Olives, Sliced Tomato, and Parsley
The picture above at the top of this post is the physical version of this recipe. Tay decided she loves fresh tomatoes but her favorite things are what she calls "toasties."
I try to cook her a good toasty breakfast every morning and this recipe is as follows:
1 slice of fresh roma tomato (thick cut) 1 toasted plain bagel 1 slice swiss cheese 3 - 4 sprigs of fresh Parsley (chopped) 1 small handful of ripe sliced olives (black olives) (optional) 1 or 2 sliced mushrooms (optional) 1 teaspoon / tablespoon of Parmesan Ranch (optional) black pepper to taste on tomato slices To start off I toast the bagel, then I layer it with all the ingredients (washing the parsley and mushrooms very good), and pop it into the microwave for about 30 seconds to melt the cheese and warm the veggies slightly. Then if she wants the Parmesan ranch, I put a small amount on the top bagel (spread it). She also occasionally likes adding some black pepper to taste on the tomatoes.
Lunch
Taylor is a huge fan of salads so one of her favorites right now is fruity salads with her Parmesan ranch lol.
Berry-Delightful Garden Salad
This beautiful salad features fresh blackberries and blueberries, a few sliced / cubed apples, and a lot of cheese which is Taylor's favorite.
Ingredients:
1/2 cup blackberries, fresh 1/4 cup blueberries, fresh 2 cups of Garden Salad blend with carrots and red cabbage 1 handful of toasted almonds 1/4 cup feta cheese 1 handful of mozzarella cheese (skim) 1 teaspoon of grated parmesan Parmesan Ranch or Avocado Ranch to taste (optional) cubed Hass Avocados
Preparation:
Wash everything, then put the garden salad in, the berries in, and the almonds in, layer it with the cheeses, put some cubed Avocados in, and then top with ranch to taste.

Dinner
Gardein Chick'n Tender Sandwich
This is Tay's new favorite dinner. I cooked her this for Valentine's Day and she absolutely loves the vegan tenders on it.
Ingredients:
4 Gardein Vegan Chick'n Tenders 2 slices of Roma Tomatoes 1 handful of Feta Cheese 1 slice of Swiss 1 teaspoon of Parmesan Ranch 2 Kings Hawaiian Buns
Recipe:
Cook the tenders how it says on the bag. We like the oven method because it makes them crunchy. Wash the tomato, slice it. Spread Parmesan ranch over toasted King's Hawaiian buns, then put the cheeses down, the tomatoes, and then put the chicken tenders on it when they're done. Really I just flip the sandwich because it's easier, otherwise the ingredients are hard to layer.
Conclusion
If you like the recipes I mentioned, feel free to ask for more. I may be posting quite a bit including what we spoil our cats with which is recipes I make for them (that are kitty friendly!). Hint: plain Prosciutto, string mozzarella, and Friskies is delicious to them. (I make it into kitty prosciutto wraps!)

Did you know?
You can also get vegan or vegetarian options for musubi by replacing the spam with crispy (or grilled) tofu and avocado (or any other veggie you like, I think cucumbers would give it a bit of crunchiness and freshness, don't you think) instead of egg.
I used to be vegetarian for a good while but the reason why I keep my former meatless recipes in hand is because the can have very creative ways to flip recipes opening chances to different alternatives within this world of cooking and eating that is often consider limited.

In autumn, it's very popular to eat soups like this. Here I'm calling this a soup because it's what it's called in English, but in Catalan we usually make a difference between a soup / sopa (broth with things in it, usually pasta and can also have vegetables and sometimes some meat) and what we see in this video which we'd call a cream / crema. A "cream" is made of vegetables and is made into a homogeneous creamy liquid.
In this case, La Sofregida is making one of the most common "creams" for autumn: squash "cream".
I'll add her recipe under the cut.
Squash cream (crema de carbassa):
Ingredients:
Squash
Leek
Scallion
Water
A sprinkle of olive oil
Salt
You can also add carrots or a potato and some cheese that melts easily, and mix it all in like the other ingredients.
Preparation:
Place the vegetables in a pan and add a sprinkle of olive oil and salt, then slightly stir-fry the vegetables to bring out the taste.
Add water to boil them for 30-40 minutes more or less, until the vegetables are cooked.
Mix it all with a blender to make a homogenous soup, and serve!
When you serve it, you can add a bit of Iberian ham or bacon on top. Enjoy!

Mason Jar Instant Noodle Soup - 229 kcal/8g protein

Servings: 1 serving. 229 kcal / 8g protein
Ingredients
1 1/2 tsp. vegetable bouillon base (we used Better Than Bouillon)
1/4 tsp. grated fresh ginger
1 tbsp. warm water
1 bundle (about 11/2 ounces) instant rice vermicelli
1/4 c. kimchi, roughly chopped
1/4 c. shelled edamame, thawed if frozen
1 c. baby spinach
2 cremini mushrooms, very thinly sliced
1 scallion, thinly sliced
2 1/2 c. boiling water
Instructions
In 32-ounce wide-mouth mason jar or other heatproof jar, combine bouillon base and ginger. Stir in warm water. Add noodles and carefully cut in half with kitchen shears. Add to jar in following order: kimchi, edamame, spinach, mushrooms, and scallion; screw on lid. Refrigerate overnight if desired.
If refrigerated, let jar sit 20 minutes at room temperature. When ready to serve, pour boiling water over ingredients and cover with lid. Let sit until noodles are tender, 3 to 4 minutes, then stir to combine.
Pump Up the Protein: Add 1/2 cup shredded rotisserie chicken and replace the vegetable bouillon base with chicken bouillon base, or pop in 6 to 8 frozen cooked small shrimp (they’ll thaw overnight in the refrigerator).
