Mason Jar Instant Noodle Soup - 229 kcal/8g protein

Servings: 1 serving. 229 kcal / 8g protein
Ingredients
1 1/2 tsp. vegetable bouillon base (we used Better Than Bouillon)
1/4 tsp. grated fresh ginger
1 tbsp. warm water
1 bundle (about 11/2 ounces) instant rice vermicelli
1/4 c. kimchi, roughly chopped
1/4 c. shelled edamame, thawed if frozen
1 c. baby spinach
2 cremini mushrooms, very thinly sliced
1 scallion, thinly sliced
2 1/2 c. boiling water
Instructions
In 32-ounce wide-mouth mason jar or other heatproof jar, combine bouillon base and ginger. Stir in warm water. Add noodles and carefully cut in half with kitchen shears. Add to jar in following order: kimchi, edamame, spinach, mushrooms, and scallion; screw on lid. Refrigerate overnight if desired.
If refrigerated, let jar sit 20 minutes at room temperature. When ready to serve, pour boiling water over ingredients and cover with lid. Let sit until noodles are tender, 3 to 4 minutes, then stir to combine.
Pump Up the Protein: Add 1/2 cup shredded rotisserie chicken and replace the vegetable bouillon base with chicken bouillon base, or pop in 6 to 8 frozen cooked small shrimp (they’ll thaw overnight in the refrigerator).

Day 6 of getting my sh!t together!
Hello! Today was a productive day, even though it started late. I managed to sneak in a quick workout after having my morning coffee and burn the calories from yesterday's celebratory food fest. I told you I skip workout with any VALID excuse, but I make sure to do it on days that I am well and there's no excuse. The first meal of the day was my late brunch, and it was good. I managed to finish work early as well. Dinner was light and fulfilling.

1 cup of Campbell’s Chunky Healthy Request Soup, Hearty Italian Wedding Soup With Meatballs And Spinach (about half a can): 120 calories

I would usually add shredded lettuce to the sandwich for extra crunch but I ran out of it and did not want to go to the store. 😅

This has been my new hyper fixation. I’ve eaten this soup (with shiratake noodles, or tofu, or dumplings, or nothing) every day for two weeks😌😌😌😌🙂‍↕️🙂‍↕️🙂‍↕️
It is a Thai curry soup, broth is vegetables I had in the freezer from my garden last year with Thai yellow curry (NO CREAM)
Toppings are red cabbage and carrots, lots of cilantro, mint leaves, and green onion
Sooooo delicious and <20cal!!! NO OIL! 😋

Slow Cooker Butternut Pear Soup - 132kcal/3g protein

Servings: 6 - 132kcal/3g protein per 1 1/4 cup serving
2 lbs butternut squash, halved, seeds removed (1 medium)
2 small ripe pears, peeled, cored and diced
2 large shallot, quartered
1 tablespoon fresh grated ginger
2 1/4 cup chicken or vegetable broth, or 1-1/2 tbsp Better Bouillon w/water
1/2 cup coconut milk, plus more optional for garnish
pinch nutmeg
1/4 teaspoon kosher salt
Place the squash, pears, shallots, ginger and broth in the slow cooker.
Cook on low for 8 hours or high 4 hours, until soft and cooked through, a knife should easily be inserted.
Remove squash from skin and discard the peel.
Stir in coconut milk and nutmeg.
Blend in a blender or using an immersion blender until smooth.
Season with 1/4 teaspoon salt and black pepper and garnish with more coconut milk, if desired.

Day 2 of getting my sh!t together!
It is the second day of getting my life together, and although it wasn't perfect, it was still consistent. I am an insomniac, so sleep doesn't come easily to me without any help. I did not take my supplements or drink chamomile tea last night, which generally helped me to sleep. The supplements are usually made up of lavender and other herbs that help relax your nerves.
It works for me. So, I tossed and turned till 4 in the morning, as a result of which I could not go for a walk in the morning. But, I woke up just in time for my yoga class and joined it. I don't really enjoy it, but doing yoga makes me feel better throughout the day. It also helps me with sore muscles and body aches. I also feel very calm and at peace while doing it.
However, unlike yesterday, work was good. I managed to get a lot done and also binged on a couple of episodes from Queen of Tears. I'm so hooked on it. But, I can't watch anything at a stretch so I take breaks in between. It was a decent day but I wasn't feeling my best. I can't figure out why.
Anyways, now let's come to food. Since I woke up late, I wasn't in the mood for breakfast but I still ate something and lunch was a fulfilling Bengali meal, it was so yummy. Dinner was light and hearty. Also, I drank chamomile tea now, so hopefully I can sleep.
Breakfast:
1) Ice cream sandwich (I know not the healthiest option but I love it)
2) Black coffee

Morning Snack: I got snacky right before heading to shower and that's when I had some leftover white potato curry aka shada alur torkari! It's so yummy. There are days when I eat this for dinner by itself.

Dinner:
I had some chicken ham so I boiled some corn and stirred it with the ham in some butter and pepper. I then put together a salad with the buttered corn and ham, cucumbers, onions, and green chilies, sprinkled some garlic salt, pepper, and chat masala. Served with a spoonful of relish on top. This really put my day together. It was so comforting.
