Mason Jar Instant Noodle Soup - 229 kcal/8g protein

Servings: 1 serving. 229 kcal / 8g protein
Ingredients
1 1/2 tsp. vegetable bouillon base (we used Better Than Bouillon)
1/4 tsp. grated fresh ginger
1 tbsp. warm water
1 bundle (about 11/2 ounces) instant rice vermicelli
1/4 c. kimchi, roughly chopped
1/4 c. shelled edamame, thawed if frozen
1 c. baby spinach
2 cremini mushrooms, very thinly sliced
1 scallion, thinly sliced
2 1/2 c. boiling water
Instructions
In 32-ounce wide-mouth mason jar or other heatproof jar, combine bouillon base and ginger. Stir in warm water. Add noodles and carefully cut in half with kitchen shears. Add to jar in following order: kimchi, edamame, spinach, mushrooms, and scallion; screw on lid. Refrigerate overnight if desired.
If refrigerated, let jar sit 20 minutes at room temperature. When ready to serve, pour boiling water over ingredients and cover with lid. Let sit until noodles are tender, 3 to 4 minutes, then stir to combine.
Pump Up the Protein: Add 1/2 cup shredded rotisserie chicken and replace the vegetable bouillon base with chicken bouillon base, or pop in 6 to 8 frozen cooked small shrimp (they’ll thaw overnight in the refrigerator).

This is the ultimate low cal sweet treat! Absolutely delicious and a huge portion!

Cheesecake fluff: 121cal
Oikos 0% lactose free plain Greek yogurt 175g-90c
Jell-o sugar free white choc pudding mix 10g - 31c
Swerve 0cal sweetener 4g - 0c
Baking powder 1/4 tsp - 0c
Mix all ingredients together to make cheesecake fluff.
You can eat this as is for a delicious, low cal sweet treat, or add in some toppings!
*I added 1 crushed Oreo thin for 34 cals, for a total of 155cals *
Variations:
Use different flavours of sugar free pudding mix for different flavours of cheesecake fluff, still use 10g.
Use any toppings you’d like, Oreos, Fibre One brownie, strawberries, peanut butter powder, really anything you like.
*any 0cal sweetener will work, I just had Swerve brand on hand.*

today was unintentionally vegetarian and very uneventful. i sometimes estimate, especially the things i eat often, but i measured dinner today cuz i thought i cut up way too many veggies and i was honestly shocked at the amount i could have.. measured yogurt out of curiosity too and turns out i’ve been underestimating this entire time
this is turning into a diary but i had a bit of a confrontation with a “friend” :/ can’t stand people who think they’re right because their aunt/cousin/grandpa’s uncle/dog works in the field and that somehow makes them an expert :/ they will blow up on you despite being wrong, i can’t stand argumentative people, you’re not the only one who’s lived life and gathered info 💀 check your sources tho
so i got fixated and couldn’t do my assignments, had to make dinner earlier to distract myself 😫can’t handle being so affected by other people
