WITCHY SAGE BUTTER ROLLS
These things are really like garlic rolls meet cinnamon rolls but with delicious sage butter!
They are perfect if you have a little extra time on your hands, and can be served alone or with a dinner, stew, or any type of soup and it pairs pretty well.
Quite the crowd pleaser ^_^
INGREDIENTS
For the Tangzhong:
2 tablespoons  bread flour
2 tablespoons water
4 tablespoons whole milk
For the Bread:
4 cups Bread flour
4 tbsp sugar
1/3 cup milk
A full packet of Instant Dry Yeast
2 large eggs
Half a stick of Salted butter
Pinch of Salt
For the Egg Wash:
1 large egg
1 tbsp water
For the Sage Butter:
7 tbsp Salted butter
1 tsp garlic salt
2 tsp ground sage
1 tsp thyme
2 cloves minced garlic
DIRECTIONS:
Heat the Tangzhong ingredients over medium heat until they become very thick, about the consistency of a very thick brownie batter. It should be congealed enough so that it doesn't slide off the spatula very easily. This should take no longer than 5 minutes. Let it cool down completely (If you add it in hot, you will risk killing the yeast and the bread will not rise.
(What is Tangzhong?) Its a mixture of flour, milk, water that really steps up your game when it comes to the fluffiness of the rolls. Once you try adding this to your basic breads, you wont go back!
Bloom yeast in warm milk (Put in the microwave for about 15 seconds, it should be lukewarm, not hot. Add Flour, a pinch of salt, and sugar into a stand mixer with the dough hook attachment.
Crack egg and milk into the yeast and with the stand mixer’s dough hook attachment, mix into the flour mixture. Add in Tangzhong. Add butter 1 tablespoon at a time and mix until the dough is elastic. Then mix for another 5 minutes. If the dough looks too dry, add a tablespoon of water, and repeat until smooth. If it is too liquidy, add a couple pinches of flour.
Put the bread dough in a lightly greased medium bowl, cover with plastic wrap, and let rise at room temperature for 2 hours. In the meantime, make your sage butter by beating your salted butter, garlic, and herbs.
Flour the workspace and roll the dough flat to about 1/4 inch thick. Smear all of your butter mixture onto the dough. Roll as you would a cinnamon roll, from the widest side of the rectangle to the other side.
Cover for 2 more hours for them to proof. Then combine egg and water to form your egg wash and brush it onto the rolls briefly before putting it in the oven. Put in the oven at 350 F for 25 minutes or until golden brown.

^ THIS is my mom's copy of my family's christmas eve norwegian meatballs recipe. i don't even celebrate christmas anymore, lol
don't worry, i transcribed and edited that mess into something more legible. here it is, under the cut:
recommended tools:
2 mixing bowls
whisk/beater
frying pan
spatula
ingredients:
12 tbsp very finely chopped onion
8 tbsp butter
2 lb ground beef
3/4 lb ground pork
1 cup bread crumbs
1 cup milk
2 eggs
4 tsp sugar
2 1/2 tsp salt
1 tsp nutmeg
1/2 tsp allspice
steps:
premix sugar, salt, nutmeg, and allspice
beat eggs
brown onions in half the butter
in a separate bowl from the sugar, mix the browned onions with beef, pork, bread crumbs, milk, and eggs. don't overmix, or the meat will become tough.
add sugar mixture to meat mixture, still taking care not to over-mix
shape meat mixture into 1 inch balls
heat the rest of the butter at a low temperature
add meatballs and brown over medium heat. shake the pan to keep meatballs round and ensure even cooking. serve alongside mashed potatoes, lefse, and søtsuppe!

For dinner tonight, homemade congee -- savory rice porridge -- that sticks to the bone.
Homemade Congee
For 4 servings:
Congee:
1 cup [uncooked] long grain rice
4 cups bone broth [chicken or beef]
3 cups water
1 tsp. Kosher salt
Combine all the ingredients together in a small pot. Bring to a boil; simmer on the stove for at least 1-hour and cooked down to desired texture. (I don’t like my rice too broken down.)
Common congee seasonings include green onions, ginger, roasted peanuts, egg, pork floss and so much more. But for this recipe, I added duck to mine!
Duck Breast (the lazy air-fryer version) -- Optional:
12-ounces Moulard duck breast
1/2 teaspoon five spice
1/4 teaspoon kosher salt
1 tbsp. vegetable oil
Pat dry the skin on the duck breast with a clean paper towel. Score the skin with a crosshatch pattern. Add seasonings and oil on the skin, spreading evenly. Cook in an air fryer at 400F for 15 minutes -- the internal temperature should be around 130F. Slice before serving with congee.

Corn Soup weather
We're getting our first freeze this weekend, and my brain turns to favorite winter foods. Not a huge soup person, but I have an amazing chili recipe, and a very good corn soup recipe. I'll share the corn soup recipe here, as it's pretty easy (compared to the chili, which is a witch's brew of ingredients/spices).
Traditional Great Lakes Corn Soup has three main ingredients: lyed corn, (hard) beans, and meat stewed slowly in broth--with about a million family variations. Ha. Traditionally, the meat was venison, and leeks/green onions (or other onions were added), plus some herbs. Any hard bean will do, but I prefer red beans or Appaloosa beans for color. Below is how I make it. You could make a meatless version by dumping the meat and using vegetable broth. I HAVE made this with venison and IT IS AWESOME (much better than the pork version).
Additionally, lyed corn = hominy = posole. What it's called varies, depending on where you live. It's best to get dried hominy, not canned, but if you're in a hurry (as I often am), canned hominy will do. Drain it to get out the excess salty fluid! White is preferable to yellow (sweeter), but purple/blue makes a fun variation.
Below assumes dried goods, but if you want to "cheat" and use canned goods, 2 cans hominy for every 1 of beans.
Native Great Lakes Corn Soup
1 lb. package of dried lyed corn/hominy/posole
8 oz. dried dark red beans, or Appaloosa beans (I grow my own)
1 large onion or 2 leeks or 6-10 green onions (depending on size)
1 lb package bacon, fried crisp to crumble (can be excluded)
1/1.5 lb. salted pork or (healthier) pork loin cubed; (venison if you can get it--if so, drop the bacon)
pork stock or other broth
seasoning: salt, pepper, savory, thyme, garlic, sumac, (rosemary)
YOU MUST soak the corn and beans overnight. For the uninitiated, if you don't do this, they'll break your teeth. Then cook both for c. 2 hours before you start on the soup. Both must be soft! (This is why I sometimes cheat and use canned, but it's never as good.)
While waiting for the corn and beans, using an iron skillet (best!), fry the bacon, nice and crisp, then sear the pork in some of the retained bacon grease (don't cook through). Also sear (but don't cook through) the onions/leeks/green onions.
Once the beans and corn are ready, drain and dump into a big crock pot along with the pork and onions. Pour in enough stock to cover well.
Add herbs. My amounts vary, tbh. Don't overdo the salt, pepper, or garlic. But go wild with the savory and thyme (1 tbsp each [fresh] is common for me). I consider both essential. Sumac is also great if you can get it (maybe 1/2 tbsp). Be careful with rosemary or it'll overwhelm subtler spices. You can leave out if you don't like it. But I taste as it cooks and add more of whatever seems missing.
Set your crock-pot to high for about 45 min--just enough to get it good and hot all through--then reduce and let is simmer on low for 3+ hours. Add stock as you need. Like good chili, this is better cooked long and low than hot and fast. Flavors need to mingle.
Add most of the bacon near the end, mix well, and be sure it's got about half an hour to mingle.
Serve with more bacon sprinkled on top + good bread to soak up the broth. Sourdough is recommended.
