This beautiful Greek Super Salad is packed with amazing fresh and boiled vegetables, fruits and nuts and has a lush vinaigrette sauce. It's filled with so many complimenting flavors and nutrients to satisfy everybody.
I have prepared it to accompany my traditional dinner of fried salted cod and Garlic Sauce (aka Bakaliaros Skordalia) for March 25th, Greece's Independence Day. However, it can be prepared all year round to accompany any kind of meat, chicken or fish dishes.
It resembles somewhat the renowned Politiki Salad, but with beetroots as the main ingredient.
Let me show you how to prepare it.
Suitable for vegans and fasting.
 
INGREDIENTS
Ingredients for the vinaigrette sauce:
·      1/4 cup / 60 ml / 4 tbsp. Extra Virgin Olive Oil
·      30 ml / 2 tbsp. Balsamic Vinegar
·      1 small Garlic Clove
·      Freshly Ground Salt and Pepper

Ingredients for the Salad:
·      250 gr. / 9 oz boiled Beetroots, cut in strips
·      200 gr. / 7 oz Red Cabbage (or white or combo), finely shredded
·      200 gr. / 7 oz Tomatoes, finely chopped
·      1-2 Spring Onions, finely chopped
·      2 tbsp. Celery leaves, finely chopped
·      60 gr. / 2.1 oz / less than 1/2 cup Walnuts, coarsely chopped
·      ½ Green Apple, in cubes (Granny Smith, or other with sour taste)
·      Optional: Feta cheese, crumbled (or vegan substitute)

METHOD:       
A.    Prepare the vinaigrette ahead of time:
1.     If you have a bottle where you can make and mix the vinaigrette sauce (like me) that would be great. Otherwise, use a bowl with lid and a whisk.
2.     Pour the Olive oil in the bottle, adding also the balsamic vinegar.
3.     Add the garlic clove next, minced.
4.     Season with ground Salt and Pepper, to taste.
5.     Place the lid on top and shake the bottle to blend all ingredients very well. Reserve.
6.     Tip: Prepare the sauce earlier and store it in the fridge.
 
B.    Make the Salad:
7.     Place the beet strips and red shredded Cabbage in a large, deep Salad bowl.
8.     Add the chopped tomatoes, spring onions and celery leaves next.
9.     Mix the salad ingredients very well using your gloved hands.
TIP: Rub them and squeeze them to release the aromas and the juices from the vegetables!
10.  The Salad needs now time to set and chill, before adding the apple, walnuts and sauce.
11.  Cover it with plastic wrap and store in the fridge for at least 1h!
12.  Just before serving, peel the halved apple and cut it in cubes.
13.  Bring the salad from the fridge and add the chopped walnuts.
14.  Bring the bottle with sauce from the fridge, shake it once more and pour it on top of the Salad.
15.  With a large spoon, mix the salad to incorporate the sauce with the vegetables.
16.  Finish by adding the apple cubes (and crumbled feta if using) on top and toss to mix the salad once more.
17.  Ready to serve.

 D. More Info about the custom of Bakaliaros Skordalia- Fried Cod and Garlic Sauce:
A custom across the country on March 25th, is to eat crispy, fried Cod fish with garlic sauce (Bakaliaros skordalia)!
This day is an exemption to the Great Lent rules, where no animals or animal products are not consumed. However, Greek Orthodox Church allows this exception for the celebration of the Annunciation Day!

Αυτή η πανέμορφη σούπερ σαλάτα είναι γεμάτη με εκπληκτικά φρέσκα και βραστά λαχανικά, φρούτα και ξηρούς καρπούς και μια πλούσια σάλτσα βινεγκρέτ. Είναι πλημμυρισμένη με τόσες πολλές γεύσεις και θρεπτικά συστατικά για να ικανοποιήσει όλους.
Την έχω ετοιμάσει για να συνοδεύσω το παραδοσιακό μου δείπνο με τηγανητό παστό μπακαλιάρο και σκορδαλιά για την 25η Μαρτίου. Ωστόσο, μπορεί να ετοιμαστεί όλο το χρόνο για να συνοδεύσει κάθε είδους κυρίως πιάτα με κρέας, κοτόπουλο ή ψάρι.
Μοιάζει κάπως με τη φημισμένη Πολίτικη σαλάτα, αλλά με κύριο συστατικό τα παντζάρια.
Ελάτε να σας δείξω πώς να την ετοιμάσετε κι εσείς.
Κατάλληλη για βίγκαν και νηστεία.
 
ΥΛΙΚΑ
Υλικά για τη σάλτσα βινεγκρέτ:
• 1/4 φλ. / 60 ml / 4 κ.σ. Έξτρα παρθένο Ελαιόλαδο
• 30 ml / 2 κ.σ. Βαλσάμικο Ξύδι
• 1 μικρή Σκελίδα Σκόρδο
• Φρεσκοτριμμένο αλάτι και πιπέρι

Υλικά για τη σαλάτα:
• 250 γρ. / 9 oz βραστά Παντζάρια, κομμένα σε λεπτές λωρίδες
• 200 γρ. / 7 oz κόκκινο Λάχανο (ή λευκό ή συνδυασμός), ψιλοτριμμένο
• 200 γρ. / 7 oz Ντομάτες, ψιλοκομμένες
• 1-2 φρέσκα Κρεμμυδάκια, ψιλοκομμένα
• 2 κ.σ. Φύλλα Σέλινο, ψιλοκομμένα
• 60 γρ. / 2,1 oz / λιγότερο από 1/2 φλ. Καρύδια, χοντροκομμένα
• ½ Πράσινο Μήλο, σε καρεδάκια (Granny Smith, ή άλλο με κάπως ξινή γεύση)
• Προαιρετικά: τυρί Φέτα, θρυμματισμένη (ή βίγκαν υποκατάστατο)

ΜΕΘΟΔΟΣ:
Α. Ετοιμάστε τη βινεγκρέτ από πριν:
1. Αν έχετε ένα μπουκάλι όπου μπορείτε να φτιάξετε και να ανακατέψετε τη σάλτσα βινεγκρέτ (όπως εγώ) θα ήταν πιο εύκολο. Διαφορετικά, χρησιμοποιήστε ένα μπολ με καπάκι και ένα σύρμα.
2. Ρίξτε το ελαιόλαδο στο μπουκάλι, προσθέτοντας και το βαλσάμικο ξύδι.
3. Προσθέστε στη συνέχεια τη σκελίδα σκόρδο, λιωμένη.
4. Αλατοπιπερώστε, κατά βούληση.
5. Τοποθετήστε το καπάκι από πάνω και ανακινήστε το μπουκάλι για να αναμειχθούν πολύ καλά όλα τα υλικά. Βάλτε στην άκρη.
6. Συμβουλή: Ετοιμάστε τη σάλτσα νωρίτερα και φυλάξτε τη στο ψυγείο.
 
Β. Φτιάξτε τη σαλάτα:
7. Βάλτε τις λωρίδες παντζαριού και το κόκκινο λάχανο σε μια μεγάλη, βαθιά σαλατιέρα.
8. Προσθέστε στη συνέχεια τις ψιλοκομμένες ντομάτες, τα φρέσκα κρεμμυδάκια και το σέλινο.
9. Ανακατέψτε πολύ καλά τα υλικά της σαλάτας με τα χέρια σας, με γάντια.
ΣΥΜΒΟΥΛΗ: Τρίψτε και πιέστε τα λαχανικά για να βγάλουν τα αρώματα και τους χυμούς τους!
10. Η σαλάτα χρειάζεται τώρα χρόνο για να δέσει και να κρυώσει, πριν προσθέσετε το μήλο, τα καρύδια και τη σάλτσα.
11. Καλύψτε τη με πλαστική μεμβράνη και φυλάξτε στο ψυγείο για τουλάχιστον 1 ώρα!
12. Λίγο πριν τη σερβίρετε, ξεφλουδίστε το μισό μήλο και κόψτε σε καρεδάκια.
13. Βγάλτε τη σαλάτα από το ψυγείο και προσθέστε της τα καρύδια.
14. Βγάλτε το μπουκάλι με τη σάλτσα από το ψυγείο, ανακινήστε άλλη μια φορά και περιχύστε πάνω από τη Σαλάτα.
15. Με ένα μεγάλο κουτάλι ανακατέψτε τη σαλάτα ώστε η σάλτσα να καλύψει όλα τα λαχανικά.
16. Τελειώστε προσθέτοντας από πάνω τα καρεδάκια μήλου (και τη τριμμένη φέτα αν χρησιμοποιήσετε) και ανακατέψτε τη σαλάτα για άλλη μια φορά.
17. Έτοιμη για σερβίρισμα.

Σερβιρισμένη εδώ με τηγανητό, αφράτο παστό μπακαλιάρο, σκορδαλιά και ούζο, αυτή η σαλάτα έχει τη φρεσκάδα και τη γλυκύτητα που χρειάζεται για να φέρει αντίθεση με τις πικάντικες γεύσεις των άλλων πιάτων, συνοδεύοντας τα άψογα.

To motivate/trigger myself :)
REASONS:
To look good in all clothes
Abs
Skinny legs
Smaller boobs
Pretty face
For my (gymbro) boyfriend
To be carried easily
Bikini's in summer
Confidence
To look better than the other girls
To be happy
To be more comfortable running/working out in public
To be seen as "small" and "petite"
To be as skinny as my sister
GOALS/REWARDS:
55kg: Hair and skincare stuff
52kg: bikini
50kg: septum peircing
48kg: new clothes
PLAN:
Workout:
Do some form of intense enough cardio everyday e.g. running, cycling, stairmaster.
Keep steps up AS WELL as cardio, minimum 10k, but aim for 15k
Bodyweight workout every-push ups, planks, pull up progressions
Weight training in the gym 2-3 times weekly
NEVER eat school lunch
Avoid eating out
MEAL PREP!! (Chickpea salads, chicken breast, soup, porridge, cut up carrots, etc.)
DRINK A SHIT TON OF WATER (when I wake up, before eating, during eating, after)
Big cup of tea every after school and then after dinner.
Utilise coffee, gum, mints
No fizzy drinks
Diet:
NEVER finish dinner
NEVER eat anything after dinner
NO SWEETS OR JUNK FOOD UNLESS PLANNED IN ADVANCE (only junk acceptable is a) pastries from bakery or b) chocolate on occasion.
AVOID bread, pasta, noodles etc.
Eat breakfast and eat throughout the day TINY small portions.

DO NOT BINGE AT ALL EVER

yogurt- especially the protein kind. Good if craving something sweet.

Think about everything. Think about how unhappy you are with your life. Think about how long you've been doing the same old shut for? Don't you want it to be over? Don't you want to finally get what you want and be happy? Don't you want to finally be able to move on? Think about how long ago you could've gotten there if you hadn't binged all those times?
Think about where you could be so soon if you just stick to it, for a short while. Food is always there. Food is around you all the time in abundance. You ALWAYS have the choice to eat. So CHOOSE not to.
Don't make excuses. NEVER make excuses. There are no reasons that you binge other than the fact you want to. You are in control. You are always in control. Every time you binge, that is your choice. Your doing. Every time you reach for that bread, you could just as easily remove yourself from the situation. Walk away.
Hunger is only temporary. You will always get to eat again. Remember your reasons. Think about your future. Think about your rewards. Not binging will always be worth it.
You have the ability to be skinny and lose the weight so do it! I know you can!!

Could you please do some headcanons about Batmans cooking disasters over the years?
Age 5: Bruce puts tinfoil in the microwave. Alfred shakes his head and laughs
Age 6: He decorates a cookie so badly another kid cries until they throw up
Age 7: He tries to make a PB&J and the countertop is sticky for a week
Age 8: He tries to make Martha's chicken noodle soup but ends up crying on the kitchen floor surrounded by half-chopped vegetables
Age 9: He tries to impress a houseguest by recreating Thomas's mixology tricks (sans alcohol). There's still a stain on the ceiling to this day
Age 10: He makes green eggs. It's not on purpose. He's never even read the book
Age 11: He makes lava in the school cafeteria
Age 12: He tries to make cheese bread by drilling holes into a baguette and filling it with melted nacho cheese

Age 31: Bruce sees a hungry Jason Todd and the first thing he does when they return to the manor is make a double-decker bread sandwich. That's bread with two more slices of bread in between
Age 32: Bruce packs Dick and Jason's lunchboxes when Alfred is out of town. They're supposed to include a salad. Instead, Dick gets a whole head of lettuce and Jason's is just a bottle of ranch
Age 33: He makes hot chocolate after patrol... but forgets the chocolate
Age 34: The Manor is too cold, so Bruce tries to warm it up by making Jason's favorite soup. His hands shake the whole time. Suddenly, he's eight years old again, sitting on the kitchen floor surrounded by scraps reminding him of his failure
Age 35: Jack and Janet Drake are out of the country again, leaving young Timmy by himself. Bruce decides to bring some dinner over. It's baked perfectly, but it's full of things that shouldn't be anywhere near a casserole dish. They end up ordering takeout and watching old detective movies together
Age 36: Steph walks through how to make waffles. Bruce is standing there, watching closely and taking notes. They still come out looking radioactive
Age 37: Cass asks if they can get smoothies. Bruce says he can make them at home. She gives him a warning look but that's not enough to stop him. Cue Bruce forgetting to put the lid on the blender
Age 38: Jason's first night back at home, Bruce tries to make that soup. It shoots out like a geyser and hits the lights. He's panicking until he hears Jason laugh, and then the soup doesn't matter
Age 39: Damian screws up hummus and he desperately tries to hide it so people won't see him as inadequate at something so basic. Instead of getting upset, Bruce assures him it's okay and offers to fix it. (He doesn't fix it, he just makes it worse)
Age 40: Bruce's birthday happens while he's fake-dead and away from home. He grabs a convenience store cupcake and sticks a single candle on it. Then he closes his eyes, pretends his family is around him, and makes a wish. (The candle droops and sets the hotel sheets on fire)
Age 41: Back at the Manor, he attempts to make lemonade on a particularly hot day. Selina offers to help, but Bruce declines, saying, "How hard can it be?" (Spoiler alert: it's not supposed to be full of seeds)
Age 42: Kate shows him a video of Canadians pouring maple syrup into the snow to make candy, so he gets her to boil the syrup so they can do it together. The problem comes when they can't control the pour and end up with a glob the size of Damian
Age 43: As part of a school project, Bruce and Duke try to deduce the Coca-Cola secret formula. Duke's teacher takes a point off because at the beginning he told her he'd taste the results, but there's no way he's doing that now
Age 44: The family gets together to make a full English breakfast Alfred's birthday. Each person takes a part—Dick has eggs, Jason has the grilled tomatoes, Tim has mushrooms, Duke has the bacon, Steph and Cass are tag-teaming the sausages, Damian just has to open a can of beans, and Bruce needs to put bread in the toaster. It goes South immediately when Damian reaches for his katana instead of the can opener

(As per the results from the poll I made 💚 I'm not sure this turned out the way I wanted it but it's cute so here you go)
Recipes
1) Just having plain uncooked veggies as snack is so nice (especially crunchy vegetables). Even if you add a simple dip it doesn't add too many c@ls!
Recipe for tztziki
You add in a bowl low fat greek yoghurt, grated cucumber, diced dill, diced garlic, a bit of olive oil and salt and you mix it (you can add mint too)
(A recipe for hummus is a bit harder but if you want it dm me and I'll try my best to explain)
2) Cucumbers or tomatoes on a rice cake with a little bit of light cream cheese 😋
3) vegetable soup
Veggie soup is actually pretty easy to make. Just cut veggies of your choice (carrots, onions, broccoli, celery, green beans). Lightly soute the veggies in a little bit of oil (its good to add them one by one starting from the one that needs to cook for longer to othe once that need less cooking). Then add some veggie broth (if possible low sodium one) and boil until ready.
4) Salad
Literally so easy but delicious and so filling. I usually just put a little bit of olive oil, salt, and lemon juice and it's soo good. Leafy greens, tomato, cucumber, and raw onion 😋 (you can add a few cubes of low fat feta cheese as well)
5) boiled or souted veggies (Brocoli, carrots) on top of rice is so nice as well, and so quick to prepare and easy to meal prep!

Serves 2 persons as main dish or 4 pers. as side dish Artichoke is a Springtime vegetable with an exquisite flower, considered a superfood because of its high nutritional value. But it’s not only that. Artichoke is also quite delicious with a mild nutty flavor similar to asparagus. When boiled it becomes tender and resembles potato in texture. Hence, this beautiful Spring Salad that combines fresh greens with artichokes served with a delicious, sweet and spicy dressing. Suitable for vegetarians. For vegans and fasting, substitute honey with maple syrup in the dressing and use substitute cheese flakes.

INGREDIENTS: Ingredients for the Salad: • 300 gr / 10.5 oz / 5-6 Artichokes, fresh or frozen • 1 Lemon, cut in 2 • A bit of Salt • 80 gr / 2.8 oz Mixed fresh, chopped greens. My mix incl: Lettuce, Rocket (rucola), Lollo Rosso lettuce, Radicchio and Purslane • 60 gr / 2.1 oz Cherry Tomatoes, halved • 2 Spring Onions, finely chopped • 2 tbsp. fresh Dill, finely chopped • 2 tbsp. fresh Parsley, finely chopped • 30 gr / 1 oz Kefalograviera Cheese in flakes (altern: Parmesan cheese) • ¼ cup / 40 gr / 1.4 oz Pine nuts, roasted • Optional: 1 Florina, Sweet Roasted Pepper, cut in strips

Ingredients for the Salad Dressing: • 50 ml / 3.2 tbsp. Extra Virgin Olive Oil • 20 ml / 1.3 tbsp. Red Wine Vinegar • 30 ml / 2 tbsp. Greek Honey • 1 tbsp. Yellow Mustard • ¼ tsp. Garlic powder • Freshly Ground Salt and Pepper

METHOD: A. Prepare and boil the Artichokes earlier on the day: 1. If you are using fresh artichokes, peel and clean them. 2. Place plenty of hot water in a wide pot, over high heat. 3. Add a bit of salt and the two half lemons. These help prevent the color darkening of the artichokes. 4. When water starts to boil, place artichokes in the pot.

5. Adjust heat to low and simmer artichokes for 10'-12'. 6. They are ready, when a fork can pierce through. Remove from heat.

7. Place them in a colander and strain them. 8. Leave them there for at least 15' to strain and cool down, before making the salad. 9. You could also boil them earlier on the day, and when they cool down, store them in an airtight container, in the fridge.
B. Make the Salad dressing: 10. Use a sauce shaker, if you have. Pour the olive oil in the shaker. 11. Add the vinegar and garlic powder. Next, add the mustard and honey. 12. Season with ground Salt and Pepper, to taste. 13. Shake until all ingredients are well blended.

  14. Reserve in the fridge, if not using immediately.
C. Make the Salad with layers: 15. Place boiled and cooled artichokes on a cutting board. 16. Cut each one in slices in the shape of crescents, but keep one whole for decorating the salad. Reserve.

17. Place the fresh green salad mix on a nice salad oval platter.

18. Scatter around half of the chopped spring onions, half of chopped parsley and dill, and half of the pine nuts. 19. On top, place the whole artichoke in the middle for decoration and around it all the artichoke crescents. 20. Scatter the halved cherry tomatoes around the platter.

21. Garnish the Salad with some more pine nuts, plus the rest of spring onions and chopped herbs. 22. Just before serving, pour the dressing on top.

23. Scatter the cheese flakes all around. 24. Finally, to serve the salad, sprinkle the rest of pine nuts on top and season once more with ground pepper.

Αλλά δεν είναι μόνο αυτό. Η αγκινάρα είναι επίσης πολύ νόστιμη με μια ήπια γεύση ξηρών καρπών παρόμοια με τα σπαράγγια. Όταν βράσει, γίνεται τρυφερή και θυμίζει πατάτα στην υφή. Εξ ου και αυτή η όμορφη ανοιξιάτικη σαλάτα που συνδυάζει φρέσκα χορταρικά με βραστές αγκινάρες σερβιρισμένη με ένα πεντανόστιμο, γλυκό και πικάντικο ντρέσινγκ. Κατάλληλη για χορτοφάγους. Για Βίγκαν και νηστεία, αντικαταστήστε το μέλι με σιρόπι σφενδάμου στο dressing και χρησιμοποιήστε υποκατάστατο για νιφάδες τυριού.

ΜΕΘΟΔΟΣ: Α. Ετοιμάστε και βράστε τις αγκινάρες νωρίτερα την ίδια ημέρα: 1. Εάν χρησιμοποιείτε φρέσκες αγκινάρες, ξεφλουδίστε τις και καθαρίστε τις. 2. Βάλτε άφθονο ζεστό νερό σε μια φαρδιά κατσαρόλα, πάνω από δυνατή φωτιά. 3. Προσθέστε λίγο αλάτι και τα δύο μισά λεμόνια. Αυτά βοηθούν στο να μη μαυρίσουν οι αγκινάρες. 4. Μόλις το νερό αρχίσει να βράζει, βάλτε τις αγκινάρες στην κατσαρόλα.

5. Ρυθμίστε τη φωτιά στο χαμηλό και σιγοβράστε τις αγκινάρες για 10'-12'. 6. Είναι έτοιμες, όταν μπορεί να τις τρυπήσει εύκολα το πιρούνι, μέχρι μέσα. Αποσύρετε από τη φωτιά.

7. Βάλτε τις σε σουρωτήρι και στραγγίστε. 8. Αφήστε τις εκεί για τουλάχιστον 15' να στραγγίσουν και να κρυώσουν, πριν φτιάξετε τη σαλάτα. 9. Μπορείτε επίσης να τις βράσετε νωρίτερα την ίδια ημέρα, και μόλις κρυώσουν, να τις φυλάξετε σε αεροστεγές δοχείο, στο ψυγείο.
Β. Φτιάξτε το ντρέσινγκ για τη σαλάτα: 10. Χρησιμοποιήστε ένα σέικερ για σάλτσα, αν έχετε. Ρίξτε το ελαιόλαδο μέσα στο σέικερ. 11. Προσθέστε το ξύδι και το σκόρδο σκόνη. Στη συνέχεια, προσθέστε τη μουστάρδα και το μέλι. 12. Καρυκέψτε με φρεσκοαλεσμένο αλάτι και πιπέρι, κατά βούληση. 13. Ανακινήστε το σέικερ μέχρι να αναμειχθούν καλά όλα τα υλικά.

14. Κρατήστε το ντρέσινγκ στο ψυγείο, εάν δεν το χρησιμοποιήσετε αμέσως.
Γ. Φτιάξτε τη σαλάτα με στρώσεις: 15. Τοποθετήστε τις βρασμένες και κρύες αγκινάρες πάνω σε ξύλο κοπής. 16. Κόψτε τη κάθε μια σε φέτες, σε σχήμα μισοφέγγαρο, αλλά κρατήστε μια ολόκληρη για το στολισμό της σαλάτας. Βάλτε τις στην άκρη.

17. Βάλτε το μείγμα από φρέσκα πράσινα χορταρικά σε μια ωραία οβάλ πιατέλα σαλάτας.

18. Σκορπίστε τα μισά από τα ψιλοκομμένα φρέσκα κρεμμυδάκια, το μισό ψιλοκομμένο μαϊντανό και άνηθο και τα μισά κουκουνάρια. 19. Από πάνω βάλτε την ολόκληρη αγκινάρα στη μέση για διακόσμηση και τριγύρω της όλα τα κομμάτια αγκινάρας. 20. Σκορπίστε κατόπιν τα κομμένα ντοματίνια τριγύρω στη πιατέλα.

21. Γαρνίρετε τη σαλάτα με λίγα ακόμα κουκουνάρια, συν τα υπόλοιπα φρέσκα κρεμμυδάκια και τα ψιλοκομμένα μυρωδικά. 22. Λίγο πριν σερβίρετε, περιχύστε με το ντρέσινγκ.

23. Σκορπίστε τις νιφάδες τυριού γύρω-γύρω. 24. Τέλος, για να σερβίρετε τη σαλάτα, πασπαλίστε από πάνω τα υπόλοιπα κουκουνάρια και προσθέστε λίγο ακόμα πιπέρι.

Για βραδινό, μπορεί να κάνει ένα υπέροχο συνοδευτικό με οποιοδήποτε ψητό κρέας ή κοτόπουλο. Για παράδειγμα, εδώ τη σερβίρω για βραδινό με ψητά μπιφτέκια γεμιστά με τυρί φέτα και πατάτες.
