Ingredients
300 g quality dark chocolate , (70%)
2 large ripe avocados
2 heaped teaspoons cocoa powder
2 teaspoons vanilla bean paste
3 tablespoons maple syrup
1 x 160 g tin of coconut cream
fresh fruit such as oranges, strawberries, blueberries, raspberries , to serve
amarena cherries in syrup , to serve, optional
white chocolate , to serve, optional

Method
1. Snap 80g of dark chocolate into a heatproof bowl and melt over a pan of gently simmering water until smooth, stirring occasionally (or gently melt in the microwave). Remove the pan from the heat, keeping the bowl over the pan.
2. Meanwhile, halve and destone the avocados and scoop out the flesh into a food processor. (Try to remove as much of the flesh as possible, but a little left in the shell is fine).
3. You’ll now have four empty avocado skin halves. Using a clean pastry brush, brush the inside of the avocado shells with a layer of melted chocolate until evenly covered. Transfer to a tray and place in the fridge for 10 minutes until set. Repeat this process two more times, until you’ve applied three layers of chocolate. Return the tray to the fridge for half an hour, or until set completely.
4. Meanwhile, place the pan and bowl back on a low-medium heat, snap in the remaining dark chocolate and leave to melt.
5. Once melted, add the chocolate to the food processor with the cocoa powder, vanilla bean paste, maple syrup, coconut cream and a pinch of salt, and pulse for a few seconds to combine. Scrape down the sides with a spatula, then pulse again, until smooth. Scrape into a bowl, cover and leave in the fridge until needed (but no longer than 2 hours).
6. Once the chocolate shells are set, gently peel the avocado skins away from the shells and discard. Heat a tablespoon in a jug of boiling water for a few seconds.
7. Now it’s time to get a bit creative with your presentation: using the hot spoon, roll up 1 tablespoon of the chocolate mousse for each serving plate (you will end up with about half of the chocolate mixture leftover, please see tip below). Press the chocolate shells onto the mousse, filling each with a little fruit (I used halved strawberries and blueberries, orange segments and a couple of amarena cherries). Drizzle with a little of the cherry liquor, and some melted and grated white chocolate to finish, if you like.

Instructions
Step 01
Preheat the oven to 425°F.

Step 05
In another bowl, use a hand mixer to beat the granulated sugar with the eggs and salt at medium-high speed until thick and pale yellow, around 3 minutes. Turn off the mixer and fold in the chocolate, using a spatula. Blend until no streaks remain. Fold in the remaining flour and salt, and mix until smooth.½ cup granulated sugar,3 large eggs,1 pinch kosher salt
Step 06
Spoon two-thirds of the batter into the prepared ramekins, then place a large spoonful of the peanut butter mixture into the middle. Top with more chocolate batter. Leave about 2 centimeters at the top of the ramekin to allow for the cake to rise.
Step 07
Bake for 14-16 minutes, or until the top is crispy/cracked and the middle is still slightly jiggly. Take out of the oven and allow to cool for about 10 minutes.
Step 08
Run the tip of a thin knife around each cake to loosen. Invert a small plate over each cake and using pot holders, invert again. Carefully lift the ramekins off the hot cakes.
Step 09
Dust the warm cakes with powdered sugar and serve right away. These are also great with vanilla ice cream!

German baking chocolate is already sweetened, so resist the urge to add more sugar to these cakes.
Low-fat peanut butter works fine in this recipe.
Prepare the ramekins as described to prevent the cakes from sticking.
Feel free to use a different nut butter for this dessert.
Make sure to let the cakes cool for 10 minutes before removing them from the ramekins.
Serve with powdered sugar. (Ice cream is also a great option.)
Storage:

Bacon and Cauliflower Soup

4 slices bacon, chopped
1 head cauliflower, chopped into small florets
2 cups chicken or vegetable broth
1 cup heavy cream
1 cup shredded cheddar cheese
Salt and pepper to taste
✔Optional toppings: additional shredded cheddar cheese, crumbled bacon, chopped scallions
➡️ Instructions:
•In a large pot, cook the chopped bacon over medium heat until it is crispy. Remove the bacon from the pot with a slotted spoon and set aside, leaving the bacon grease in the pot.
•Add the chopped cauliflower to the pot with the bacon grease, and sauté for a few minutes until it begins to soften.
•Pour in the chicken or vegetable broth, and bring to a boil. Reduce heat and simmer until the cauliflower is tender, about 10-12 minutes.
•Using an immersion blender or transferring the soup to a blender, blend the soup until it is smooth.
•Return the soup to the pot, and add the heavy cream and shredded cheddar cheese. Stir until the cheese is melted and fully incorporated into the soup.
•Season with salt and pepper to taste.
•Serve hot, with optional toppings such as additional shredded cheddar cheese, crumbled bacon, or chopped scallions.

Crispy rice pancakes
“Comforting chickpeas add great taste and texture in this brekkie, plus they’re high in folic acid, a B vitamin we need for psychological function, basically allowing us to think properly! ”

Ingredients
½ x 7 g sachet of yeast
125 g rice flour
olive oil
1 heaped teaspoon jalfrezi curry paste
½–1 fresh red chilli
1 bunch of spring onions
½ x 660 g jar of chickpeas
100 g baby spinach
4 cm piece of ginger
2 ripe tomatoes
1 lime
2 tablespoons unsweetened desiccated coconut flakes
½ a bunch of fresh coriander , (15g)
4 large free-range eggs
4 heaped tablespoons natural yoghurt

Method
In a bowl, whisk ½ a 7g sachet of yeast yeast into 250ml of lukewarm water, then gradually whisk in 125g of rice flour and a pinch of sea salt until smooth. Put aside.
2. Place a frying pan on a medium heat with 1 teaspoon of oil and 1 heaped teaspoon of jalfrezi curry paste.
3. Finely slice half the fresh red chilli (whether you're using ½ or 1 chilli, to your taste) and just the top green halves of 1 bunch of spring onions and add to the pan. Cook and stir for 5 minutes, then add ½ x 660g jar of chickpeas (juice and all), and 100g of baby spinach. Bring to the boil, then simmer on a low heat until needed.
4. To make the salsa, trim and finely slice the whites of the spring onions, along with the remaining chilli and place in a bowl. Peel and finely grate in a 4cm piece of ginger. Quarter and deseed 2 ripe tomatoes, then finely dice and add the flesh to the bowl. Finely grate over the zest and squeeze in the juice from 1 lime, add 2 tablespoons of unsweetened desiccated coconut flakes and the leaves from ½ a bunch of fresh coriander (15g). Mix well, then taste and season to perfection.
5. For the pancakes, place a small non-stick frying pan on a medium heat, drizzle with a little oil, then carefully wipe it around and out with a ball of kitchen paper.
6. Stirring your batter well each time, add a quarter to the pan, swiftly swirling it around and up the sides to create extra crispy bits. Cook for about 5 minutes on the underside only, until dark golden – have faith, and when it’s coloured, use a spatula to ease it away from the sides and slide it out. Repeat with the remaining batter, and just before you start the last pancake, poach 4 eggs to your liking in a large pan of simmering water.
7. Serve each pancake with a spoonful of curried chickpeas and coconut salsa, 1 heaped tablespoon of natural yoghurt, and with a poached egg sitting proudly on top.
