Chili Mac is a hearty, delicious dish filled with ground beef, noodles, cheese, beans, and so much more. Now you can take your weeknight meals to another level with this one pot chili mac recipe! It’s so easy to make in just one pot, and it’s ready to serve in 30 minutes.
What’s in this Chili Mac Recipe?
This easy, cheesy dinner is so hearty and comforting. It’s filled with beans, ground beef, cheese, macaroni, and lots of other good stuff. This has quickly become a family favorite in our house!
Olive Oil: Cooks the garlic, onion, and beef without burning them.
Onions and Garlic: Add rich, earthy flavor.
Seasonings: White and black pepper, and cumin. Add other seasonings or spices as desired.
Ground Beef: Substitute ground chicken or turkey if you like.
Chicken Broth: Or substitute beef or veggie stock.
Tomatoes: I like fire-roasted diced tomatoes, but you can use any can of diced or chunky tomatoes.
Beans: Pinto and chili beans are great, but you can substitute black beans or another type.
Macaroni Noodles: You can use any short-shaped pasta.
Cheese: Shredded cheddar cheese finishes off the chili mac. Add another type, like Monterey Jack or Pepper Jack.

Make this chili mac in a dutch oven or heavy bottomed pan. It will distribute the heat more evenly.
Make sure that the macaroni is fully cooked before taking the pan off of the heat.
Reheat the chili mac on the stovetop, or in the microwave for about 3 to 4 minutes.
If making ahead of time, make sure it’s fully cooled before storing.
Storage: Store chili mac in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Flipping the tortilla can be a little tricky. To avoid spills, use a spatula to slide the quesadilla onto a small plate. Cover with another plate; flip; remove the top plate and slide it all back into the skillet.
Don’t overload the wraps with food. Pay attention to the quantities listed in the recipe to avoid soggy, leaking quesadillas.
The sage leaves can be chopped to spread the flavor throughout. You can also use dried sage.
If you’re repurposing cheese from Thanksgiving appetizers, you can use thinly sliced or cubed cheese in the quesadillas– no need to shred it.

Pumpkin Pie Filling: If you can’t find this, just use pumpkin puree with some pumpkin pie spice mixed in.

Step 01
Unroll pie dough and cut into small c.ircles (I used the top of an ice tea glass to get small circles.) Place circles in small muffin/cupcake tin and bake according to package instructions. Set aside and allow to cool.
Step 02
Pour 1 cup water into a medium saucepan and sprinkle gelatin packets over water. Let sit for 2 minutes before turning on heat.
Step 03
Turn stove to medium-high heat and add pumpkin pie filling and sugar, stirring as you add. Allow to simmer and then turn off the heat and set aside to cool.
Step 04
Add rum or vodka, heavy cream, and an additional 1/4 cup water to the mixture and stir until well combined.
Step 05
Pour gelatin mixture into pie crusts and place in the refrigerator overnight or for at least 8 hours
Step 06
Top with whipped cream if desired. Enjoy!

Cut pie crust dough to fit your mini muffin pan. A skinny glass, a small biscuit cutter or a shot glass will work. Get creative to find what works for your sized pan!
Pumpkin pie filling works best in this recipe. You can use solid-packed pumpkin as well, but you’ll want to add pumpkin pie spice and some sweetener for the best effect.
When you sprinkle gelatin over water and let it stand, that process is called blooming.
If you have a party you’ll be attending, be sure to make these Pumpkin Pie Jello Shots the day (or night) before. These shots need at least 8 hours to set.

In another bowl, use a hand mixer to beat the granulated sugar with the eggs and salt at medium-high speed until thick and pale yellow, around 3 minutes. Turn off the mixer and fold in the chocolate, using a spatula. Blend until no streaks remain. Fold in the remaining flour and salt, and mix until smooth.½ cup granulated sugar,3 large eggs,1 pinch kosher salt
Step 06
Spoon two-thirds of the batter into the prepared ramekins, then place a large spoonful of the peanut butter mixture into the middle. Top with more chocolate batter. Leave about 2 centimeters at the top of the ramekin to allow for the cake to rise.
Step 07
Bake for 14-16 minutes, or until the top is crispy/cracked and the middle is still slightly jiggly. Take out of the oven and allow to cool for about 10 minutes.
Step 08
Run the tip of a thin knife around each cake to loosen. Invert a small plate over each cake and using pot holders, invert again. Carefully lift the ramekins off the hot cakes.
Step 09
Dust the warm cakes with powdered sugar and serve right away. These are also great with vanilla ice cream!

German baking chocolate is already sweetened, so resist the urge to add more sugar to these cakes.
Low-fat peanut butter works fine in this recipe.
Prepare the ramekins as described to prevent the cakes from sticking.
Feel free to use a different nut butter for this dessert.
Make sure to let the cakes cool for 10 minutes before removing them from the ramekins.
Serve with powdered sugar. (Ice cream is also a great option.)

Tart cherry juice is not the same as bing or sweet cherry juice. I found it in the organic section of my grocery store. Grenadine will also work, but tart cherry juice is better if you can find it.
A standard-sized blender holds about 12 cups, so keep that in mind. If you’re going to make several batches of frozen margaritas, you may want to buy a bag of ice at the store.
Don’t skip the garnishes for full effect. Salt the glass rims, and pile on the maraschino cherries and lime slices!

Slice the English muffin in half and toast in a toaster.
Step 02
Pour the egg white into a microwave-safe bowl (approximately the size of your muffin) and microwave for approximately 1:20 or cook to the desired consistency on the stovetop. (If using herbs, salt, and pepper, sprinkle them into the egg before cooking. I used Herbs of Provence)
Step 03
Assemble the sandwich by laying the cooked egg white, Canadian bacon, and cheese on the bottom half of the English muffin. Top with the other muffin half. For an extra-tasty sandwich wrap in foil and broil for an additional 3 minutes right before serving. Handle with care.

You can buy egg whites in a carton and measure out one egg’s worth if you’d rather not separate the egg from the white.
I used Herbs of Province for my sandwich, but you might like other blends. Try Italian seasoning, poultry seasoning, or single herbs like basil, thyme, or rosemary.
I like a whole-wheat English muffin in this recipe, but you can also use regular English muffins.
For the whole McDonald’s experience, wrap the finished Egg White Delight in wax paper or parchment paper for serving!

Step 01
Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or coat with nonstick spray
Step 02
Roll out the dough on a lightly floured surface.
Step 03
Using the top of a wine glass (or a biscuit cutter), cut out 9 circles per sheet of puff pastry.
Step 04
Place the dough circles on the prepared baking sheet.
Step 05
Using a paring knife, score an inner circle into each puff pastry, about 1/4 of an inch in. Use the tip of the knife to prick the center of each circle 2-3 times.
Step 06
Add a slice of tomato on each circle and then drizzle 3 or 4 drops of balsamic vinegar onto each tomato slice.
Step 07
Top each tomato slice with some chopped basil.
Step 08
Add a cube of mozzarella cheese to each tart.
Step 09
Bake for 12-15 minutes, or until puff pastry is fully cooked and golden brown.
Step 10
Remove from the oven to a tray and serve.

This creamy, cheesy dip tastes just like the best buffalo chicken wings. With just a few ingredients and couple of quick steps, you’ll have an easy party dip ready in no time.
Cream Cheese: This is the base of the dip. I recommend sticking to regular cream cheese, because low-fat versions will make the texture runnier. Let it soften before using it.
Shredded Chicken: Use pre-cooked, shredded chicken for this buffalo dip. You can either make it yourself ahead of time, or use a rotisserie chicken to speed up the process.
Cheese: I recommend using Mexican blend shredded cheese. You can also use different types of cheese, like pepper jack, Colby, or cheddar. Grating your own cheese will give you the best results.
Ranch: Ranch dressing is the perfect complement to buffalo flavor! I used a light dressing, but you can use a regular ranch, or substitute buttermilk or blue cheese dressing.
Frank’s RedHot: This classic hot buffalo sauce is a must for the best buffalo chicken dip, although you could substitute it for a different brand or version if you prefer.

Use a rotisserie chicken to make things super simple and easy.
You can use regular cheddar instead of a Mexican blend cheese.
I recommend grating your own cheese for the best results. Pre-shredded cheese has added starch that will change the texture of this dip.
Use good quality cream cheese for best results (cheaper brands can be too runny).
I used a light ranch dressing, but you can use regular if you don’t have light. You could also substitute blue cheese dressing.
Don’t substitute the ranch dressing for dry ranch seasoning–it just won’t have the same results.
You could leave out the chicken and make a buffalo dip for vegetarians if you like. Still cheesy, spicy, and delicious!
Storage: Store leftovers in a covered dish or airtight container, in the refrigerator for 3 days.

This Caramel Cheesecake is incredibly easy to make and will not disappoint! It’s got a fluffy but creamy center and is topped with homemade caramel sauce (that’s pretty addictive) and macadamia nut brittle.
This Macadamia Caramel Cheesecake is adapted from one of Ottaleghi’s cookbooks and it’s been a favorite recipe for a long time.
There are a few steps to making this but they are all so easy and they are all so worth it!
From making the incredibly easy baked cheesecake to the gooey and addictive homemade caramel sauce and then there’s the crunchy macadamia nut topping which takes it to the next level.

FOR THE CRUST
1 sleeve graham crackers 142 grams (about 9 cracker sheets)
3 tablespoons unsalted butter 42 grams, melted
FOR THE BATTER
½ cup caster sugar 100 grams (or sugar finely ground in a food processor but not powdered)
21.25 ounces cream cheese 602 grams, room temperature (about 2⅔ bricks)
1 teaspoon pure vanilla extract 4 grams (or 1¼ teaspoons vanilla bean paste)
4 large eggs 200 grams, lightly beaten
¼ cup sour cream 57 grams
FOR THE NUT TOPPING
1½ cups macadamia nuts 224 grams
¼ cup granulated sugar 50 grams
FOR THE CARAMEL SAUCE
4 tablespoons unsalted butter 57 grams (½ stick)
⅔ cup caster sugar 133 grams (or sugar finely ground in a food processor but not powdered)
7 tablespoons heavy whipping cream 99 grams

Step 01
Preheat oven to 325°F. Lightly grease a 9-inch springform pan and line the base and sides with parchment paper. Set aside.
Step 02
FOR THE CRUST
Place the graham crackers in a food processor until crushed, or put in a plastic bag and crush with a rolling pin or mallet. Mix with the melted butter until a sandy consistency is formed. Cover the base of the lined pan and flatten with the back of a spoon to make a level base. Pack down the crust.1 sleeve graham crackers,3 tablespoons unsalted butter

FOR THE BATTER
Using a hand mixer, beat the sugar, cream cheese, and vanilla together in a large bowl until smooth. With the mixer set on a medium setting, add the eggs one at a time. Mix in the sour cream until smooth.½ cup caster sugar,21.25 ounces cream cheese,1 teaspoon pure vanilla extract,4 large eggs,¼ cup sour cream
Pour the mixture over the graham cracker base. Bake for 60-70 minutes until set. To check if it's done, you can insert a fork/skewer in the center and it should come out clean. Set aside to cool to room temperature, then you can remove it from the pan. I left the cake on the base, but you don't have to. Chill the cake for at least 2 hours in the fridge.
Step 04
FOR THE NUT TOPPING
While the cheesecake chills, make the nut topping: Scatter the macadamia nuts on a parchment-lined baking sheet and roast in the oven at 325°F for about 15 minutes, until golden.1½ cups macadamia nuts
Place the sugar in a large saucepan. Heat the sugar gently until it turns into a caramel. Do not stir at any point. The sugar will dissolve into a golden caramel. Mix in the nuts and gently coat them in the caramel using a wooden spoon. Once covered, pour them back onto the parchment-lined baking sheet and leave to set. Once they are cool, break them apart or chop if desired into smaller bits.¼ cup granulated sugar
Step 05
FOR THE CARAMEL SAUCE
While the nut topping cools, make the caramel sauce: Place the butter and sugar into a thick-bottomed saucepan and stir constantly over medium heat until it becomes a smooth, dark caramel. The butter and sugar will look as if they have split. Keep stirring; they'll come back together (its the weirdest thing!!).4 tablespoons unsalted butter,⅔ cup caster sugar
Once it's the color you want, carefully add the cream and stir quickly. Remove from the heat and allow to cool.7 tablespoons heavy whipping cream
Step 06
FOR ASSEMBLY
Pour on the caramel sauce onto the center of the cheesecake, then sprinkle the candied nuts over the top.

TIPS
You could use store-bought caramel instead of making it.
You can use plain or Greek yogurt in place of the sour cream.
Let the cheesecake cool completely before chilling in the fridge.
Make sure to cover the cheesecake in plastic wrap when in the fridge but not when cooling.
You can make the nut brittle days in advance if you like.
Keep an eye on the caramel and don't leave it unattended as it can easily burn.
Be careful when cooking with hot sugar (whatever you do, do not taste it when hot).
Storage: Store macadamia caramel cheesecake in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 1 month.

This easy recipe shows you how to make rock candy sheets in about an hour. It’s a fast way to make it, and you can make any color or flavor with this method.
Water: Helps to dissolve the sugar into solution.
Light Corn Syrup: Helps prevent sugar crystallization. It contains glucose, which interferes with the formation of large sugar crystals, resulting in smoother and smaller sugar crystals that are characteristic of rock candy.
Granulated Sugar: This is the main ingredient that will form the candy. As the sugar solution cools and evaporates, the sugar molecules come together and form crystals.
Flavoring Extract: I used raspberry, but you can use just about any flavor!
Food Coloring: I used blue, but feel free to choose any color or leave your candy plain.

Mix all ingredients together in a medium saucepan set over medium heat.½ cup water,¾ cup light corn syrup,2 cups granulated sugar,2 teaspoons flavoring extract,Food color.

Pro Tip: I had a reader comment that a great way to keep them from sticking is shaking them in powdered sugar before sealing them in an airtight container. Genius!
To turn the sheet of candy into small pieces, it’s easiest to use a metal mallet (like a meat tenderizer). Just hit the sheet with it until it breaks into pieces.
If you want to make it look more like rock candy, place those pieces into a bag, and use a rolling pin to crush them up even smaller.
If your candy doesn’t harden, even after sitting for a long time (it should only take 45 minutes, not much longer), it might be that your liquid never got hot enough. It’s important that the temperature reaches 300°F while cooking the syrup.
How to Store
Place the candy pieces into a resealable bag, pour in some powdered sugar, and shake it up to coat the candy. Do this before storing, and they won’t stick!
I recommend storing this candy at room temperature, ideally in a pantry or cupboard where it is slightly cooler. In these conditions, it will keep well for up to 1 month!

Once golden, remove from the oven, lift the parchment paper off the pan, and cool the almonds on a rack. (If left on the cookie sheet to cool, the almonds might burn.)
