Low-Calorie Vegan Meals for Weight Loss
As someone who is actively trying to lose weight, I have recently been scouring the internet for healthy, low-calorie vegan recipes to make when I’m not busy exercising or saving health posts on Pinterest. While vegan diets are typically healthier than those that include meat or other animal products, there is still a lot of high-calorie, high-fat, highly processed junk food that is vegan friendly. On my weight loss journey, I have cut out nearly all processed junk food (with the occasional slip up because I am weak on my period) and am determined to maintain a healthy diet. Weight loss has never come easy for me, and it has only gotten harder with added health problems that slow down my metabolism and medicines that cause weight gain. Though I believe everyone is valid no matter their weight, I am not personally happy in my body; I feel sluggish and heavy and just plain unhealthy. So, if you are looking to lose weight like me, diet is a good place to start. Therefore, without further ado, here are some low-calorie, easy to make vegan recipes that can aid you on your weight loss journey:

Cajun pasta;
Spice mix; 1 teaspoon each of the following.
Smoked paprika
Onion powder
Garlic powder
White pepper
Black pepper
Sea salt
Oregano
This will be used to season any chicken, sausage, shrimp or tofu You’re adding to the dish as well as the sauce.
In a large skillet cook and season your choice of protein, cook fully and set aside. While your choice of pasta boils, finely dice a shallot.
Roughly Chop and de-seed whole yellow or red bell pepper along with a fresh tomato, I remove the core, seeds and skin from my tomato before chopping.
Drain your pasta and set aside to cool. In a LARGE heated skillet melt some butter about tea-tablespoons worth along with a teaspoon or a squeeze worth of tomato paste and the diced shallot. Let it cook down for five to ten minutes depends on how hot your pan is.
Add in a cup and a half of heavy cream, your protein, and your vegetables. Let the heavy cream come to a steady bubble stirring occasionally before adding 2/3 cup of Parmesan cheese and the rest of your spice mixture. Mix and let it come to a bubble again before adding in your pasta and mixing it very well together.
Boom baby it’s literally that easy! Pro tip I used pre cooked grilled chicken from the grocery store and just seasoned it up in a pan at home.

I have really low calorie, healthy and delicious asian-ish food for you all!
Ingredients are
- cabbage
-carrot
- asian sauce ( I like to use teriyaki and sesame oil sauce)
You just peel cabbage and carrots into shred, and fry them in that asian sauce/sesame oil in a pan!
Takes like 15 mins to make and a portion is only 95 cals or big portion only like 150 cals!
Other one is vegan cheese and grapes! 20 grapes and 50 grams of violife cheese is 200 cals and one of my safe foods. Really good!

Budget Vegan Meals
- Instant Ramen: Nissin Top Ramen Soy Sauce and Chili flavors are vegan-friendly, and they typically cost less than $0.50 per pack (depending on location). Add some vegetables, such as carrots, corn and broccoli, to make it somewhat less unhealthy. 
- Peanut Butter and Jelly Sandwich: Peanut butter and jelly both last a long time and, if you forgo the organic and natural varieties, are very affordable to the broke college student (ayyyy). Also, get whole wheat bread. Please. I beg you. It stays fresh forever and is the healthiest option. 
- Fajitas: Get a seasoning packet, load up on cheap veggies (onions, green peppers, corn, etc.), buy a couple cans of black beans and some wraps, and boom! You’ve got your next 6-8 meals. 
- Baked Potato: Buy potatoes in bulk and you’ve got food for days. If you don’t have access to an oven, potatoes taste perfectly fine microwaved. Douse that bad boy in some hot sauce, sriracha, or barbecue sauce for some added flavor. If you’re willing to splurge a little, sautéed spinach and/or kale with garlic and red pepper flakes make an excellent and healthy topping.  
- Pancakes: Super easy and delicious. All you need is some flour, baking powder, salt, sugar, non-dairy milk (soy is usually cheapest), water, and vegetable oil. Top your pancakes with some fruit for added flavor (bananas and strawberries are always good options). 
- Spaghetti: Noodles and jarred/canned sauce. Easy, simple, and cheap. If you have a little extra cash on hand, mix in some veggies (such as broccoli and spinach) for added nutrition. 
- Cereal: Name-brand cereal is going up in price these days, but generic brands are still relatively inexpensive. 
- Oatmeal: You can buy a canister for around $1 and it’ll last for a long time. Mix in some fruit, cinnamon, and sugar for some ~flavor~. Or you could do what I did when I ate oatmeal for the first time and had no idea what it tasted like: eat it plain. Or the second time: with black pepper. Yum...
- Burritos: Beans, rice, lettuce, tomatoes, maybe a little hot sauce. You’re welcome. Don’t want to spend money on wraps? Burrito bowls, my friend! You can always add as many different vegetables as you want, but beans, rice, some kind of leafy green, and tomatoes should always be there. Always. 
- Soup: Whether you buy generic canned soup or make it yourself, soup is one of the budget-friendliest meals you can have. I cannot begin to tell you how much tomato soup with crackers I consumed my freshman year of college. It, uh...was a lot. 
- Salad: They don’t have to be expensive. Buy some greens, cucumber, tomato, shredded carrots, and onion. It’s simple. If you need salad dressing, a little balsamic vinegar and olive oil goes a long way. 
- Tacos: Whether you use crunchy shells or soft wraps is up to you. Either way, the end result will be just as delicious. Instead of beef, use black or refried beans. I recommend adding a splash of lime juice on top for some acidity. 
- Chili: Leave out the meat and double the beans! You could also chop up some mushrooms or crumble some tofu to throw in for a meaty texture, if you need it. Chili freezes well, so make a large batch and freeze what you can’t eat before it goes bad. 
- Fried Rice: Frozen vegetables are your friend here. Peas, corn, and carrots. Fresh mushrooms are also good. Add some tofu for protein!

Spinach and Arugula Salad with Hummus-Dill Dressing & White Beans
My family is loving this spinach, arugula salad, and fennel salad! It is topped with a lemony hummus dill dressing (so easy to make) but the best part is the crispy white beans. They give this salad a pop of flavor and is a nice way to get my kiddos interested in both the salad and the beans.

VEGAN TACO BELL/ CHIPOTLE BOWL:
Starting off with the potatoes first;
Peel and cube however many white potatoes you want, toss them on a baking tray with olive oil, cumin, onion powder, garlic powder, chili powder, smoked paprika.
Bake at 350 for 20 minutes
Rice;
Your choice of washed white or brown rice, season the rice water with the same seasonings you used for the potatoes. Olive oil, cumin, onion powder, garlic powder, chili powder, and smoked paprika. Cook the rice for as long as your rice says too.
Protein;
I used tofu, but you can use your favorite vegan or non vegan meat or replacement. In a frying pan brown up some green bell pepper, your GROUND protein of choice, and once again the same seasonings for the rice and potatoes sans olive oil. Onion powder, garlic powder, cumin, black pepper, smoked paprika, and chili powder. Cook until done.
Taco Bell sauce;
Plain vegan or non vegan yogurt - use however much you’re gonna need. Vegan or non vegan Mayo - Sour cream would work too. Couple spoon fulls of salsa. Chili powder, onion powder, garlic powder, smoked paprika and cumin. Mix together and put it in the refrigerator.
Toppings;
Anything you want! I used tomato, lettuce, onion, and vegan Mexican cheese, and hot sauce.
