My Kitchen Essentials 
One of my favorite things about having my own apartment has been having my own kitchen. Furnishing the rest of my apartment was an expensive and sort of stressful process. The kitchen however has been a lot more fun because I inherently find kitchen gear more interesting and had enough of the basics to get started without breaking the bank. Because I keep my meals simple and only work with ingredients that I enjoy, I genuinely love cooking for myself. I shared my peanut butter overnight oats and tofu rice bowl recipes in a post about Sunday meal prep a few months ago, but am hoping to share more of my go-to meals in a proper recipe format. 
The core essentials that I brought from home include a 10-inch cast iron pan, a 1.5-quart stainless steel pot, a small wooden cutting board, a pairing knife, a chef's knife, and a pair of scissors. I also brought a basic set of dry measuring cups (¼ cup, ⅓ cup, and ½ cup) and measuring spoons. While I haven’t done any baking here and don’t follow recipes when cooking for myself, the measuring cups have been really useful for cooking various grains. A few items that I brought but haven’t used include a lemon juicer, a garlic press, and a silicone pastry brush. As for non-cooking kitchen basics, I was fortunate enough to be handed down a set of both dishes and silverware and to be gifted a nice wooden salad bowl. I also brought a utensil crock, a mini teapot, two mugs, two glasses, and a few food storage containers from home. 
To further round out my setup, I picked up a sieve (which I use for rinsing rice), half and quarter-rimmed sheet pans (which I currently primarily use for baking tofu and green beans for my rice bowls), a wooden spatula, and a potholder. I love cheese, so a personal essential of mine is a grater. I use it to grate cheddar for my cheesy polenta (which I serve with chicken apple sausage and peppers), pecorino romano for carbonara, and parmesan for Caesar salads among other things. I may eventually add a box grater to my setup, but have thus far been happy with this paddle-style grater that I picked up on my first full day in Washington State. Another item that I bought immediately, but have not personally used is a pair of kitchen tongs. (They did come in handy though for a work picnic). While I don’t regret the purchase per se, this just goes to show the true value of starting with the bare minimum and slowly building out your setup as you discover the limitations through experience. Other kitchen essentials that I picked up but that aren’t directly used for cooking include an airtight container for my rice, a glass food storage container for my lunch, a dish drying mat, sponges, and dish soap. 
It’s not essential, but one fun recent addition to my kitchen is the rice cooker I got for Christmas. The resulting rice is notably better than my stovetop rice, but I will note that it doesn’t exactly save time as the rice is supposed to soak for 30 minutes, cook for 15, and steam for another 15. Another important note is that the measuring cup that comes with the cooker is only about ¾ cup. Thus, when I made my first batch of rice I was a bit thrown off and only had enough rice for three rice bowls instead of my usual four. I made a double batch the second time around which allowed me to create five rice bowls instead. 
While I’m not set up for baking or cooking for a crowd, I truly do have all that I need to cook for myself. Nonetheless, I’m excited to continue building out my kitchen! A few items that I’m considering adding at some point in the future include a kitchen scale, a larger pot, a mixing bowl, a meat thermometer, an immersion blender, and an ice cream maker. We’ll see though because I’m not yet convinced that these items would get regular enough use to justify the cost and space they’d take up in my small kitchen.

Discovering New Ingredients on a Plant Based Diet
Ok, so I was ready to start cooking. Looking through recipes there were plenty of foods I recognised and others I didn't know about yet. There were things like pasta, potatoes and pitta breads. Some of the lovely carbs that I know well. I have been a keen cook for most of my life but I was learning there was so much more to the plant based pantry. I intend to break down my findings for you, in a not-too-factual sounding way.
When I thought about plant based meals I had visions of lots of porridge and many things with chickpeas in them. Yes there are oats and also the chickpeas but let me tell you a bit about what else I have discovered.
We'll start with one of the absolute basics and a favourite in our home: the humble Tofu. Made from soybeans it is a source of complete protein, rich in calcium and magnesium and low in calories. Reasonably priced and available almost everywhere it is a very useful ingredient. Tofu doesn't have a strong flavour of its own so we can go to town and dress it up with our favourite herb and spice mixes, simple soy sauce or a mouthwatering marinade. Used in stir fries and curries it holds it shape and texture really nicely. It can be fried, baked, scrambled, grilled, breaded, crumbled and sautéed but don't let these suggestions limit you. It really is as simple as opening the pack, giving it a little rinse and patting it dry with some kitchen paper or a clean dry towel and you are good to go. It does not need much cooking, just a warming through, so it can be added closer to the end of the making of a curry for example and for this I would chop it into bite size chunks.
I would encourage you to try cooking a dish using Tofu as your source of protein and see how you get on. Adapt a recipe and give it a go. A personal favourite of mine is to scramble the Tofu (crush the bite sized chunks with the back of a fork), add mixed dried herbs and a pinch or two of turmeric, sauté in a pan with a little sunflower oil and serve on some hot buttered (I use Flora plant-based) wholemeal toast for a tasty weekend breakfast.

what I think people that can bake pies with dead or alive animals with I think is disgusting because it could carry insects and virus and diseases. but yet again if you haven't had anything eat in days so its understandable. using dead or alive animals was a good, yes's if you don't have enough ingredients but still disgusting.

Chimney Cake, Czech Republic
It's a sweet bread that looks like a chimney but taste like heaven! You are walking through the streets of Prague in the Czech Republic and you get a urge for something to nipple on. you found a small market full of street foods. Being in Prague, you know that the best you can try will be the chimney cake. But without knowing what that is you ask a local stall owner about it and he or she had gladly produces something that looks like well a chimney. Behind the stall owner are rows of hot spit with dough wrapped around them ,cooking over heart source. This is chimney, but what does it taste like, you ask ? well its sweet. Fill it up with some ice cream and its even sweeter.
While it's the official dessert of Hungary, the chimney cake has made its way to the Czech Republic, where it has been perfected into the favourite street food of locals and tourists alike.
This is a spiral pastry is so delicious that will want to shell out for a couple, just to make sure that you have something else to munch on while you continue to browse through the stalls of the local market.

Poutine, Canada
This is an Canada's Unoffocial "Official side dish and street food." Many people have actually heard of Poutine, seemingly the office snack of Canada, but a lot of people may not know what they are. Well, it is so popular in Canada that city of Ottawa actually has a Poutine Festival where you can try over 100 different types of recipes for the street food snacks, along with contests that related to the stuff. So what is anyway? It is probably one of the simplest street food out there, just smothered fries. Smothered with cheese curds and gravy, to be exact. Poutine mean "messy," and this street food really is not meant to be eaten without a fork. But imagine when you bite into the cheesy gravy gooeyness covering the crispy hot fries. you will be glad that you stopped at the festival in Ottawa or at any of the street vendors throughout Canada that sell Poutine. Not exactly a delicacy, but definitely something associated with Canada and warm home-cooked snack or side dish or light meal. Poutine puts together some of the greatest flavour's into a food combinations that is not to be missed if you happen to be visiting Canada. Of course, it is so simple to make that you can find it else where, including if you want to make it yourself.
what i think of the Poutine of fries, i think its quite unique how they mixed gravy and cheese with the fries and it actually looks quite nice to eat.

Biltong, South Africa
This is south Africa , Now that's jerky!. In south Africa, you keep hearing about something called "biltong" and you figure you figure you should investigate what is it. In the streets of a Johannesburg, you stop in a little shop with a sign advertising that they have the best Biltong available. Inside, you see another sign above racks of what looks like dried meat. Beef jerky? Not exactly, you are told. It is jerky, but is is an exotic animals, like ostrich and kudu. But, is it still jerky? The shop owner shakes his head and declares that is it cured in apple cider vinegar or malt vinegar then rubbed with spices like black pepper, coriander, and brown sugar. This is getting interesting. The slices are very thick, bordering on small slabs of meat, so you buy one, maybe two for good measure. This is unlike any jerky you have ever tried. The flavour is so intense, so concentrated, it tastes different that you have expected, partly because it is such a thick piece of meat. You are told that it is not smoked. It is jerky at its essence. Stepping back out into the street, you decided that you made a good choice stopping and seeing what Biltong is all about.

Day 278
The basic idea was sound, after all it was the end of the week and grocery shopping was a thing that just had to get done. Normally, it was done on a Saturday, after exercise lessons (because I’m a lazy ass who needs to be supervised). Now that the daylight hours lasted all the way until 9 p.m. it made more sense to do grocery shopping on Friday after work.
Then I can spend Saturday doing more laundry, I’m running out of skirts and underwear. Well… not out of skirts, but I know the sheets will need to be washed the week after and that has always been a task and a half, so laundry day on Saturday it was.
Where my plan went sideways were two facts:
I discovered I didn’t use all of my Aunt Kay’s gift cards from my last birthday (my birthday is this month)
One of these gift cards had enough money for two jars of ice cream from the specialty ice cream shop across the street.
Birthday Cake, one of my favourite flavours was a seasonal flavour in the month of May (perfect timing really)
So the plan was to get two jars of ice cream and shove into the freezer for later dates.
Then.. on a whim I decided, I am going to get a birthday cake milkshake, because why not? Though this could have also been the result of the fact I was waiting in line for 30 minutes because it was a Friday evening on a very warm day. Whatever the case, it was the thing I decided to do.
Here I was, walking back with a milkshake in one hand, and pulling my little shopping cart with the other when who did I see?
My mother.
It was like having your hand caught in the cookie jar. You know you shouldn’t have gotten that sugary treat, but you did it anyway and now you got caught because your parents were taking a walk. As I walked down the sidewalk to the crosswalk, I watched my mother wave my father onward as she waited for me.
I’m in so much trouble, because really a milkshake is logically too much sugar for my system.
And let’s kindly ignore the fact that while a few mouthfuls of real high quality dairy ice cream is fine, three scoops of ice cream in a milkshake is not. Even if you tried to limit the amount of dairy by switching the regular milk for oat milk (which is delicious by the way), and went with coconut whipped cream instead of the usual.
She looks at me once I finished crossing the road and asks.
“Do you need help?”
Even though I said no, she takes the milkshake anyway and walks alongside me. She comments how she didn’t even know the shop did milkshakes. Honestly, I didn’t either until a few days ago. Instead of commenting further on the milkshake that was sitting on her hand, she told me she was going to give me the rest of their strawberries because my parents were going to Toronto.
As if I was going to eat the strawberries in a timely manner but I can’t say no to strawberries.
Then she mentions how she’ll give me a piece of the apple cake she baked for me and her friend, and how she hopes dad doesn’t think it’s for his friends. In the end, she escorts me all the way to my place and hands me back my milkshake. I awkwardly ask if she wants a sip and she lets me know she’s not into those sorts of drinks.
I love my mom for putting up with my bullshit at times.

My bucket list places are Alaska (northern lights), Italy, UK, and Australia! I love going to the gym and staying active. I was super athletic growing up and loved to play a multitude of sports, and I still do! I play in a beach volleyball league year round, and I love it! My most recent hobby I discovered I love is cooking/baking. I never used to before, but now that I am married and living on my own, I have experimented with lots of new recipes, and I have found a passion for cooking and baking! My banana bread is a killer. Well, that just about sums me up (the very short version… I’m a talker). I can’t wait to get to know you guys better. Now… let’s talk about our first coffee!
Our first contender is a new coffee shop that has opened up within the past year in my local downtown. The name is Bizarre Coffee!I have heard quite the chatter about it, but I never went to try it! So, it seemed fitting to go give it a chance today for this blog! My first impression of the shop was that it was very cute and aesthetically pleasing, although it is very small. There is no room inside but very few seating, but there are tables outside. The line was long and out the door, but it moved fast and I had my coffee within 10 minutes. Luckily for me, they had just launched their fall menu (and fall drinks are my favorite drinks)! I ordered an iced pumpkin cookie latte with oat milk! I also got a free brown chobani oat beanie (it’s super cute) for ordering my coffee with oat milk, so that was a huge plus! I absolutely loved this coffee! It was the perfect amount of sweetness ratio and the right amount of milk, although I wasn’t getting much of a pumpkin flavor. Personally, it just tasted like regular flavored coffee (still very good), which disappointed me because I am a huge pumpkin lover! I ordered a medium, and it was a good size! Although the price was almost $7 for this coffee! It was definitely a little on the pricey size, but for good reason! Overall, I did really enjoy this coffee shop! It is definitely worth the hype, and I see why it has such good reviews. I will definitely be coming back and trying some of their different flavors too (and maybe a bagel)! Overall, Bizarre Coffee is getting an 8.5/10!

If you've wondered what I'm up to.. welll. I've tried to make another foraged soup. But this time, I thought, it wouldn't be slimy. Because I wouldn't put any chickweed in it. And we discovered recently, chickweed that is cooked and blended becomes slimy.
So I used a lot of nettle, leek, potato, and wild onion broth. And the soup was... the soup, it, it was, slimy. It was incredibly slimy and I don't know who did it, was it leek??? Was it nettle?? Was it the POTATO? Which one of you two faced filthy plants forced me to eat a slimy soup TWICE IN ONE WEEK?!
I honestly am at my wits end with the slimy potato soup, I am going to try nettle+oat milk next, if this one turns slimy too, then it's just going to be baked patties of foraged food, and soups can just be from garden food + slime free. Gods.
I've been also running very low on my dried yarrow supply and I was getting worried, because it's not yet starting to bloom, and I need it for my menstrual cramps, so I kept just using less and less. I also made a plan, that this year, I would gather more yarrow than it fits into my little jar, and I would store it in a dark place. Because dried plants stored in transparent jars actually fade with time and lose color and scent and they get less effective, and if I was smart I'd keep them in dry bags in the dark cupboard.
Then one day I went to clean my cupboard because it was really messy and I found just bags of stored goods that I completely forgot I had. I found a whole bag of dried dill, dry aronia berries, dry horsetail and sage and there was also a full paper bag of dried yarrow! Because I already remembered last year that I need extra yarrow! And that it's safer to keep it paper bag in a dark place! I already made that entire plan and got enough yarrow and saved it in a bag in a cupboard and then forgot the entire thing because I am not very good with memory! This gave me a huge boost of happiness, the yarrow from the paper bag was better quality, smelled better, and was more effective as a medicinal tea, bless my past self. I also want to make a soup from that dried dill, but I'm unsure if I need to hydrate it first, and for how long, I'll have to ask the plant lady, I feel like she made dill soups before. Dill is actually crazy nutritious which I didn't realize until I googled it and then I was just stunned, that thing could fulfill most of my nutritional demands for the day if had a lot.
I've been to the garden for a few times, planted potatoes, parsnip, parsley, celery, spinach, onions and peas. My peas are doing so poorly it's getting ridiculous, I think I really need to get proper seeds for them. The plant lady warned me that with peas it doesn't really work taking the dry seeds directly from the plant and then planting them, but I thought, well why wouldn't that work, and did that, and each year I get worse and worse results. I might need to look into different varieties, I'm not getting enough peas.
I am, however, getting my kale going to seed, and I've been waiting for years for that to happen! I'm out of kale seeds and I'm going to try and protect a few of the blossoms so they stay true to type, I did make sure to get a heirloom variety so I could keep it forever once planted, I know brassicas are very likely to cross-pollinate, I'll make a little bag out of cheesecloth and trap a few blossoms in there, so that no bee can cross-pollinate them and hopefully I'll be able to pollinate them with a paintbrush and then collect some good seeds.
Everyone in the community garden is still ganging-up on me over the no-till garden, even the plant lady doesn't believe it can be done, and I'm very stubborn and refuse to dig thru the soil. I think at this point it doesn't even matter because every single worm, bug, snake, mouse, slug and mole have been digging thru my garden already, every time I try to poke a hole in it to plant something, I find a hole or a whole goddamn cave carved inside of there, it's been dug thru enough. Also, the plants are way better at pushing the soil apart with their roots, than I am with my tools, somehow the wild plants manage to push their roots thru deepest mud and honestly I don't feel the urge to compete with that. My job is to add organic matter and add fertility and feed those worms who then go on to also fertilize the soil. But I guess everyone else feels a little bad tilling and digging while I'm just piling leaves on top and acting like I'm also gardening, when in their eyes, I am wronging the space by failing to garden the proper way. And then they see my failed baby peas and go 'see, this is because you're not tilling' and I'm just, ughh, there are multiple reasons for my pea failure.
Being the youngest one there and then refusing the wisdom of proper, 40-years-of-experience gardeners is not a great position to be in, but I'm so in love with my garden, I can persevere thru that. It still does grow me enough food to keep me happy the entire year, so others being critical of it isn't the worst thing in the world. I do have a lot to learn, but I learn only by experience, not by doing whatever I am told.

because i don’t have the time or the energy to actually write, but i do have the inspiration, so here we go
damian: can cook pretty well but only if it’s in a recipe. if you set him loose in a kitchen he’ll be lost, but give him instructions and he’ll make a meal that’s pretty decent. he’s got some old recipes that martha wrote that he likes making with alfred there to guide him. he also has a couple of recipes that talia gave him, ones that the cook in the loa base where he grew up made. “of course i can make cahā tf you talking about” and then is horrified to discover he actually can’t because the cook always made it and he never bothered to learn but now he can’t drink cahā the way he likes and it’s a tragedy.
tim: “come on guys please frozen hot pockets with marshmallow fluff, gummy bears, and hot sauce on top is good just try it!” he puts skittles in pancake batter and he puts cool whip in canned chicken noodle soup and he eats pineapple pizza only when there’s tartar sauce on it. the rest of the family are completely sure his sense of taste is destroyed beyond saving. the funny thing is, he grew up eating nice and proper foods his nanny would make him when his parents were away, and those simple meals were what he learned to cook too. he also ate those bland, tasteless little meals at whatever function or party he was dragged to. he used to be very upper class white american. but now, his palette is possibly the most disgusting thing to ever exist and that is entirely because of one Bart Allen.
cass: slices open a guava, sprinkles some salt and paprika on top, then monchity cronches. she likes fresh fruits and veggies, partly because there’s no preparation required, partly because fresh and organic foods weren’t a luxury she was afforded and she loves it now. she prefers snacking in little periods all throughout the day rather than having three big meals. and by “snacking” i mean celery with ranch, or popping grapes in her mouth, or sometimes even goat cheese. so it’s either farm fresh produce or the greasiest, most disgusting fast food meal to ever exist, there’s no in between.
jason: brings tears of joy and pride to alfred’s eyes. he just knows his way around a kitchen. his spinach-ricotta-chicken lasagna is a thing of beauty. his muffins will make bruce behave like an actual dad for an afternoon. he knows how to make do with the ingredients he has, and create something incredible out of them. cooking with alfred had been the thing that really convinced him he was a part of the family back when he was robin, and it’s the thing that brings him back when he’s red hood. its,,,,,relaxing in a sense. he’s not real good at art like damian or photography like tim. he’s honestly a little uncomfortable in his body and not at all graceful like cass, doesn’t know how to even begin turning movement and dance into a work of art like dick. but it feels nice to create something rather than destroy. so, cooking it is.
dick: health nut. no. shut up. he’s an aerialist and an acrobat, he knows damn well how important it is to monitor what goes in your body. also, he grew up in a traveling circus. get your lucky charms and cereal addiction out of here. no way in hell. dick thinks homemade poke bowls with chicken and brown rice are a good lunch. (actually that really does sound like a good lunch and i’m hungry rn). avocados all. the. time. because he tried them that one time the circ toured ecuador and never grew out of them. he made sure to learn simple but good recipes, and uses them often, like marinating some shrimp in mediterranean spices for half an hour and frying them on a cast-iron skillet, and eating them with rice. or smoothies with whatever fruit’s in season, greek yogurt, and oats. i am literally describing my diet oh my god.
bruce: a disgrace. a Fool. you can drop him in the middle of nowhere and he’ll be able to survive by eating the bare essentials, but dear god if he didn’t have alfred it would’ve been takeout every day and every night for the rest of his life. he can’t even follow instructions on a ramen noodle cup. he can’t cook because he never had to, he never had to learn, and he doesn’t really plan on learning anytime in the near future. 
alfred: he is god. he is the god of the kitchen. he knows so many recipes, and if he doesn’t, it takes him one try to learn. he is the deity except when it comes to pies. i mean, his pies would win baking contests under normal conditions. but pies are the one thing that martha kent can make better than him, and it infuriates alfred to no end.
