unexpected family gathering, 800 words (it was for my creative writing class LOL
(sorry for awful formatting you know how tumblr is 🙁)
@enassbraid @maehemthemisfit
Collei finished pulling up extra chairs to the dinner table for the unexpected guests. Cyno gave no prior warning of him inviting all five of his new friends, and it seemed as if he had no prior warning of it either, as he was apologizing to her and Tighnari about the short notice.
“Uhm. The more the merrier?” Collei said awkwardly, shifting around
where she stood. She had no problems dealing with hordes of children, but being in a room full of adults made her nervous. She recognized some of the guests. The Akademiya’s scribe, Al Haitham, and the famous Zubayr Theatre dancer, Nilou. The other three, A woman clad mostly in black and red, another woman in purple, and a man who was blonde, were unfamiliar to her.
Everyone brought food to share, Curries, Fish rolls, Soups, Shawarma wraps, and of course, Collei’s homemade Pita Pockets. She wondered if her food would be good enough for everyone, Cyno and Tighnari always loved it but… Maybe she should stop overthinking.
The woman in black and red took a big bite into one of Collei’s pita pockets and instantly looked delighted.
“Oh wow! This is REALLY good. Which one of you brought this stuff?”
Collei nervously raised her hand. “I did! I mean-- I baked them, actually.”
“These are amazing. You’re Collei right?”
“Mhm!”
“Well it’s a pleasure to meet you, Collei. I’m Dehya.”
Collei began to return the feeling to Dehya, but as she opened her mouth, her voice was overshadowed by the argument she failed to notice was rising between the two men across from her.
“It’s Sha-warma. S-H-A-W-A-R-M-A.” Al Haitham gritted his teeth at the blonde man next to him.
“Shwarma. S-H-W-A-R-M-A.” The man bickered back, arms crossed and chin pointed up. Collei knew that this man was wrong, but she just sat there awkwardly and let the argument continue.
“You’re the one who brought the meal Kaveh! How are you still spelling it wrong?”
“I’m not! It says it right there on the box.” He points to the container he bought it in, where it had “Shawarma” written on it, but the a had been scribbled out by Kaveh. Cyno and Tighnari gave each other the ‘everyone here is an idiot’ look. And the woman in purple, who Collei figured was named Dunyarzad, because she kept on hearing her be called that, finally interrupted the bickering.
“Gentlemen! Let it be. Why don't we just enjoy our meal instead of arguing on spelling?” She urged.
“Al Haitham can’t stop talking about spelling, he’s a scribe!” Kaveh howled, throwing his head back in pleasure at his jab at his roommate. This garnered a snicker from Nilou and Dehya, and a sigh from Cyno. Collei leaned over to Tighnari’s ear,
“How are these two still friends?” She asked.
“I don’t think they are. They’re just roommates.” He shrugged.
Al Haitham looked burnt out. He took another bite of his food and savored it like he needed it to stay sane.
“You eat like an old woman.” Kaveh picked at him again.
“Good lord Kaveh, you know what? You aren't gonna be able to eat for a whole month when I’m done with you--”
Dunyarzad looked visibly nervous, she wasn't all that huge of a violence fan. Dehya took notice of that and got up and moved her chair in between the two, sitting on it and separating the two.
“You’re making my lady nervous. Tone it down will you?”
Al Haitham had seen Dehya’s fighting prowess more than enough lately, and he knew how she got when Dunyarzad or Nilou were concerned. So he put his hands up in compliance and then kept enjoying his food. Kaveh followed along and struck up conversation with Cyno and Tighnari. They discussed their individual times at the Akademiya, Dunking on teachers, laughing about absurd test questions. Al Haitham and Dehya started discussing possible jobs for Dehya to take in the future. Nilou and Dunyarzad called Collei over to talk about taking dance lessons together, since the two of them finally had the ability to do such grueling physical tasks. Collei began to feel more comfortable in the group. She felt like she had a big family for the first time. No longer just Tighnari, and Cyno who merely visited. Not that she didn’t love the two with her whole heart, but more wasn’t too selfish to ask for, was it? Everyone got tired and was ready to leave after a few more hours of bonding. Dunyarzad left with Dehya first, then Nilou, Then Kaveh and Al Haitham, and finally Cyno patted Collei on the head and made his way back to the desert.
“‘Nari?” Collei asked.
“What is it?” Tighnari responded.
“I think we should have another dinner with them sometime soon.”
Tighnari chuckled and nodded. “As long as it's not a surprise next time, I’ll allow it.”

Khubz, alternatively transliterated as khoubz, khobez, khubz, or khubooz, is the usual word for "bread" in Standard Arabic and in many of the vernaculars.
Among the breads popular in Middle Eastern countries are "pocket" pita bread in the Levant and Egypt, and the flat tannur bread in Iraq.
The oldest known kind of bread, by archaeologists in Northern Jordan, dates back 14,000 years. It was a sort of unleavened flatbread made with several types of wild cereals.
Tannur bread. In Iraq, the most popular bread is the Tannur bread (ḵubz al-tannūr, خبز التنور‎) which resembles other slightly leavened flatbreads such as Iranian nan-e barbari, Central and South Asian flatbreads (such as naan), and pizza base.
The word tannur comes from the Akkadian word tinūru, which consists of the parts tin 'mud' and nuro/nura 'fire' and is mentioned as early as in the Akkadian Epic of Gilgamesh.
Six recipes for bread baked in a tannur are included in Ibn Sayyar al-Warraq's 10th century Kitab al-Tabikh cookery book.
As a result of the economic sanctions imposed on Iraq in the 1990s there was an increase in the making of bread in the traditional way in a tannur.
Pita bread. Pita is a flatbread found in many Mediterranean, Balkan, and Middle Eastern cuisines. In Arab countries, pita bread is produced as a round flatbread, 18 cm (7 in) to 30 cm (12 in) in diameter. It is thin and puffs up as it bakes. Since it does not contain any added fat, it dries out rapidly and is best consumed while still warm; later, it may become chewy.
The "pocket" pita originated in the Middle East. It is also known as Arab(ic) bread, Lebanese bread, or Syrian bread.
In Egyptian, Israeli, Palestinian, Jordanian, Lebanese, and Syrian cuisine, almost every savory dish can be eaten in or on pita bread. It is one of the staple food items in the Lebanese cuisine. Common fillings include falafel, lamb or chicken shawarma, kebab, omelettes such as shakshouka (eggs and tomatoes), hummus, and other mezes.
Nationals of other countries, for example, South Asians, also consume it as a replacement for roti with curries, cooked vegetables or meat (dry or gravy).

Savor the Fusion: Chicken Al Pastor Tacos
Chicken al pastor tantalizes taste buds with a harmonious blend of Mexican and Lebanese influences. This delightful dish, born from the bustling streets of Mexico, marries tender marinated chicken with smoky, spicy, and slightly sweet flavors. In this article, we’ll explore the origins, preparation, and variations of this mouthwatering fusion.
What is Al Pastor?
The term “al pastor” translates to “shepherd style” in Spanish. This popular Mexican cooking style draws inspiration from Middle Eastern lamb shawarma, thanks to Lebanese immigrants who settled in Central Mexico. Traditionally, al pastor features marinated pork cooked on a vertical spit called a trompo. The pineapple-topped meat stack rotates on a rotisserie, infusing the pork with juicy pineapple goodness. Each slice boasts a vibrant red-orange hue and a complex blend of sweet, spicy, smoky, and tangy flavors.
Why You’ll Love Chicken Al Pastor
Now, let’s dive into why this less-authentic weeknight version of sheet pan chicken al pastor recipe deserves a place on your dinner table:
Easy to Make: While the traditional trompo method is time-consuming, our home-cooked version is equally flavorful. Whether you grill, bake, or pan-fry, the results are delicious and achievable in a fraction of the time.
Flavorful and Delicious: Chicken al pastor takes chicken to a whole new level. It remains juicy, rich, and bright orange, boasting smoky, tangy, sweet, and spicy notes.
Versatile: Beyond tacos, chicken al pastor shines in burritos, burrito bowls, quesadillas, taco salads, and alongside eggs.
Key Ingredients
Let’s break down the essential components for creating chicken al pastor magic:
Marinade:
Achiote Paste: Provides earthy flavor and that signature red color.
Orange Juice and Brown Sugar: Balances sweetness and crisps up the edges during cooking.
Apple Cider Vinegar: Adds a tangy kick.
Aromatics: Fresh garlic, chipotle peppers, ancho chili powder, cumin, and dried oregano.
Chicken Thighs:
Opt for boneless, skinless chicken thighs for maximum tenderness.
How to Make Chicken Al Pastor
Homemade Al Pastor Marinade
Blend the marinade ingredients until smooth.
Generously coat the chicken thighs with the marinade.
Marinate for at least 10 minutes (or up to 12 hours in the refrigerator).
Sheet Pan Chicken Al Pastor Recipe
Arrange marinated chicken and pineapple chunks on a lined baking sheet.
Bake at 400°F for 10 minutes.
Flip everything over, brush with remaining marinade, and continue baking until fully cooked.
Broil for Crispy Edges:
Carefully chop partially cooked chicken into bite-sized pieces.
Return chicken to the baking sheet.
Broil for 4-5 minutes, turning halfway, until browned and slightly crisp.
Serving Suggestions
Chicken al pastor is incredibly versatile:
Tacos: Fill warm corn or flour tortillas with juicy al pastor chicken, sliced pineapple, diced onions, fresh cilantro, and a squeeze of lime juice.
Burritos and Bowls: Create burritos or rice bowls with your favorite fixings.
Quesadillas: Melted cheese and chicken al pastor—need we say more?
Does This Taste the Same as Chipotle’s Chicken Al Pastor?
While our homemade version captures the essence of al pastor, it’s not an exact replica of Chipotle’s. However, the bold flavors and juicy chicken will leave you craving more.
Storage
Refrigerate leftover chicken al pastor in an airtight container for up to 3 days.
Freeze any extra portions for future taco nights.
Conclusion
Chicken al pastor bridges culinary worlds, celebrating fusion and flavor. So, gather your tortillas, slice that pineapple, and embark on a taste adventure with homemade chicken al pastor—it’s a fiesta waiting to happen!

Another @foodiva event, tonight’s #FourChefsDinner was at @alnafoorahdubai (in @jumeirahalqasr where the Spanish restaurant Al Hambra used to be). • We started out on the terrace with @champagnemalard Pierre-Simon and canapés of classic Al Nafoorah favorites: mini cheese rakakat, mini kibbeh, hummus tarts and tabbouleh on a spoon. • First chef was Ali Fouad of Al Nafoorah for the canapés we just had and the cold mezze which were on the tables. There was muhammara, kibbeh nayeh made with minced Saroma Wagyu beef topside and burghul, lubia, a tart salad of roka, figs, dates, tomatoes and beetroot crisps, freshly baked pita with a @chateaumarsyas rosé. • Chef Troy Payne did the hot mezze starters: coal roasted oysters with zhoug butter, lemon and arak, spiced prawn sambousek, Saroma wagyu shawarma and root vegetables kebab. • Next chef was Bethany Kehdy with the main courses: butterflied prawn tajen, Silver Fern Farms lamb kebbeh flambéed at the table and the candied beetroot and aubergine maqlouba served with another Lebanese wine #ChateauMarsyas Syrah-Grenache-Mourvèdre blend from Baalbeck. • Finally, chef number four is non other than @m.orfali with two unique desserts - the ord baklava and a karaz sour cherry and dark chocolate “cherry” which we enjoyed with @familiatorreswines Floralis Moscatel Oro. • Four chefs collaborating on a Levantine feast complemented by Lebanese wines made for a delicious evening. • #TravelswithaGourmet #TWAGDubai #Foodiva #foodies #foodstagram (at Al Nafoorah) https://www.instagram.com/p/Cba2KclhH2w/?utm_medium=tumblr

CHEF ILONA: The iconic Mexican dish, Pork al Pastor is also Lebanese!
Tumblr media
I love tacos; authentic, messy, satisfying tacos! In the 1930s,Tacos al pastor were first created in Puebla, Mexico by Lebanese immigrant community living in the area. At this time, the Lebanese classic, shawarma was intrroduced to Puebla. This creation was originally known as tacos árabes, and used meat cooked on a vertical, or upright, grill.
The technique of cooking meat on a vertical spit would eventually evolve into tacos al pastor. When the upright grill moved on from Puebla, the tacos al pastor as we know it today gradually came into being: Marinated pork replaced lamb on the spit.

Pork al Pastor     Adapted Kenji Lopez’ recipe
10 whole ancho chilies, seeds and stems removed
10 whole guajillo chilies, seeds and stems removed
1 ½ cup low-sodium chicken stock
¼ cup vegetable oil
3 tbsp dried oregano
3 tbsp dried ground cumin seed
3 Tablespoons paprika
5 chipotle chilies packed in adobo sauce, plus 2 teaspoons sauce from can
1 ¼ cup distilled white vinegar
1 bulb, whole cloves garlic
2 tbsp kosher salt
3 Tbsp sugar
10 pounds boneless blade-end loin or sirloin pork roast
8 ounces (½ pound) sliced bacon
Place chilies in a large saucepan over medium high heat and cook, turning chilies occasionally, until puffed, pliable, lightly browned in spots, and very aromatic, about 5 minutes. Add chicken stock (it should boil immediately), then pour contents of pan into a small bowl. Cover loosely and set aside.
Wipe out saucepan, add oil, and return to medium-high heat until oil is shimmering. Add cumin, oregano, and achiote and cook, stirring frequently, until aromatic but not browned, about 30 seconds. Add paprika, chipotle chilies and sauce and cook until aromatic, about 30 seconds longer. Add vinegar, salt, and sugar and remove from heat.
Scrape contents of saucepan into a blender along with garlic and chilies with their soaking liquid. Blend on high speed until completely smooth, about 1 minute, scraping down sides as necessary. Set sauce aside to cool slightly.
Using a very sharp chef's knife or slicing knife, slice the meat as thin as possible. If necessary, place meat in freezer for 15 minutes to firm it up. Split the sides of a heavy duty zipper-lock bag. Place one slice of meat inside bag and pound with the bottom of a heavy 8-inch skillet or a meat pounder until less than 1/4-inch thick. Transfer to a large bowl. Repeat with remaining meat.
Add marinade to bowl and toss with hands until every piece of meat is evenly coated in marinade.
Begin to layer the meats and pineapple in a baking dish starting with the sliced pork, then bacon and finally pineapple. Continue this process until everything has been layered up.
Slow cook the meat in a 325 oven for about 3 hours or until the meat is tender, but remains intact; pork al pastor is not pulled pork. Check the pork after the 2.5 hour mark.
To serve: Crisp up the meat in a pan. Pop some meat on a corn tortilla and top with cilantro, chopped onion, and lime. Devour immediately!
