I'm no royalist by any stretch, but hearing of the Queen's sudden passing is something deeply saddening to me as a historian and feminist. Although this country and its royal family have their obvious flaws, the Queen has been a constant in all our lives. She has firmly held her position longer than any royal in British history, she has visited this country's sick and poor, witnessed wars, witnessed peace, shown her disapproval of certain politicians/world leaders in various subtle pieces of statement jewellery. Stories about her sense of humour and love for Prince Phillip are the most basic human things we can all relate to, and above all, the royal family is a family who has lost the beloved head of their household. I'm going to the library to work on my most recent freelance commission tomorrow, so I have made a bento box for lunch, including these overnight soy-cured eggs! The tub they're curing in is a repurposed hummus tub! The curing mix is light soy sauce seasoned with sesame oil, ~1tsp of black sesame seeds, ~1tbsp of chilli flakes/seeds, 1 chopped red chilli and ~2cm stub of ginger. This isn't the first time I've made these cured eggs to enjoy alongside salad, rice, etc., and I like to fiddle around with my ingredients and their quantities to see how it changes the cure. So far, I've never been disappointed, so if you want to try out this recipe, don't be afraid to change it up to suit your tastes! The sauce won't go to waste, either! 🔥🎆 SPICY POST🎆🔥 It has been over 3 weeks since I set the radishes and the cucumbers and red spring onions off to pickle in a spicy pickling mix. And they are DELICIOUS! They came out better than anything I ever imagined! The cucumber slices have retained a lovely crunchy edge and middle - which I was really surprised by, considering their water content! They have really absorbed the spiciness of the black peppercorns and mustard seeds, and the pickled flavour hasn't been overwhelmed by the cloves like I had anticipated. The radishes have really retained their natural flavour, and now have added spice to compliement their rustic, earthy flavour. They have softened only a little in the pickling vinegar, giving a fantastic crunch! Their red pigment has leached into the vinegar, giving it a beautiful ruby hue. While stocking up on ingredients on Saturday, I visited my local plant shop and found this Lupinus plant dying on the street, so I asked the owner if I could take it to try and save it. Had a busy weekend seeing friends - and making new ones - so I don't have a lot of content to share right now. A bigger post will be coming later, so watch this space! In the meantime, enjoy this photo of these surprisingly adorable meringues we made last night, with leftover egg white from a hollandaise sauce I made on Saturday. The hardest part was stopping myself from eating them as soon as they came out of the oven!! For a total of 12 meringues, you will need: 💫 The whites of 3 eggs 💫 150g sugar (we used granulated white sugar, but you can use caster sugar too) Equipment: 💫 Bowl big enough to whisk in 💫 An electric whisk 💫 Oven pre-heated to 140⁰C 💫 A baking tray covered in baking paper OR a muffin tray lined with 12 cupcake cases. Method: 1. Pre-heat oven to 140⁰C. 2. Pour egg whites into bowl, whisk until white, foamy, and creating stiff peaks when you remove the whisk. 3. While continuing to whisk the mixture (I use a slow, 8-formation), gently pour in 1 teaspoon of sugar at a time until it is all incorporated. Don't be tempted to rush this step, as you will beat out all the air that makes the meringues fluffy in the middle! 4. Using two tablespoons, separate the mixture into 12 cupcake cases. 5. Bake in the pre-heated oven for 1 hour.
