I'm going to the library to work on my most recent freelance commission tomorrow, so I have made a bento box for lunch, including these overnight soy-cured eggs! The tub they're curing in is a repurposed hummus tub! The curing mix is light soy sauce seasoned with sesame oil, ~1tsp of black sesame seeds, ~1tbsp of chilli flakes/seeds, 1 chopped red chilli and ~2cm stub of ginger. This isn't the first time I've made these cured eggs to enjoy alongside salad, rice, etc., and I like to fiddle around with my ingredients and their quantities to see how it changes the cure. So far, I've never been disappointed, so if you want to try out this recipe, don't be afraid to change it up to suit your tastes! The sauce won't go to waste, either! Did you know that you can regrow your spring onions?  When you're done using your spring onion, save the bulb with the roots attached and place it in a jar/cup of water. The green roots will start to grow, quickly.  Keep the roots submerged and change the water once it starts to get cloudy, which is roughly once a week. Broccoli stalk, anyone?
Don’t toss that stalk! Broccoli is delicious for the florets and that fresh stalk. You can eat the stalk raw, roasted, sauteed, and it goes well in just about anything you would add florets to. You can check for a healthy, fresh stalk by turning the broccoli upside down and looking for an intact, white-ish bottom. Cut off any rough ends or sides and add those to your scrap stock container.

Veggie chilli with all the sad veg from the bottom of our fridge! Chilli is great for using up random bits of veg because it's so tasty and all the flavours get merged in there. This one-pot meal is also super budget friendly because it uses cheap veg and beans as protein which are way cheaper and better for the planet than meat. Here I added - 🥕🌰🍅🍠🫑🌽 plus garlic, tomato paste, broccoli stems, and some wilted spring onions with plenty of spices, a bit of water, and a teaspoon of veggie stock powder. TEST KITCHEN: AUBERGINE 
I've got last aubergines of the season from a farmer's market two weeks ago. Since they're refrigerator free from the field to the market, I made an experiment to show the different changes of aubergines depending on preservation methods. 
I kept the white one in the vegetable drawer of the fridge, the purple one on the kitchen shelf out of the fridge. For the lined one, I waxed its stem and kept it on the kitchen shelf out of the fridge. 
For about a week, there was not much change in any of them. Now it's two weeks passed, I see that the aubergines outside the fridge got dry a bit and the one in the fridge got mushy with a spot rotten. You see the different reactions of aubergine in different surroundings? Don't forget they are alive!

So then which one is the winner? I vote for the one with waxed stem out of the fridge. When I cut them, I could see the refrigerated one got rotten inside and became powdery while the other ones got just a bit dry. The waxed stem one got less dry. Yes, waxing the stem keeps the aubergine from dehydrating as I showed on the post how to preserve melons
