A&A Bake & Doubles, Brooklyn
Been hearing so much great buzz about A&A that I decided they’d be the second restaurant I’d visit as part of my weekly “CBTPB” (“C.B’s Trains, Planes and Boats”) feature here on Eataku, where I make a food excursion using one of those methods of transportation. As much as I would have loved to have hopped a plane to Trinidad & Tobago, I ended up taking the A train out to Nostrand Ave. in Brooklyn instead...
I’ve been to Trinidad & Tobago twice and fell in love with the country. Traveled there for work originally, where, unknown to many, they actually have a small but active comic scene, and visited the second time for a personal vacation, where we explored the local culinary and cooking scenes. We still use a lot of ingredients and recipes we acquired and learned about on that trip, but are always on the look out for good Trini restaurants. And now we’ve found a winner!
We went to A&A for their famous doubles, which arre two pieces of fried dough stuffed with curried chickpeas, only to have them sell out while we were in line. Doubles are usually eaten early, so we should have known to get there before noon. So instead we took whatever they had left when we got to the counter, which was a fry bake (fried bread) stuffed with salt fish and house made "spicy” sauce...
And also a roti bake filled with curried shrimp...
Both bakes were EXCELLENT! Two of the best bites we’ve eaten this year so far. The texture of each bread perfectly complimenting the fillings, the thinner and crunchier fry working well with the drier fish, with the more pillowy roti standing up well to the sauced shrimp.
We’ll be going back soon to not only have these again, but to try our best and get the doubles we missed by arriving too late. Just have to make sure we make it a morning excursion next time as A&A open at 6:30am!

After a public meltdown over her breakup from her cheating musician boyfriend, Cherisse swore off dating, preferring to focus on growing her pastry chef business. When Cherisse’s sister reveals she’s getting married in a few months, Cherisse hopes that will distract her mother enough to quit harassing her about finding a guy, settling down and having kids. But her mother’s matchmaking keeps intensifying.
Cherisse tries to humour her mother, hoping if she feigns interest in the eligible bachelors she keeps tossing her way, she’ll be off the hook, but things don’t quite go as planned. omg first cooked meal in ages and it did not disappoint hm i think i'm ready to go back to light cooking that was definitely worth it i think the issue is me trying to rush through it and not having any distractions to keep me patient but now i cracked the code to cook relaxed so i cook it exactly how i want
#it was chickpeas and parata if anyone was curious#i was referencing trinidadian style chickpeas doubles#but it didn't occur to me i wanted that until i was home already so i didn't buy any tamarind paste or some of the other ingredients#like all spice nutmeg etc#but i used black vinegar oyster sauce fish sauce and it was good anyways#i shouldve used the cinnamon powder now that i think of it but i forgot i had it in powder form#well i bought a bigger can than usual so i will make it again with some alterations im in the mood for experimentation now#and i wanna see how close i can get to the trinidadian style#i had it one time at a picnic in june and i did not forget about the deliciousness#i also need to make the cucumber chutney#🧃#i was getting real tired of hmi's meat centric food with the laziest seasoned vegetables and too sweet savory dishes#americans never make anything spicy and even their savory dishes are somehow sweet explain that

Because no one asked, I decided to draw up my OWN special interpretation of Team Hooligan, ✨WITH JEST!!✨
Mind you everything is mostly based off of my own headcanon, so enjoy it as you will!! I'll write brief descriptions that you can read right here !!!!

Fang the Sniper/Hunter
He/Him // 21 yrs old // Australian🇦🇺 & Dominican🇩🇴 // Bisexual
Fang is a mercenary/bounty hunter and the leader of Team Hooligan. Though he often works alone for most gigs, he considers his team to be a found family of sorts, despite not always getting along with them. He has a great fascination for guns, but often uses his regular cork gun unless it's for serious situations. He's easy to anger and is heavily motivated by his greed and desire to prove himself as a top notch mercenary. Though things don't always work in his favor.
He's told very few people about his origins, how he had once descended from a noble family, until "one incident led to another and now suddenly I'm all on my own!" The one thing he absolutely REFUSES to tell people is that Fang isn't really his birth name.
• Cocky, Greedy, and Selfish. Probably has a slight tinge of insecurity due to past failures with Sonic and company.
• Keeps cigarette packs on his person often.
• Has a small shack he and the others share together over in Mirage Saloon Zone. He started sharing his room with Jest once she started hanging around.
• Loves mechanics, no one else but him drives the Marvelous Queen, it's a vehicle of his own design.
• Likes playing card games, spicy food, and keyboards.

Jest the Jack Rabbit
She/Her // 21 yrs old // Puerto Rican🇵🇷 & Trinidadian🇹🇹 // Bisexual
Jest is another bounty hunter, who despite her silly clown appearance, is a very threatening figure. She's agile, quick witted, and carries around a baseball bat she calls the Wacky Whammer, that's bound to give anyone a painful concussion. She came across Team Hooligan after they [Mainly just Fang] attempted to mug her, to which they received a harsh beating at her hand. She has found herself to be fixated on their leader however, and sticks around them to watch them struggle for success.
She grew up in a circus with her sisters, before finding herself fixated on the chaos emeralds and chaos energy. Unleashing an ultimate chaos has been her grand goal as she hopes to spread her madness across the world. She plans to achieve that, either by herself or with other comrades as her stepping stool.
• Loud, Annoying and Obnoxious. Loves to push Fang's buttons and watch him lose his cool. Her not so secret crush on him is absurd.
• A known sadist, she enjoys intimidating others and seeks out the emeralds for power and chaos.
• Enjoys gossiping with her friends, Ace and Solar, particularly about the Hooligans.
• What her and Fang have is a somewhat open secret. It's hard to tell if they hate each other or love each other. From their endless bickering to Jest's raunchy flirting.
• Likes cinnamon buns, yo-yos, and fondant.

Bean the Dynamite
Any Pronouns // 15 yrs old // Brazilian🇧🇷 // Pansexual, Genderfluid
Bean is a young and spontaneous explosives expert, with a goofy and hyperactive personally that keeps the team on their toes. He carries around comically large bombs, no one is really sure HOW he does, but they don't ever seem to question his methods. Despite his lighthearted demeanor most of the time, no one can ever seem to tell what he's got cooking in that brain of his.
Not much is known of where Bean came from, but from what Bean's told about himself, he remembers being in an egg. And a great amount of movement. Up until he hatched and found himself all alone in the middle of the forest. Most just assume he hit his head or something before he ran into Bark.
• Silly, Scatterbrained, and Crazy. Hard to tell if he's a bad guy when he's so comedic.
• Fidgets constantly, he can't sit still for more than a few minutes.
• His bombs are handmade, and he likes gifting them to the others as surprises or as little pranks.
• Considers Bark to be an older brother figure who keeps him in check. Buys him Father's Day cards.
• Likes comic books, explosives, and gummies.

Bark the Polar Bear
He/They // 23 yrs old // Russian🇷🇺 & Haitian🇭🇹 // Pansexual Demiboy
Bark is the overall brawn of the team, being the strongest physically and able to do most of the heavy lifting if necessary. He's the most level headed as well, and finds himself being the one to pull everyone back when things get too complicated [If Fang himself isn't having a pissy fit]. He's particularly shy and doesn't really like communicating much with others, as he finds it quite difficult. And despite his rather prickly job, he means well and cares for others like Bean and Amy Rose.
Before he had become a member of Team Hooligan, it's been said that he's gotten his fighting experience from being that of a professional fighter. He doesn't enjoy bringing it up, but he prefers what he's got going on now. If any of the others ask to fight him, he'll consider the offer.
• Quiet, Tough, and Stoic. He cares though, he's just a bit shy when it comes to feelings.
• A walking furnace, he gets warm easily and has an itch for cold food often.
• Used to fight professionally at one point before joining Fang's gang.
• Selective mute and often communicates with sign language or writing.
• Likes seafood, belly rubs, and coloring books.

Wolf (Oc) Headcannons
She's the youngest and shortest member of the task force.
• This woman is clumsy and accident prone af, she's always hitting her toe on something or tripping over nothing. The couch in the common room hate her. Actually the couch, the doors and the coffee table.
• She's dropped her phone on her face more time then she can count.
• She squeaks a lot, when she hurts her toe or you wake her up she sounds like King (If you watched owl house, you then you know. Squeak of rage). She squeaks or makes some noise for everything.
• She gets lost constantly, if she goes out with them, they lose her...cause she's short (5'2) and their all giants. The sad thing that shes not always lost, they just need to look down
• She'll stay quiet on purpose, just to make them believe they lost her. She finds their panic hilarious.
• She has ADHD.....(need to write about this later)
• Is low-key suicidal. Needs therapy.
• Loves dogs
• Is a horse lover has horses at home
• She's a Yank (American according to British slang)
• She has Trinidadian roots, sometimes when mad or annoyed she switches to her Trini accent and will use Trini slang and curse words.
• She loves tea, much to Soap's disappointment
• She loves oversized hoodies, has accidentally stole everyone's hoodies at least once....
• It was on purpose.
• She's the only one who washes Prices hat without him knowing.
• Has a shark blanket
• She sucks at uno, (it's a cursed game I don't blame her)
• Loves spicy food.

so my white co-worker was complaining about her (community college) field trip last weekend:
for lunch, her school had catered from a Thai restaurant. usually, if a university/school/workplace was covering pack lunches, they'd do sandwiches from Panera, or pasta from Olive Garden, or maaaybe burritos from Chipotle.
Her: I didn't even know the difference between the offered options. I ended up grabbing this weird, peanut-buttery, spicy noodle dish.
this was the most foreign she'd ever ventured with her food. i pointed out that her lunch didn't sound weird to me in the least, and she responded;
Her: So you'd intentionally serve foreign food to a bunch of people, not knowing if they'd like it or not, and it'd be their fault if they happened to find it weird or gross?
me, who grew up eating my homeland's food at home, and then American 'foreign food' every day at school? me, who mostly made friends with other Asian kids, so their parents fed me Vietnamese/Laotian/Burmese/Chinese/Sakha/Turkish food whenever i played over? me, who grew up in an international graduate student housing complex, so potlucks and gifts and Halloween and birthdays were a toss-up between Indian, Trinidadian, Ivorian, Russian, Ashkenazi Jewish, Norwegian, etc and so forth?
i told her that the majority of Americans are very much used to eating food from multiple cultures, especially us younger generations. we grew up eating from multiple cultures every single day, staring blankly every time someone told us that mac-and-cheese is a 'universally loved dish'.
it's fine to have food preferences. like, i personally hate asparagus and pineapple, and i prefer dry thin rice over the wetter, short-grain ones.
but never have i considered any deviation from my cultural cuisine be a huge undertaking. so what that a catered lunch was pad thai instead of turkey sandwiches? so what you came over to someone's house and they dare serve you pig ears instead of meatloaf? so what it's Japanese buckwheat noodles instead of spaghetti? so what you're handed a bowl of rice instead of a slice of bread?
and it's fine if that'd be a huge culinary leap for you. but don't try to convince me that it's humanity's "normal" to expect only (these) cuisines and not (those) at any given time.
(and don't get me started on how many times i'd recommend the mango-dragonfruit refresher to customers, only to be given an awkward smile and a "no thanks, i've never tried mango or dragonfruit".)

Connie Williams (seated) and a dancer at the Calypso on Macdougal Street in Greenwich Village, ca. 1945.
The Calypso was a Caribbean establishment run by Williams, a Trinidadian restaurateur, where musical performances, soul food, and intellectual banter mixed with a steady flow of liquor. It was a spiritual home of sorts for James Baldwin in his first years in the Village. He got a job there as a waiter, and when he wasn't working he'd be drinking with the artist Beauford Delaney or Marlon Brando, a lifelong friend and supporter. It was a space where races mixed freely, which was still unusual at the time, and on a given night you might have seen Paul Robeson or Henry Miller eating side by side with Burt Lancaster or, later, Malcolm X.
