Here's a spreadsheet of all current Celestials in the realms, excluding Angels and Demons (the colors might be a bit off because I view it in dark mode).
The term "Celestial" refers to several different types of higher immortals with extraordinary abilities, much stronger than those of any mortal, that can only be killed by a Celestial of equal or greater power.
The following beings are considered Celestials:
Angels
Demons
Gods
Lesser Gods
Deities
Demigods
Spirits
Angels
The Angels are Celestials that have been born or created in heaven. They are divided into 3 main types depending on how they came to be: first generation Angels (1st gens), second generation Angels (2nd gens) and third generation Angels (3rd gens).
The 1st gens were naturally the first creatures to inhabit heaven. They were created by The Birthgiver, who is responsible for the creation of heaven, hell and their inhabitants.
They are known for their incredible power and incredible cruelty. They will go out of their way to make sure their spawn (the 2nd gens) lives in its own personal hell.
The 2nd gens are, along with the Gods and Demon Kings, the most powerful creatures in existence. They greatly exceed their ancestors - the 1st gens, in their capabilities. One notable feature of these Angels is the fact that they lack a soul. Their existence is quite paradoxical - they don't have a soul, meaning that they should not be alive because every living being must have a soul, and yet they are. Since they are alive and lack a soul, it is virtually impossible to kill a 2nd gen Angel.
Also, unlike other Angels, some 2nd gens have a "purpose" - something akin to a job or a reason for existence. It can range from guiding deceased souls to their next life in heaven, hell, purgatory, etc, to allowing souls to enter said places (or not doing so), to extracting souls that are due. An Angel's purpose is of utmost importance and must not be impeded by anyone or anything.
3rd gens were not created by other Angels, but rather by people's belief in their existence. They are the only Angels to establish benevolent contact with the humans. 2nd gens also occasionally establish contact with humans, but only related to their purpose or their current whims. Because of that, Angels often utilise an ability that most, if not all, Celestials have - shapeshifting, so that they can fit in better.
Demons
Not much is known about these Celestials. They were created or born in hell by The Birthgiver and are divided into two types - Demons and Demon Kings. The latter are Demons that have gained immense power through various means, but have lost their soul in the process. Like 2nd gen Angels, Demon Kings are virtually unkillable.
Gods
All-seeing, all-knowing, all-powerful Celestials that do not require a physical body in order to exist. However, Gods rarely choose to remain as metaphysical entities, as most form physical bodies for themselves (or parts of themselves) so that they can be more closely involved with their followers.
Technically speaking, Gods don't necessarily have a biological sex, but some are referred to by their kin with gendered pronouns, supposedly for convenience.
Gods require two main things to persist: belief and sacrifices. The sacrifices are needed to increase the God's power and the belief directly regulates whether or not the God receives the sacrifice. Meaning that if one believes in a false version of a God and makes a sacrifice to that version, the actual God will not receive the sacrifice, nor benefit from it in any way. This is why Gods take care to make themselves clear so that their followers can avoid unsuccessful sacrifices. The type of sacrifice and the material offered is decided by the God. Some Gods have found ways to bypass the need for sacrifices made by followers, although such are still accepted.
Gods are capable of creating other Gods, Lesser Gods, Deities, Demigods and Spirits. Only Gods can create other Celestials without the need of a mortal vessel. The Lesser Gods are the closest servants of the Gods and seek to become Gods themselves. Their creators watch them, wary of betrayal.
Lesser Gods
Lesser Gods can only be created by Gods. They must serve their creator but are not bound to them and seek to one day become Gods themselves, through betrayal or otherwise. In addition, they are not as powerful as their God and do not require sacrifices, but such are offered to them too.
Lesser Gods are capable of creating Deities, Demigods and Spirits with the need of a mortal vessel.
Deities
Deities are Celestials usually created by a God or a Lesser God. They are weaker than the former two and do not require sacrifices, but demand such anyway.
Deities are capable of creating Demigods and Spirits from mortals.
Demigods
Demigods are creatures somewhere between a Celestial and a mortal. These are very rare - very few such are known.
Demigods cannot create other Celestials.
Spirits
Spirits are the embodiments of different concepts. They can be created by Gods, Lesser Gods and Deities, but aren't always bound to their creator, and cannot create any type of Celestial. Some of them exhibit high intelligence, while others don't seem to have any conscience.
Spirits are normally peaceful towards people (unless provoked, of course), but, however rare, there are unnaturally hostile individuals.

In the following part Angels and Demons are excluded, unless explicitly stated otherwise.
Origins
In addition to their race (Gods, Lesser Gods, etc), Celestials are also categorised by their origin. So far, the following exist:
Celestials of Flint - the oldest Celestials, those that came into existence directly after the death of the first God
Celestials of Blood - Celestials created by other Celestials or born from parts of other Celestials
Celestials of Flesh - mortals that have ascended to Celestialhood
Celestials of Offer - manifestations born from the offerings of worshippers
Celestials of Loss - born from the death of another Celestial
Celestials of Nowhere - Celestials born from the depths of Nowhere
For example, Shuggor is a God of Flint because he existed before the worlds were created; the twelve Serpents are all Spirits of Loss because they were born from the death of their Holy Mother; The Birthgiver was a God of Flint or of Nowhere because it is unclear whether they were born from Nowhere or they created it.
Nowhere
Nowhere is a realm beneath all other realms. This is the place where dead Celestials reside and where the Celestials of Nowhere are born. Presumably, this is where the embodiment of Evil itself began its life, alongside the creatures known as Maggots.
The Maggots
The Maggots are eldritch parasites of immense power that are akin to small crescent moons in form and appearance; their skin is a white so pure that it is visible in the darkest nights. It contrasts greatly with the perfect blackness of their insides. They are more clearly visible in dreams than in the waking world.
The Maggots originate from Nowhere, where they feast upon and breed within the corpses of deceased Celestials. They represent an existential threat to all life in the realms. Even just the toxic remnants of dead Maggots are said to rank with the power of the lowest Celestials.
It is said that the principles of Rot and Moth understand the Maggots best and therefore know their weaknesses. Allegedly, the Maggots were created by something with the Feather aspect and are responsible for the existence of Shine.
Mortals have little to no ways to protect themselves against these creatures and must rely on their Celestials to protect them. Rituals with the aspects of Lantern, Shard and Lock seem to be the most effective against them and a mortal/immortal, infected by the Maggots can be saved via a ritual of Heart. Celestials are capable of killing Maggots, but are still cautious around them. The Maggots can only penetrate unscarred skin, as pure and unblemished as their own.
The Pyre Serpent, Azanahoth, was infected with Maggots by Yofm'log, which caused the former to become a God of Loss and Blood. It is very likely that Celestials with the aspect of Feather have some form of control over the Maggots.
