Fantasy Guide to Hosting a High Society Dinner Party

In every period piece, the rich, the noble and the Royal often gather for an exquisite meal where etiquette reigns supreme. The intricacies of these high society dinners are complex, one foot out of line and you risk offending your guests. So how can we write them?
Place Settings

Perhaps the most complex part of a dinner is how the silverware, plates and glasses are arranged on the table. First the table is laid with a wool cloth to keep the white tablecloth in place. The tablecloth has to hang midway between the floor and the table. Every course has to have its own set of silverware, every course must have its own glass for the wine being served. Napkins are usually of linen, cut about twenty-four to twenty-six inches. Most tables would have centrepieces either of candelabras or flowers. This would be undertaken by the footmen under the eye of the butler.

Table seatings are just as important as anything for a dinner as it marks rank. The head of the house sits at the head of the table. The guest of honor sits next to the head and if they have a guest, say a friend, they sit on the other side of the head of the household. A spouse of the female guest will sit to the left of the host and the spouse of the male guest at the left of the hostess. Important guests are seated near the host or hostess. Other guests at the table are arranged by interests, usually near people they can speak with. Married or engaged guest generally do not sit with one another. Most dinners are arranged in a man-woman arrangement. Most dinners, especially formal ones, would have assigned seating.

In the dinning room, there are usually a collection of footmen and the butler to serve. The butler selects and pours each wine for the courses served. He serves the host first, working clockwise around the table with each footmen carrying either the sides, accompanying sauce or the meat/fish itself. In very formal settings, every guest may have their own footman to cater their needs. While waiting at table, the servants don't talk to the guests unless asked a direct question they must avoid avoid eye contact and offer the plate to the appropriate height so the guest can easily serve themselves. All footmen and the butler must wear white gloves while serving.

Before dinner, guests gather in the salon or drawing room to have a drink and get settled before hand. Some houses served cocktails during this time. When dinner is announced, the guests will make their way into dining room with the men escorting the ladies they are seated with, following after the host in order of precedent. Most formal dinners had multiple courses, sometimes as much as twenty or so. After dinner, the ladies would leave the men to their drink and cigars while they take coffee in one of the drawing rooms. They would reunite after for some light conversation and entertainment.

There are strict rules involving drink. Most courses would have their own wine. White wine is served with the fish, red wine with the meat, and champagne or sherry with dessert. Port, coffee and other drinks such as curaçao would be served after supper. Wine would have had to be strained for sediment by the butler beforehand and decanted once opened.
Dining Etiquette

There are numerous rules to follow when is dining at a formal dinner right down to leaving the table or what you wear.
One doesn't sit until the hostess has been seated, the guests wait behind their chairs until she sits.
Men would pull out the chair for the lady to their right. Hands should remain off the table when not in use they should be ones lap.
Napkins are placed on one's lap but only after the host/hostess does, with the fold tucked at the waist.
As for silverware, one begins with the outermost pieces and work your way in for each course.
One only begins eating or drink when the host does. When the host/hostess stops eating, placing their silverware on the plate at the 10:20 position, everyone must stop eating.
When a lady rises, the men near her are expected to stand, pulling out her chair and pulling it in when she returns.
When being served, one is not expected to thank the servants.
When at a formal dinner, men would wear their whites and tails. At a less formal dinner, men would wear dinner jackets.
Married ladies would wear tiaras at formal suppers and all ladies wore gloves, removing them while eating.

Megan and Iseul perused the menu, trying to decide on an appetizer. Megan chose the honeyed world fruit charcuterie* while Iseul chose the savory bacon love petals and they placed the order with their waitress Moira Fyres.
While waiting for the food, they talked. "So, how are your parents?" Iseul asked. Megan grinned, shaking her head. "They're good, but still very lovey dovey. Mom told me that they're going to a couples massage and then dancing." Iseul laughed. "I'm glad they're good but dang shouldn't they dance and then get the massage for their post dance sore muscles?" She asked, and Megan shrugged. "It's sweet though, I hope we'll be like them in our old ages. And like how my appa and umma are-were-so in love." Iseul amended, her eyes darkening a bit.
Megan reached across the table and put her hand on Iseul’s. "They were." She said gently. "I know it's been years since they passed but I still miss them, you know?" Iseul said. Megan nodded squeezing Iseul’s hand reassuringly. "I know." She said. "They were great parents to you and Min Jun, and great in-laws. They accepted me as their third daughter after you and Paenji right away." She added, and she and Iseul both smiled. "Yeah, they were so happy when I told them I asked you out for real, well the clean version, not the woohooing each other one. Mom told me verbatim 'Finally, Iseul! I was wondering when you'd go and get your girl,' she loved cheesy romantic stuff. And dad told me to marry you and not let you get away. He told me how he met mom when she came to Korea to visit family and they spent three weeks together, and he went after her to tell her he loved her when she was going to leave because he knew she was the one and it was scary and soon but worth it. He told me if I felt the same about you I shouldn't wait and just be with you." Iseul said, her eyes lighting up. Megan grinned. "He gave you good advice." She said. "Yeah." Iseul said. "Also I'm your girl?" Megan asked teasingly. "Yes." Iseul said softly, and Megan felt her face turn pink as she smiled. "Well, you're my girl too, Issy." She said, just as their appetizers and sparkling water came.

Happy 39th anniversary to my parents! ❤️ To celebrate, we had dinner at Oriole, where the entirety of Pixies’ Doolittle plays over the speakers (who else is seeing 🧚‍♂️s outside the Salt Shed in August ‘cause I’ll see ya there) and concert posters cover the kitchen ceiling.
We’d initially wanted to come here last October for my mom’s birthday. However, the day of that reservation, they called us to say they had a COVID outbreak. We genuinely appreciated their honesty and sense of responsibility (as opposed to not telling anyone and just continuing to operate for the sake of $). And the wait was worth it!

13 May: birthday dinner at 1921 Angel Hill, Bury St Edmunds
this was a special dining experience, as Loverboy took me to a Michelin-starred restaurant for my birthday dinner. it was of course exquisite, and still a very comfortable atmosphere. I tried frogs legs, foie gras, and duck, liked everything except the texture of foie gras, and also enjoyed two delightfully strong cocktails.
more thoughts on each course below, but for now 11/10, definitely recommend, and ideally will make our special spot for future celebratory dinners.

we chose to do the 5 course tasting menu, which began with an assortment of canapés, which are extra-fancy hors d'oeuvres. the selection included smoked tuna on an anchovy cracker, tikka frog leg, mushroom croquette & quail's egg, something with beef tartare, something in caviar, and other things I forget what they were but they were delicious little morsels.

1st course: asparagus soup
this was so delectable it made me tear up a little bit. genuinely. I love asparagus to begin with but this "velouté" was next level. the truffels and quail egg were served in the bowl, and then the creamy velouté was poured at the table. I could have licked the bowl clean if it wouldn't have embarrassed my husband.

2nd course: wasabi mooli salad
the restaurant was able to accommodate my shellfish allergy, and made this dish without the mersea crab for me. the substitute was simply more pickled mooli (white radish), which was very good but had a very strong flavour on its own. I know I am not one to critique a Michelin star restaurant, but I do wish that they had actually substituted another more mellow-flavoured element in place of the crab. something like grilled chicken or even tofu, but... what do I know! all that to say, this was good but it was the only dish I did not finish as the pickled flavour of the mooli was just too strong to be enjoyed on its own for me.

3rd course: surf n turf but make it fancy ;)
this was another originally-shellfish dish, but they substituted the scallops for seared sea bass on my plate. chicken wings and chicken gravy complimented the fish unexpectedly well, and I could have eaten a whole basket of the morels alone to be honest. If I could order a full dinner sized plate from the tasting menu selection, it would be this dish.

4th course: duck and white bean cassoulet
the seared duck breast was served with rhubarb, and while I loved the duck I was not a fan of the rhubarb. i ate some of it but not all. I also cut the duck meat away from the strip of fat, which my partner said was meant to be eaten together. I cannot stand the texture of animal fat, so I may have committed a faux pas by cutting it off but I wanted to enjoy the duck meat in the way I knew I would.
the little sauce pan served as a side dish contained a white bean cassoulet (beans and shredded beef, but fancy), and foie gras. I imagine the foie gras was imported or produced ethically, as foie gras production is illegal in the UK. I loved the bean and beef cassoulet, but the texture of the foie gras was not very palatable to me.
in order to not make it sound like I didn't enjoy this course, because I very much did, I want to state in no uncertain terms that the duck was i n c r e d i b l e and also I want the white bean cassoulet served with everything else I eat from now on. just without foie gras ;)

5th course: dessert!
the pastry crumbles, the sorbet, the yuzu curd, the pudding-esque caramel-y strip of delicious goop winding beneath it all was *literally chef's kiss* I could kiss the chef for this. my massive sweet tooth wished for more but my rational, polite side knew it was the perfect little bite of sweetness after the savory dishes that preceded it.
again, 11/10 dining experience. I do not know exactly how Michelin stars are earned and maintained, but I dare say this restaurant is certainly deserving. and I want more asparagus velouté soup.

Bradshawe Building Coffee Shop 
The Unique Employment Agency was located in the Bradshawe Building in Los Angeles, which had its own coffee shop, complete with counter service, booths, and tables. The eatery was featured in several episodes. Sid Gould played the regular waiter.

Yang Sing Ching  ~ “Lucy’s Birthday” (1968)
Kim and Craig take their mother out to dinner at a Chinese restaurant. The (unseen) proprietor is named Irving. They even have matzoh ball soup on the menu. The waiters sing “Happy Birthday” to Lucy in Chinese.

Pierre’s Restaurant ~ “Lucy’s Working Daughter” (1968)
To help Kim with her new job at a dress shop, Lucy turns fashion model, crashing a luncheon sponsored by Modern Miss Boutique.

The Theme Room at LAX ~ “Lucy and the Great Airport Chase” (1969)
The Carters have lunch at Los Angeles International Airport (LAX) inThe Theme Room (later named Encounter), a circular restaurant located atop the iconic Theme Building. 
HARRY: “That was an excellent meal. Those were the best sand dabs I’ve ever had.”

The Brown Derby ~ “Lucy and Johnny Carson” (1969) 
After playing Stump the Band on “The Tonight Show” Lucy wins a dinner for two at the Brown Derby. There she runs into Johnny and Ed McMahon.  In an homage to the classic “I Love Lucy” episode also set at the Brown Derby, Lucy manages to cause a tray of drinks to be spilled on Carson.

Murphy’s Pizza Parlor ~ “Lucy and the Generation Gap” (1969)
The episode opens with Kim, Craig and their friends planning the school musical at a pizza place operated by an Irish Asian named Murphy Irving Wong (Victor Seng Yung).

Café George ~ “Lucy and Wally Cox” (1970)
Lucy agrees to meet the son of Harry’s friend, Wally, who is afraid of girls. Harry also meets his father and old friend Moose at the same restaurant.

Cafeteria ~ “Lucy Competes with Carol Burnett” (1970) 
Lucy and Carol meet at a cafeteria for lunch, where they plan to enter the Secretary Beautiful Contest representing their respective workplaces.

Café ~ “Lucy and Jack Benny’s Biography” (1970)
Lucy recreates all the women in Jack Benny’s life. In the second flashback, set in 1915, Jack is in the navy and is smitten by Zelda (Lucy), a waitress at a café.

The Red Devil ~ “Lucy and Ma Parker” (1970)
Lucy impersonates a femaile master criminal, confronting mobsters Joe Grapefruit and Muggsy at the Red Devil, which is mostly a bar, but also serves grapefruit!

Chez Moi ~ “Lucy Stops a Marriage” (1970)
At a French bistro, Lucy spies on Harry when he dines with Laura Trenton (Jayne Meadows), believing he is headed to the alter. Harry order imported champagne - imported from Fresno!

Waikiki Dining Room on the S.S. Lurline ~ “Lucy Goes Hawaiian: Part 1″ (1971)
Lucy volunteers to assist Harry as cruise director on a ship bound for Hawaii. Viv, Kim and Craig come along. Although recreated on the Paramount lot, the ship was real, as was the Waikiki Dining Room.

Country Club Restaurant ~ “Lucy’s Bonus Bounces” (1971)
Harry meets his analyst Dr. Cunningham (Parley Baer) at the Country Club for lunch. Cunningham orders an iced tea and Harry has half a cantaloupe - which he absent-mindedly pours catsup on!

Harry’s Favorite Restaurant ~ “Lucy Makes a Few Extra Dollars” (1971) 
To teach Harry a lesson, Lucy takes Harry to lunch and has Kim wait on him. She is making 40 cents an hour. Lucy orders a hamburger and iced tea. Harry’s usual is a salad - which Kim spills all over him - deliberately. She then dumps an ice cold glass of iced tea in his lap!

Chasen’s ~ “Lucy and Eva Gabor are Hospital Roomies” (1972)  
In the hospital Gabor’s assistant Walter (R.G. Brown) brings Gabor's dinner on a silver tray. He says it was prepared especially for her by Chasen's, a real-life West Hollywood restaurant frequented by entertainers. It first opened in 1936 and closed for good on April 1, 1995. Lucille Ball and Desi Arnaz were regulars and had their own private booth there. Although it is mentioned, no scenes are set there.

Schwab’s Drug Store ~ “The Case of the Reckless Wheelchair Driver” (1972)
Kim says she saw Billy Joe Jackson (Jim Bates) at Schwab's. Schwab’s Pharmacy was a drug store located on Sunset Boulevard and was a popular hangout for wannabe movie actors from the 1930s through the 1950s. Schwab’s also had a soda fountain serving ice cream and light meals. It is Hollywood legend that actress Lana Turner was discovered at Schwab’s. Schwab’s closed its doors in October 1983 and five years later was demolished. Schwab’s was mentioned on “I Love Lucy” in “Lucy Wants to Get Into Pictures” (1955).

Hotel Showroom ~ “Lucy and Donny Osmond” (1972)
Lucy’s niece Patricia (Eve Plumb) is a Donny Osmond fan. He is performing at the Hotel Showroom where he later orders a peanut butter and jelly sandwich and a glass of milk, even though the chef reccommends the escargot (snails). As a souvenir, Lucy takes the menu... and the ashtray... and the matches... and the flowers... and the vase... and the sugar cubes!

Persian Restaurant ~ “Lucy and Her Prince Charming” (1972) 
Lucy is dating a handsome man (Ricardo Montalban) who turns out to be royalty. When Harry finds out that the Prince is in love with Lucy, he'll stop at nothing to get the two married - including masquerading as a fortune teller during their date at a Persian-themed restaurant.

Villa Roma  ~ “Lucy’s Last Blind Date” (1973)
When Harry finds out his cousin Ben (Don Knotts) is rich and single, he wants Lucy to go on a blind date with him. 
BEN (to Lucy, about the menu): “I don’t know if you’ve noticed, but this is all in a foreign language.”  LUCY: “It’s Italian. You kinda have to expect that in a restaurant called the Villa Roma.”
Much of the episode also takes place at the Bradshawe Building Coffee Shop (see the first entry above).

The Proud Penguin ~ “Lucy and the Franchise Fiasco” (1973) 
The Proud Penguin is a frozen custard stand on Citrus Boulevard across the street from the Los Angeles Zoo. Lucy and Mary Jane are partners in the business, The episodes also features scenes set in the Bradshawe Building Coffee Shop and on the dining terrace of the Westland Country Club, where a dinner of a whole albacore tuna is destroyed by baby penguins!

Refreshment Stand at Los Angeles Memorial Coliseum ~ “Lucy and the Big Game” (1973)
Lucy and Harry recieve tickets to a football game between the USC 'Trojans’ and the University of Oklahoma 'Sooners’. Two visiting team fans (Cliff Norton and Al Checco) pass by singing the title song of the Rodgers and Hammerstein musical. Although the Coliseum is a real place, the gate area was recreated on a Paramount soundstage.

Restaurant ~ “Lucy and Andy Griffith” (1973) 
Lucy has coffee with Andy Johnson (Andy Griffith) to talk about his work with underprivileged youth. In the next scene, Kim and Harry meet at the same restaurant and sit in the same booth!  The red booths used in the episode were also seen in the Bradshawe Building Coffee Shop.

Dirty Jack’s Paradise Café ~ “Where is My Wandering Mother Tonight?” (1974)
While staying with Kim at her new apartment, Lucy decides to give her and her boyfriend some alone time and visits a nearby tropical-themed café where she drinks coffee and talks to the owner (Jack O’Brien). The famous red booths are back!

 Harvey’s Welcome Inn ~ “Lucy Fights the System” (1974)
To prove that a waitress Mary was let go because of her age, Kim goes undercover as a new hire. She deliberately turns the restaurant upside down to prove how capable Mary was. This is the last episode of the series. Fittingly, Harry gets a pie in the face.
