Another cauliflower steak/real steak night for Remus and me! This recipe seemed pretty straightforward, really leaning into the steak night theme, so I decided to give it a try.
I quartered this, making the chimichurri in my mini food processor. It took quite a bit of patience to get everything properly blended, but I always get out that little thing with that in mind, so not a big deal.
I obviously don’t have a barbecue, so I instead opted to make good use of the broil setting on our oven until my steak was good and charred around the edges.
To serve, I also made some super yummy potato salad for a very satisfactory meal. I will never be a true steak girl, but I do love all the sides and the sauces and the wine that steak calls for, and I’m thankful to cauliflower for being versatile enough for me to lean into that culture.

Remus wanted another steak night, so I took to Pinterest to find a new cauliflower steak recipe, as I’ve pretty much exhausted most of those I have saved and wanted to try something new. I liked that this recipe included roasted chickpeas for some extra protein, and the caramelized shallots absolutely sounded like something I needed to try.
I quartered the steak part and halved the caramelized shallots and the herby tahini dressing. My original cauliflower head was quite small, which meant my steaks were also quite small, but I was fine with that. I’m only just now realizing that I completely forgot about the pistachios here, which is rather disappointing, as I’m sure that would have put this already delicious combination of flavors and textures over the top.
My cauliflower and chickpeas roasted beneath Remus’s potatoes in our oven, so I was a bit worried that they wouldn’t get the browning I really wanted them to. But I needn’t have fret, as both sides colored beautifully after only a couple of extra minutes in the oven.
The caramelized shallots and garlic also got the most beautiful color and a fantastic crunch; they really do transform this recipe into a truly gourmet meal. I think I perhaps went a little too heavy with the chili flakes here, but other than that, they were simply divine. So glad I let them rest on a paper towel after frying so that they retained their crisp while we were finishing up everything else.
The sauce was also fantastic, and seriously the perfect accompaniment here; the final combination of the roasted cauliflower with the crispy chickpeas, shallots, and garlic, and the richness of the tahini sauce really made for a truly wonderful new meal. This is definitely my new favorite cauliflower steak recipe, especially after a string of serious disappointments, and definitely one I will be prioritizing again before this cauliflower season is over.
