The grilled whole eggplants are dipped in an egg mixture and pan-fried to create this traditional Filipino omelette. The simplest ingredients—egg, salt, pepper, and eggplant—can produce great flavors. This dish is usually served by my father for breakfast on the weekends. One of the numerous foods my father prepares that I love.

This roasted carrot ginger soup is another one of the soups I’m relying on a lot for the rest of autumn into winter, and I made some little pork meatballs to go into them to make it a little more substantive. It’s a very comforting soup, and the addition of the meatballs makes it a more complete meal, especially for a lunch. I might do a little recipe rehash on the blog in a few weeks to gear up for soup season, because I’m really feeling all the soups right now.
