Types of Golgappa- The Most Popular Street Food oF India
Are you a pucchka lover? Then you might wanna know the types of pucchka's you will find on street. There are various names such as golgappas, puchkas, panipuri, batashe etc.
Pani puri is a much loved street food that everyone has developed recipes revolving around their taste buds. Some like boiled potates and chickpeas while some add hot matra curry. Let's have a look at the different types of golgappas around the country, what are they called, different ingredients used to make them and who invented the scared golgappas.
The Three Musketeers of Golgappas
The Shell The puri or the basic shell of the golgappas are usually made with atta (flour) or suji (semolina). Suji based puris are popular in the Northern states of the country while as we move towards the East, the atta based golgappas are preferred. The shells made with atta are thinner and mostly bigger while the suji shall are thicker and denser.
The Stuffing While some add boiled chickpeas and boiled potatoes, some add a warm white peas curry (matra). Different parts of the country have different preferences.
The Water “Teekha? Meetha? Ki Dono?” – All Golgappa wala bhaiyas
Such profound words. Most Indian golgappa stalls serve them with a spicy and minty jaljeera pani and a khatta-meetha (sweet and tangy) tamarind water.
Six Different Types Of Golgappa in India
1) Golgappe Most North Indian states like Punjab, Jammu & Kashmir and New Delhi use the term Golgappe or Golgappa for this loved Indian snack. The puri used is usually made suji (semolina) but at some stalls, you can find the atta version too.
The golgappas are stuffed with boiled chickpeas, boiled potatoes and a sweet tamarind sauce (saunth chutney). Then the golgappas are carefully dunked in a big vat of spicy and minty water. Filled to the brim and served in a donna (disposable Indian bowl used for chaats). POP and transfer to heaven!
2) Puchkas Puchkas or Fuchkas as they are popularly known in West Bengal and parts of Bihar and Jharkhand. The shell is usually made with atta and they are stuffed with boiled chickpeas and mashed potatoes. The main component is the chickpeas, the potatoes are a little diminished.
The potato-chickpea mix is spiked with gondhoraj lime juice and tangy tamarind water. In some parts of Kolkata, some puchka vendors add mashed bananas too.
3) Pani Puri Pani Puri is all things holy in Maharastra and Gujarat. Instead of the classic mashed potatoes and chickpeas mix, they are stuffed with a white peas mixture (matra). Unlike most versions of the famous golgappas, the mixture is added when warm. The water added is tangy and spicy.
4) Pani Ke Batashe Golgappas are called Pani ke batashe in parts of Uttar Pradesh. My friends from Kanpur and Lucknow say the taste is unparalleled and what we eat in Delhi is all things wrong.
These pani ke batashe are stuffed with boiled white peas and potatoes and served with sweet and sour water. In some parts of UP, these batashaas are served with five different types of water, also called as ‘Paanch swaad ke batashe’.
5) Gup Chup Golgappe/Pani Puri are called Gup Chup in parts of Odisha and Hyderabad. As funny as the name sounds, they are called Gup Chup because of the sound they make when they burst into the mouth. The puris are made with whole wheat flour, refined flour, and semolina.
The filling consists of the regular boiled potatoes with green chilies and onions.
6) Phulki Don’t confuse them with phulkas (chapatis). Golgappas are called Phulkis in Madhya Pradesh and parts of Uttar Pradesh. Phulkis are the same as golgappas, only the name is different.
In some parts of the country, golgappas are served with a curd and chutney stuffing called ‘dahi ke batashe’ or ‘dahi puri’ which some would say is equally gratifying. They are topped with crunchy sev, coriander leaves, and pomegranate.

It is late in 2019. Youre standing on the roadside. Eating panipuri, the pani dripping down your chin and on your shirt. The stall wala is handing out panipuris faster than you can eat, you tell him "thoda rukko bhaiya". You keep wiping your nose with your sleeve. Your tongue is one fire, no matter how much imli ki chatni you put in there it's still s o teekha. Your sibling is standing beside you, both of your's tongues are near dead ; you communicate in gestures. You get a bottle of cold, cold mineral water and you gulp it down so fast your stomach hearts. Your sibling looks at you, you smile at each other. They go "bhaiya ek sookhi puri" and you steal theirs after eating yours. They pay in loose coins, and crumpled notes dug out from their pockets. Your sibling laughs as they see your drenched sleeves. It's cold, colder yet with those so you roll them back. You can't stop smiling tonight. It's late in 2019. And everything's okay.

Ingredients
cups Corriander Leaves 1/2 cups Mint leaves 4 Green chilly (pcs) 1 Ginger (1 inch) Salt  (as per taste) 4 Garlic (cloves) 1/3 tbsp Heeng 3/4 tbsp Aamchur Powder 1/4 tbsp Dry black pepper powder tbsp Roasted Cumin /Jeera powder 1/2 tbsp Chaat masala powder 2  Lemon (pcs)
Instructions
Step 1 Preparation: Roughly chop coriander leaves, mint leaves, green chilly, ginger pieces and garlic cloves. To make a paste of these ingredients, take a grinder and add these chopped ingredients in grinder jar. Add 3/4 tbsp salt(as per taste), pour 1/2 cup water(for easy grinding), 1/2 tbsp sabut jeera and 1/2 tbsp heeng then prepare a fine paste.
Step 2 Take our prepared paste from grinder jar into a big bowl and pour 1.5 litre of water in it you can adjust consistency followed by 3/4 tbsp aamchur powder, 1/4 tbsp black pepper powder, 1 tbsp roasted jeera powder, 1/2 tbsp chaat masala, 2 full spoon of lemon juice and mix well .
Step 3 Serving: Galgappa ka teekha pani is ready, you can add icecubes in it as it is served chilled. Enjoy this mouth drooling, teekha masaledaa, panipuri ka paani.

Golgappa/panipuri/puchka recipe | How to make street style golgappa
The craving for Golgappa is so real and unpredictable, right? So, why not make them at home and munch them whenever you like? Therefore, my today’s special recipe is all about how to make Atta Golgappa and it's tikha pani at home! You better note it down, okay?
Crisp, crunchy and an absolutely delicious pop up for the taste buds, Golgappa is a street food loved by one and all. Fill them with any flavoured water or tamarind chutney sweet chutney, tikha pudina Pani they create a party on your palate.
Moreover, you can also make dahi Puri from it. However, when we eat the ones made by the stalls, there’s always a concern about the hygiene. Hence, I tried this Golgappa Recipe at home and can very proudly say that they turned out just like the ones sold in market.
So without any further talks let's start the recipe of Pani Puri or Golgappa.
Ingredients For atta golgappa puris (puchka puri):
1 cup Whole wheat flour (atta)
1 cup Semolina (Sooji/Rava)
Water for kneading dough
Oil for deep frying
For The Teekha Phudina Paani
1 1/4 cups mint leaves (pudina)
1/2 cup chopped coriander (dhaniya)
2 tbsp lemon juice (nimbu ka ras)
1 tbsp roughly chopped green chillies (hari mirch)
1/2 tbsp roughly chopped Ginger (adrak)
2 whole black peppercorns (kali mirch)
1 tsp black salt (Kala namak)
1 1/2 tsp cumin seeds (jeera) powder
Salt to taste
Instructions to make golgappa puri:
1.In a bowl, mix whole wheat flour and semolina.  Add little water at a time and knead it to form a dough. Dough should neither be too hard/thick nor too soft/thin or sticky. It should have medium.
2.Cover the dough with a damp muslin cloth or tea towel, keep it aside for 30 mins.
3.After 30 mins, divide the dough into 6 equal sized uniform balls.
4.Place the ball(one at a time) on a lightly floured surface. Roll out each ball into very thin circles uniformly. The thickness of each circle should not be more than 1.5 mm
5.With a help of a sharp steel glass or bowl having a diameter of 4 to 5cms cut out discs from the rolled circles.
6.Heat enough oil in a heavy bottom and deep kadhai till hot.
7.Once the oil is very hot, reduce the flame to medium and maintain it throughout. At this stage oil should be very hot.
8.Slowly and gently slide the discs into the oil and with the help of the back of a ladle slightly press it.  This will make the puris to puff up.
9.Flip and fry till golden brown and crisp. (Do not fry too much or it will turn too dark)
10.Take the puris out and place them on absorbent paper.
11.Repeat the same for all the balls
For the teekha pudina pani
1.Combine all the ingredients in a deep bowl and blend in a mixer to a fine paste using ¼ cup water.
2.Combine the prepared paste and 3 cups of chilled water in a large bowl and mix well.
3.Your teekha pudina pani is ready to serve.
TIPS FOR MAKING PURI FOR GOLGAPPA OR PANI PURI OR PUCHKA
1.Always cover the dough with a damp cloth even while rolling the puris. If the dough becomes dry, you will not be able to roll the dough easily.
2.Ensure that all the rolled puris are covered with a damp cloth. If the puris become dry, then the puris will not puff up.
3.The above tips comes from experience. Just before frying remove the damp cloth.
4.You could fry 4 to 7 puris at a time.
5.Do not add oil to the dough while kneading as the puris will become soft later.
6.The dough has to semi soft with gluten strands formed in them. There has to be elasticity in the dough. These factors give a crisp pani puri. The crispness stays even after the pooris are cooled and even later.
7.Maida or refined/all purpose flour is used for binding the dough. Avoid adding more maida to the dough. If the dough is not binding well, then you could add a few teaspoons more of maida. But don’t add too much.
8.The puris have to be thin. If you do not roll them thinly, then the puris won’t puff up well and will remain soft from within.
9.Fry the puris in a moderately hot oil. If the oil is not hot enough, the puris will absorb oil and become soaked in oil. Too hot oil, will burn the puris.
