Last semester I set myself up for some ridiculously high expectations. Because of this, I burnt out real quick both physically and mentally. I remember being nervous yet exited about starting the fall semester because I wanted to challenge myself and be the girl who could do it all. I wanted to amaze everyone and myself by being able to juggle work, volunteering/getting involved, cooking more, working out consistently and starting up a blog all while balancing demanding classes such as organic chemistry (and lab), nutrition physiology, microbiology (and lab) and accounting. This meant I planned EVERY single part of each day out from dawn till dusk. I would wake up at 5:30 am every morning, workout and live to a planned hour by hour until I would go to bed around 10.  I scheduled how many hours I would study each day, when I would work, volunteer, workout, how long it took to commute to a from class and even when I was supposed to eat. 
This all lasted about ONE week before I had completely burnt myself out. I didn't only burn myself out because this was a lot to handle for one person but also because I was emotionally burnt out. I found myself not sticking to my strict schedule more and more each day and this upset me so much because I was trying so hard to do everything I could to accomplish my goals but it turned out my strict schedule was doing more harm than good. It wasn't allowing me any flexibility and little freedom, which in turn made me even more unhappy and resulted in me cutting corners in my daily plans. When it all became too much for me to handle, I completely gave up the “perfect plan” I thought I had.
 I went through the rest of the semester with no real direction or routine. I didn’t end up doing any of the things I wanted to do such as volunteering, cooking more or working out. I felt like a failure because I couldn’t handle it all so I didn’t bother trying to try different ways to make everything I wanted to do work out. 
moral of the story- you can’t be great at EVERYTHING but you can be amazing at a select few things you are passionate and motivated about! As busy students and people in general, it’s easy to feel like you have to accomplish so many things to be successful but in reality, there has to be time for leisure and relaxation. It’s also important to know how much is “too much” for you to handle when it comes to taking on tasks. Everyone is different, so don’t feel like you have to take on as much as someone else or drown yourself in work just because you feel like you have to. Do what you feel comfortable with and what your primary responsibilities can allow!
I now have a better idea of what I can and can’t handle and am so excited to start off this brand new year + semester and better manage my time without killing myself over taking on any activity that I can. I am also taking less classes this semester (thank goodness!) so classes and studying won’t eat up AS much of my time as it did last semester (aka the semester from HELL.)  I plan to have a do-able schedule that allows for class/studying, working out a couple times a week, volunteering in research, working for Favor (a food delivery service that allows me to make my own schedule for those of you that don’t know.) and of course, time spent with friends and family!

It’s been a very busy week. I had my biochemistry exam on Monday, Valentine’s day was spent with my BF so I wasn’t too productive that day, and I had a huge time consuming project to work on that had to be 95% done by today (for peer edits.) I also had my biochem lab quiz and lab itself to prepare for and I started seeing a personal trainer as well! So it’s been a busy, stressful week, but also an exciting and pleasant week. I haven’t been sleeping well at all so this weekend I will get back on track with sleep so that I can be prepared and well rested for next week! 
I have my Production and Management exam on Monday and need to catch up on rewriting notes for my Nutrition Assessment class.
Slowing trying to get out of the funk I’ve been in lately! I’m making more and more progress each day to be more productive and motivated.

So this food is ugly. It’s not pretty (except that all food is beautiful). But it’s cheap. It’s healthy. It tastes good. And I’m broke-ass college student. That store-bought ramen that costs $0.20 a packet is pretty horrible for you, if you didn’t know. I mean, sure, it’s cheap and it tastes good, don’t get me wrong. But I know you can’t eat ramen forever. So maybe you move onto canned ravioli. I grew up on that stuff, absolutely love it. But it’s really not great for you either.
So I’m from New Mexico. I’m used to eating beans and chile and all of my favorite New Mexican cuisine items. I could definitely understand this dish not appealing to everyone. But the great thing about it is you can eat it as a snack (either in a bowl, or it goes pretty well in a tortilla), you can eat a large portion with some rice (that’s typically what I eat after a workout), or it can be a side dish. You don’t have to serve it with avocado (but why wouldn’t you want to?), and you could serve it with cheese (YASSSSSS). Vegans, vegetarians, omnivores that eat beans, it’s good for all of us. Best of us, it’s stupid easy to make. You have to soak the beans. Pretty much all beans and grains need to be soaked because they have phytic acid in them, and the water helps pull that out. Phytic acid can bind minerals and make it impossible to absorb them. It’s not as big of an issue for omnivores who don’t consume as much phytic acid and consume more minerals, but if you’re a vegetarian or vegan, it’s pretty important. Or if you’re like me, and you’re a flexitarian, but you eat beans and rice every single day.
When I soak them, I cover them by a good three inches and I throw in 2-3 tablespoons of salt. Let’s get one thing out of the way there: I’ve never had my beans get tough due to the salt. What I’ve found makes tough beans is salt + acid. So don’t throw any tomatoes in when you’re cooking them. The salt will make them taste good. Then after soaking them for 12-24 hours, you can discard the phytate-ridden salt water, and the beans are ready to cook. As far as cooking the beans is concerned, I just use a slow cooker. Throw the pre-soaked beans in there with enough water to cover the beans by about an inch, and throw that sucked on low. It probably takes about 8-10 hours, depending on how much you’re cooking. I typically throw them in before bed and they end up cooking for 12-14 hours by the time I get to them. They’re pretty mushy, not too too horrible, but if you like your beans a little firmer, check them at 8 hours.
When the time comes and you feel the beans are done, I throw in ½ cup of red chile powder (I’m using Bueno’s X-Hot powder, it provides good heat for me), 2 tablespoons of ground cumin, and probably a tablespoon of salt. I let it hang out on the warm setting for 20-30 minutes, make sure the seasoning are mixed in well, and I top with some avocado for more fiber and tasty fats. Seriously, y’all, it’s a great snack, and I never feel horrible after eating some. Protein, fiber, the avocado with some fat, it’ll keep you going day after day.

This picture is so great. There is an interesting dichotomy in my nutrition classes. You have the nutrition majors who are very airy and talk about how you should be eating whole foods and not eating things that you can’t pronounce, and then you have the nutrition majors like me. Nutrition is a science, folks. It’s not always as cut and dry as physics or something, there are simply too many variables for that. But at the end of the day, it’s biochemistry.
Cause yeah, you better watch out for that 3-methylbutyraldehyde. A chemical in blueberries that affects the flavor. Meanwhile, easily pronounced words like, “lead” and “mercury” are in your water and fish and might actually be killing you. Obviously, there is healthy eating and unhealthy eating, but it’s not so simple as pronouncing words correctly. There are plenty of words I can’t pronounce at Indian restaurants and I still love eating there.
