I really need to get on the ball.
I have to fight through this slump.
I gained weight to where I'm back in a higher pants size. I can tell I've gained weight.
I have been drinking a protein shake for lunch, but at my 1:30 break so it holds me over longer.
Today, I had a protein drink and, for dinner, a salad and a yogurt parfait. The salad was high because of the nuts.

Technically, the salad I got had almonds instead of pecans, but I'm sure it is similar in calories. I did get it at publix though.
I bought a salad bag there to try. The ones I got from ingles and whole foods have the consistency of cole slaw. This one I bought today had actual lettuce with it.
I'll give it a try this week. I really like salads. 🥗😌♥️
Here's to more healthy eating and hopefully going back to a size 10 soon.
AND hopefully be a size 8 by October 🤞

Bahamian Baked Grouper This recipe is great for grouper fillets, but you can also use it with tilapia. It's both healthy and flavorful! You don't have to love fish to love this dish. Both soundtracks have cute, playful, and/or peaceful music that I recommend everyone listen to! Especially if you’re looking for something light-hearted to relax to. We stan a king who has good taste in music.]

Any qualifications you want to get? I want to know about human beings. (I find it useful to know what’s in encyclopedias.) [I think Baron’s referring to wanting to be familiar with how the human body works, therefore reading medical texts to expand his knowledge. We stan a smart king.]
A small success? Eating my long chicken burger set!

Crush’s “Sometimes” [Took some liberties with this translation, this question literally translates into “what is your karaoke number 18” which makes sense in Korean but not in English. $5 Family Meals: Egg Roll Bowls
Ever since the wedding, my husband and I have been on a budget. The biggest thing we’ve done to try and save money is limit the amount of time we spend eating out. This hasn’t been a huge sacrifice because we both enjoy cooking, and we were gifted a lot of small kitchen appliances for our wedding. 
My favorite has been our Instant Pot. It allows me to make full meals, in one pot, in a short amount of time. A true one pot dish. Saving us time, money and dishes. Today we decided to try our Egg Roll inspired bowls, as we move towards making healthier food choices.

Egg Roll in a Bowl
This Weight Watchers Instant Pot Egg Roll in a Bowl recipe is only 1 Freestyle point! I've also added 21 Day Fix container counts to this easy, healthy, flavorful recipe. 
Prep Time10 minutes 
Cook Time10 minutes 
Total Time20 minutes 
Servings: 4
Calories 201 cal 
Ingredients:
2 tsp toasted sesame oil
1 onion chopped
1/4 cup chicken broth fat-free, low-sodium
1-2 cloves garlic minced 
1 lb lean ground turkey
1/4 cup lower sodium soy sauce
1 1/4 teaspoons ground ginger
1 package Cole slaw Mix (just the veggies)
salt & pepper to taste
Instructions:
Turn IP on Saute
Add sesame oil and onion, saute until onion is just tender, about 3 minutes.
Add garlic and stir for 30 seconds.
Add ground turkey and using a spoon, break up as it browns (note, you do not need to brown it all the way, just mostly).
Turn the IP off & add soy sauce, ginger, chicken broth, and half of the cole slaw package. 
Stir well to combine.
Place the lid on the Instant Pot with the valve in Sealed position.
Use manual high pressure for 2 minutes.
When finished cooking, use quick release. Add remaining cole slaw and stir well. 
Enjoy!
I added 1/2 cup of cooked brown rice to my bowls, because my Husband enjoys the extra carbs, but it is totally optional. I throughly enjoyed these bowls without the added brown rice. The point counts, and nutrition information below is for the recipe without brown rice. 
Weight Watchers Points: 1 serving (about 2 cups) is 1 Weight Watchers Freestyle Point.

Healthy Cole Slaw

I was fighting for a coleslaw recipe that would be a lot healthier than it’s mayo-soaked counterpart. My first attempt at this recipe went a little south. I over doctored it, and it was a HUGE pain to make. I’ve simplified it down to something that can be made in a few minutes.
It’s made with plain Greek yogurt and dijon mustard -- so it has plenty of flavor and punch! And if you use pre-made broccoli slaw, it’s an easy recipe.
Ease to Make: 5 of 5 You could shred your own veggies for this, but honestly -- I think it’s a lot of trouble when you can get a bag pre-shredded at the store. You won’t need the whole bag for this recipe, but I use broccoli slaw for everything. It’s just a matter of mix and serve (save the onions, which will need to be chopped!)
Ease to Transport: 5 of 5 This side salad will be great with any sort of dish. It’s the kind of thing that will sit well in some tupperware in your cooler, and mature nicely. The recipe below makes two servings, but can be easily sized up for a bigger group.
Ease of Cleanup at Game: 5 of 5 You don’t have to worry too much about cleaning the tupperware on site (though sealing it at game will make sure it’s a bit easier to clean when you get home). Dried Greek yogurt just flakes off of dishes, so it’s much easier to clean than most higher fat sauces.
Taste: 5 of 5 This one was the round two recipe. I messed it up the first time (and I wasn’t crazy about the prep-work needed for it). The first go I found that it needed a little more mustard -- but I would say at most it needs a heaping tablespoon. Any more than that, and it throws off the flavor. Keep the spices simple for this dish, just some salt and pepper. If you like raisins, a second box wouldn’t be amiss.
Healthiness: 5 of 5 As there’s no mayo in this dish, it’s basically all veggies and protein, and a little bit of dried fruit! It doesn’t really get much healthier than that. The Greek yogurt and mustard still makes it a tasty, and satisfying coleslaw!

Ingredients: (Makes 2 servings) 8 ounces bagged broccoli slaw 1/4 cup chopped red onion 1 box raisins (the 100 calorie size) 1/2 cup plain Greek yogurt 1 tbsp dijon mustard 1/2 tbsp lemon juice 1/2 tbsp apple cider vinegar (if needed for the sauce, taste it first.) salt and pepper to taste
Directions This is a simple mix and stir recipe. Toss everything into a bowl and give it a good stir. I didn’t even bother to mix the sauce first or anything.
Notes: The apple cider vinegar is totally optional, but I found that there was an upper limit to how good the lemon juice tasted. If you want the sauce a little runnier, then I recommend switching to apple cider vinegar once you’ve gotten to about a half a tablespoon of lemon juice.
I think a second box of raisins in this dish would be good. The parent recipe called for the raisins to be soaked, and I found that posed absolutely no benefit to the taste or texture of the raisins or the dish. In fact, I liked the raisins soaking in the liquids of the sauce instead of just plain old water.
I did actually go to all the trouble of shredding my own veggies for the first try of this recipe. Though I liked having the broccoli florets in the dish, I don’t think it’s worth the trouble (to be frank). Maybe if you do have one of those spiral cutters in the home, it might be alright -- but I live in the Alton Brown theory of not having too many gadgets that only do one thing.
For my money, the ease of making this dish off bagged broccoli slaw can’t be overstated. And the Greek yogurt gives it a nice kick of protein, so it’s got extra health benefits!

Four Years Down the Road: Food Edition - Sandie Luo
Besides keeping an apartment tidy, I think that feeding yourself is one of the biggest challenges in college. While I absolutely would recommend meal prepping to both save time and put together healthy meals for yourself, if you find yourself in a busy week or meeting up with friends, here are some of my favorite menu items from places to eat (in no particular order), all within walking distance of campus!
Amazebowl (Amazebowls) – I always order the classic menu item, the Amazebowl. I usually get this as a snack, but I thought it deserved a shout-out nonetheless because they have top-tier acai bowls! The Amazebowl has an acai base and is topped with granola, bananas, blueberries, strawberries, and coconut flakes. The Amazebowls truck can be found at the corner of Jefferson and Hoover on the fountain side.
CAVA – a Chipotle-style Mediterranean chain, hence the reason why there’s no specific menu recommendation. It’s on the pricier side, but I find that the grain bowls often feed me for two meals, which turns into a steal! Keep in mind that the lines can get long around each meal time, though.
The Loaded Hash (Jacks N Joe) – a delightful brunch place near the intersection of Adams and Figueroa. Out of all the options listed, this is the slowest because it’s a sit-down place, and it can get packed on weekends (around a 45-minute wait time). If you can make the trek on a weekday morning, the wait times are way shorter and the restaurant is emptier! I’m a big fan of their secret menu item, the Loaded Hash. It comes with sausages, bacon, eggs, green onions, chipotle mayo, and cheese on hash browns with toast. The portion size is huge, and I always struggle to finish it.
Chicken Tantuni Bowl (Halaloglu) – This Turkish restaurant has great Tantuni bowls that come with tomatoes, onions, rice, hot sauce, and a white sauce. This is also on the pricier side, but after the Loaded Hash, I would say it’s the most filling on the list!
The Honeybird (Honeybird) – Honeybird is a fried chicken shop, and the Honeybird is its chicken sandwich. Honeybird elevates its fried chicken so that the batter is lighter, which I love! The Honeybird sandwich comes with pimento cheese, tomato, cider slaw, and pickled chilies on a Brioche bun.
Salmon Bowl (Law School Café) – their salmon bowls come with sriracha mayo, teriyaki glaze, and avocado on rice. Out of all the options listed, this is the fastest, and relative to this list this bowl is medium filling.
Panini #2 (Seeds) – I’m a huge fan of their paninis – #2 (with chicken breast, cheese, tomato, pesto, mayo, and garlic aioli on focaccia) is my go-to, but I also get #1 (pastrami, cole slaw, cheese on marbled rye) when I’m feeling something heavier. Fair warning – panini #2 is good, but on par with The Bird from Honeybird in terms of not being very filling, so it’s probably best for a late lunch that doesn’t need to hold you over for too long.
