Kale Citrus Guacamole by plant based cooking
INGREDIENTS:
4 large avocados, peeled and lightly smashed
1/2 cup kale, steamed and chopped
1/8 cup cilantro chopped
1/8 cup green onions chopped
1/3 cup grapefruit segments, roughly chopped
1/3 cup orange segments, roughly chopped
1/2 tsp salt
INSTRUCTIONS:
Remove stems from kale and steam leaves until tender, approximately 5 minutes. Let cool and then finely mince. Set aside.
In a large bowl, lightly smash the avocado.
Mix in minced kale, cilantro, onions, citrus and salt until well blended.
Serve with pita chips or baked tortilla chips and enjoy!

MUSTARD-CRUSTED TOFU WITH KALE AND SWEET POTATO by anita sharp
INGREDIENTS
1 14-ounce package firm tofu (opt for organic non-gmo or make your own)
½ cup whole grain Dijon mustard
4 tablespoons vegetable oil, divided
½ medium onion, sliced
1 tablespoon minced peeled fresh ginger
1 bunch kale, stem cut from each leaf, leaves thinly sliced crosswise (about 8 cups)
1 small red-skinned sweet potato (yam; about 8 ounces), peeled, halved lengthwise, thinly sliced crosswise
2 tablespoons fresh lime juice
INSTRUCTIONS
Cut tofu into eight ½-inch-thick slices. Arrange on paper towels; drain 10 minutes. Spread both sides of each slice with mustard.
Heat 2 tablespoons oil in large nonstick skillet over medium-high heat. Add onion and ginger; sauté 1 minute. Add kale, sweet potato, and lime juice. Cover, reduce heat to low, and cook until potato is tender and kale is wilted, about 12 minutes.
Meanwhile, heat remaining 2 tablespoons oil in another large nonstick skillet over medium heat. Add tofu; cover and cook until heated through and crisp, about 2 minutes per side (some mustard seeds may fall off tofu).
Arrange kale and sweet potato mixture on plate. Overlap tofu slices atop vegetables and serve.

I can’t believe that even in times like these kindness becomes a pride. My version of being kindness lost the real meaning. But I want to truly believe in people, in their good intentions. I really want to understand their behaviour against themselves but my #priorities are bit important than that right now. I do whatever my #cancer let me for. If I feel good I want to spent time with those who need me, who always simply are, I want to also do stuff I really enjoy and love to do. If my day doesn’t look like that I am #quite and need #properrecovery but it doesn’t mean I let me children and closest members down. I am trying the best. As much my body needs #endorphins as often I want to be #active Please do not tell me what I should or not. Please do not tell me what I could or not. Please do not place a visit without prior permission. Yes I do look mostly well on the photos but have u ever wonder how bad days look? I will explain you: diarrhoea and vomiting are mostly caused by chemo - medication as much as loosing appetite, moving gums, headaches, hair loss, sore mouth, infections, bruising, bleeding, skin and nail changes plus so many connected to #autoimmunediseases Fatigue Joint pain and swelling Skin problems Abdominal pain and digestive issues Stiffened hands Swollen glands and even more: nose scabs, sensitivity to light, barley on the eyelids, irritable bowel syndrome, back pain, lack of appetite and weight gain, fatigue, insomnia! And guest what? I do deal with those daily, very often with all of them in a very same day, in a very same hour.
