For the Love of Food

So where does my love of food come from? I firmly believe that my passion for all things food related and my willingness to try almost anything stems from my childhood and my family upbringing. My much loved Nan and Grandad must take most of the credit as from a very early age I was introduced to a wide variety of home-grown and home-cooked foods. My Grandad was an avid gardener growing a whole manner of fruit and vegetables in his garden. He showed me the delights of growing runner beans, cabbage and cauliflower along with a whole range of soft fruit ranging from English plums to gooseberries. My Nan like my Grandad was old school so everything in the kitchen was made from scratch using what was grown in the garden. I can still remember watching her cook and learning how to make pastry and cakes from basic ingredients.

Some of my fondest memories as a child are of the big family meals we had at their house at 218, London Road Waterlooville (sadly now demolished). At various times during the school holidays my cousins, uncles and aunties would all come to stay. This would be a big event for me as we would have fantastic traditional roast dinners with all the trimmings and yes if you didn’t eat your vegetables you most definitely wouldn’t get any dessert! To be honest I wasn’t a fussy eater even as a kid. As I recall it was only Brussels sprouts and Stilton cheese that I could have quite happily avoided throughout those formative years. The only real problem I had at these family meals was whether I could finish my meal and get to that last roast potato before my cousin Glen, who despite being younger than me could always match me for appetite. My much missed Mum carried on the tradition set by her parents and although home-cooking has changed a lot over the years she has always instilled the same values in me to experiment and try everything at least once.

My Mum worked as a waitress in a local café called The Black Cat Café. I can remember going to work with her on one occasion and being allowed to watch what went on in the kitchen. My clearest memory here is one of the veg prep guys giving me a raw carrot to try. I had always eaten carrots from my Grandad’s garden but cannot recall eating them raw so this was a new experience. Even now I can still taste that distinct flavour which was somewhat of an epiphany moment for me. Like eating your first oyster or you first taste of true caviar this was a profound moment for me.

Another early food memory is also somewhat unusual. My Nan and Grandad lived in a big house next to a petrol station. The station had one of the first vending machines I can remember on the forecourt next to where the air and water could be found. This particular vending machine dispensed milk shake. My particular favourite was a raspberry milk shake which became a firm favourite with me so much so that if ever I had any money this would be my first purchase. The petrol station is still there but the machine has long gone but the taste of this milk shake still lingers in my senses. Every so often if I taste very fresh raspberries I get transported back in time to this very happy period in my life.

Food always seems to give me happy memories so it is probably no surprise that I followed my nose 9and stomach) into the industry. I began my adventure by training as a Chef at Highbury College in Cosham. At the time I started there I was a fresh faced sixteen year old. The catering facility at Highbury was only a year old and at the time regarded as one of the best places to learn the trade in the UK. I studied there for three years from 1981 to 1984 and was as proud as anything to emerge with my Diploma in Professional Cookery. If my family gave me my love of food then the lecturers and college definitely fed my addiction. It was one of the happiest times of my life and I am forever grateful to all my lecturers and fellow students who taught me so much that stood me in good stead for later life. I would heartily recommend to anyone thinking of studying catering to go ahead and do it. Even if you never cook professionally after you leave, the skills you learn there will be with you for life.

I can still remember my first day at college as one of the new influx of PCD (Professional Cookery Diploma) students. We were all resplendent in a blizzard of spotless white jackets and blue checked trousers, wearing our new uniforms with pride for the very first time. Our aprons were trailing down to the floor and our starched hats were pointing proudly to the ceiling, we really must have been quite a sight. Over the years our aprons shortened until eventually they were folded into nothing more than miniskirts that just about covered our crutches; while the starched Mohawk-like hats were replaced by neat uniform disposable paper ones. We had finally come of age and were ready to launch our talents onto an unsuspecting world. Looking back it was hard work and frightening at times but honestly worth every second and an experience I would do all over again if I had the chance. It was the days before politically correctness had reared its head so it was a harsh environment for a young teenager.

Saying that the harshness was nothing to what I found when working in a professional kitchen. For a short while I was able to work as a Commis in The Café Royal, Claridge's, Langans Brasserie and Simpson's in the Strand. Working as a Chef in London was fresh, exciting and frightening. Working as a Commis you were on of the lowest ranked employees only one up from the pot wash. You were treated with disdain and generally verbally and sometimes physically abused. Nowadays this sounds horrific but it was pretty standard at the time in the industry. London tended to amplify this somewhat but wherever you worked in the UK it was pretty much the same. This harsh treatment either broke you or made you stronger. The restaurant trade has always been pretty transient so to survive you had to be strong. As a Commis you had to prove yourself before you were let anywhere near a stove. Although I was a qualified chef I spent 6 months peeling and turning potatoes, turning mushrooms and preparing the mise en place ready for service. I can remember many occasions when my julienne of carrot or my bruinoise of vegetables was unceremoniously thrown in the bin because it was not perfect. Through sheer persistence I managed to survive and once I gained the trust of the brigade I was able to watch and learn from the more senior Chefs. As time went on I was allowed to do more and more in the kitchen until I was welcomed as one of the team. I still have very fond memories of the loud punk music played prior to service and the sense of belonging I felt as part of the team. Outside of work we played hard and in London this could be very hard but I had a lot of fun and learnt a great deal.

My experience in London was for a relatively short time but it is an experience that has left its mark on me both personally and professionally. To this day I have a strange affinity with London and simply love the old school restaurants there. My career took me back down to the South Coast and away to sea working front of house for a change before ending up as a Food Buyer procuring high end products for the cruise industry. I have never forgotten my roots and although my time in the front line was brief I still regard it as one of the best experiences of my life. I am indebted to my college lecturers who got me the placements and hopefully I have paid my dues to the industry.

At home I still cook every day and still get that same sense of enjoyment I felt at 16. I genuinely love food and will try just about anything if I feel it is something that I might enjoy. I am frequently asked what is the best meal I have ever eaten. I have been lucky enough after nearly 40 years in the industry to have eaten in a lot of top restaurants and to have had the opportunity to try a myriad of dishes across the world. I have tried many unusual dishes and as a Food Buyer had the opportunity to taste many new and innovative ingredients before they reach the trade.

It therefore can come of something of a surprise when I reveal my favourite meal is not only very simple but from a most unusual food outlet. The location was Hong Kong International Airport around 2005 in restaurant which if my memory serves me correct was situated upstairs on Level 8 of the main concourse above the various check in desks. The restaurant itself is very simple, quite large but very unassuming. It was early morning and I was catching a flight back to the UK. I was not particularly hungry so I was just looking for something light before my flight was ready to board.

I opted to go for a simple Prawn Foo Yung. The picture above is exactly what was presented to me. You cannot see it on the picture as the colours are pretty subdued but the scrambled egg was almost orange in colour. To this day it is the freshest egg I have ever eaten. For such a simple dish the flavours were exceptional and taught me that to have a great dish sometimes simplicity is really the best. As long as you use good quality ingredients less really is more. Sometimes the most complex recipes containing multiple ingredients are no better than a single ingredient prepared well.

Life can quite easily be compared to food Choose your friends and your ingredients carefully and you will find that good friends and good ingredients can give you much happiness. As a Chef I can give you no better advice than love your life and love your food.

You coughed harshly, your hand flying to your chest. Tony immediately rushed to your side and rubbed your back, his other hand holding a glass of water. You panted as you leaned on the pillows in a semi-sat, semi-lying position. Your beloved black cat didn’t waste time to jump on the bed and nestle next to you. Tony took a handkerchief and wiped the blood trail that had coated your lips and chin before folding it and wiping the sweat that has gathered on your forehead before bringing the glass close to your lips and helping you take a sip.

Things had been like this for a few weeks now. The injuries that you had acquired were a serious damage to your body, especially the acid torture. The poison Enzo had filled you with was persistent but they had managed to find a way to slow it down. They also managed to create an antidote and you had been drinking it a few times a day. But the recovery process was still slow. Your healing factor was also recovering slowly and you hoped that once it was up and running, it would heal you completely and flush the remaining poison out.

Things weren’t as complicated as before. Ever since Wanda’s revelations and confirmations, everyone had been much more relaxed around you and trying to be more open and friendly. They weren’t as suspicious of you anymore and were trying to build bridges. Trying...

Tony set the glass on the nightstand and grabbed the comforter, covering you. While doing so, he took a glimpse of the small, golden necklace on your neck. The one you always wore. He smiled when he remembered what you told him a few weeks ago.

I learned that she had been working for Stark Industries but she left after some time… And then I also remembered that my birth was just a few months after she left Stark Industries… Your name doesn’t start with a “T”… you are Anthony… but you go by Tony Stark… I managed to put two and two together,” smiled the girl and the man returned it.

“You are brilliant,” he whispered and you chuckled.

“Do we have pears?” you asked after some time and Tony nodded.

“Yepp, we do. Want some?”

“Yes,” you smiled faintly and he returned it before standing up and going over to the fridge, opening it and taking out a bag full of pears. He washed them before returning to the table, and started peeling them.

“No, no, no,” you put a hand over his which halted his movements. You snatched the pear from his hand and bit down. “The peels contain lots of vitamins. They also take longer to digest so that keeps you feeling full for a longer period of time and it kind of prevents the sweet cravings. Besides, it’s less messy eating them that way,” you shrugged as you chewed and Tony chuckled.

“But what about the pesticides?” asked Peter and Tony shook his head.

“Those are pears from my garden. I’ve been thoroughly taking care of them.”

“You have a garden?” asked Sam with a raised eyebrow.

“I don’t trust the fruits and vegetables people sell. Who knows what they do to them. And I have a kid after all. I don’t want Morgan getting sick and fucking up her stomach because of the shit food they try shoving down our throats,” explained Tony and you hummed.

“Preach.”

“You two are weirdly adorable,” laughed Bruce and Tony grinned.

“Of course we are. We are Starks.”

“Those pears are indeed amazing. They taste much better than what I buy. I’m so going to raid your garden,” you threatened jokingly and Tony chuckled. “Pears are probably one of my most favourite things to eat.”

“No one can beat the caramel, though. Or the chocolate strawberry combinations,” voiced Wanda from beside you and you sent her a teasing look.

“How did you know?” you asked knowingly and the witch sniggered.

A few minutes in silence passed before you took the last bite and put the leftovers in a plate, lifting your gaze to stare at Rhodes.

“Ok, I know you guys still don’t fully trust me, but can you stop looking at me as if I’ll snap and slit all of your throats? We won’t make any progression that way,” you sighed. “Besides, that’s not the way I prefer killing people.”

“Not the best time to joke about that,” whispered Tony.

“Yeah, we’ve heard of your favourite way of killing people. Ripping their hearts and spines off. That’s why they call you the Ripper,” grunted the war machine and you laughed, your eyebrows raising and brightening your face.

“Oh, really? So, I’m like what? Modern Jack the Ripper!?”

“Are you seriously proud and impressed by that?”

“Hey, now! I’m just preserving the culture,” you grinned widely as you wiggled your eyebrows.

“The sociopathic culture you mean,” drawled Rhodes.

“I’m not a sociopath. That thing with the heart and spine ripping? Happened only once,” you shrugged. “People just exaggerate it in order to create another story to scare their children with. Not my fault. I kill clean. Snapping necks, blowing brains and throwing knives very accurately,” you accentuated the last few words. “But what I’m good at is integrating within organizations and destroying them from the inside out,” you leaned closer and looked the man right in the eyes, making him glare at you, and the others to look a bit uneasy.

“Is that a threat?”

“I don’t know Colonel, you tell me,” you mused.

“C’mon, don’t fuck with their head. They are messed up as they are,” grunted Wanda, letting out an amused chuckle.

“Yeah, better stop,” added Tony but it was obvious he was enjoying this exchange.

“But Wanda, dad, I was just having some fun,” you whined.

“That’s not the best humour you got there,” drawled Sam with a faint smile.

“Not my fault he has a stick up his ass,” you exclaimed as you pointed at Rhodes.

“Sorry Tony, but I just can’t trust her,” growled the man in question.

“It’s up to you whether you trust me or not, Starboy. Do you think I care either way?” you asked mockingly and he bristled, causing Sam to chuckle.

“Not funny, Sam!” he sent him a sour look but the man only grinned more.

“Sorry but, it’s quite hilarious to me. She is one of the few who manages to get under your skin and piss you off so royally. Your face gets all red… it’s just, very entertaining.”

“See? Chirpy gets it. You should just ignore me instead of letting my shit get to you and rile you up. Don’t be the childish and immature one by firing back,” you chirped and Tony sighed.

“What? It’s the truth!” you shrugged as you tried to keep straight face but ended up snorting hard.

“You do realize that you are the bigger child in the situation, right?” huffed Sam in amusement.

“Careful,” muttered Tony as he helped you stand from the bed and gave you a crutch. You tightened your lips but gladly accepted the support.

“I want to see Fromir first,” you looked at Tony and the man inhaled slowly before nodding and the two of you made your way to the interrogation rooms. White and empty with only one chair and a table. The three were locked separately, being supervised by many agents, including Rhodes and Sam.

“Did he spill anything for the past weeks he’s been in here?” you asked once you faced the two soldiers and they shook their heads. You huffed as you entered the room, the other three following you. The man had been sitting on a stool with his head in his hands when he heard someone entering. He lifted his head and his eyes widened.

“Y/N!” he exclaimed as he stood up sharply, his gaze focusing on the opened doors. You stayed silent with a blank face, your hand gripping tightly the crutch. “W-we can t-talk this through, r-right?” he asked as he lifted his hands in surrender, sending a shaky smile, and you narrowed your eyes, your lips scrunching as your nose twitched. Tony raised an outrageous eyebrow and Rhodes and Sam blinked dumbly. The man had been so cocky and confident, a big smart-ass with a huge, babbling mouth, that spoke not the things they needed, staying silent despite their harsh interrogation. But the moment you had appeared, his legs trembled and his voice shook. There was a stifling silence that continued for a minute, causing everyone to stand on edge until you broke it with your raw, savage scream. Fromir took a step back when you threw the crutch on the ground and advanced on him, grabbing him by the shirt and lifting him in the air, throwing him to the side. He hit the glass wall painfully. It didn’t break because of its sturdiness but it was even more painful than if it had broken.

“Say it,” you growled as you strode over to him, not even limping despite your still weak body. Adrenaline and pure rage were pumping through your veins, accompanied by the longing desire of revenge. “Did you enjoy it?” you rumbled as you kicked him in the stomach, sending him flying and rolling to the other side of the room. Sam made a step forward but Tony outstretched his arm, his hand landing on his chest, as he sent him a look that clearly told him to not intervene. You neared the man quickly, speaking louder and deadlier with each word.

“Shoving your dick in my mouth? Slicing me? Experimenting on me? Did you enjoy it?” you snarled as you picked him up again and rammed him on the ground, causing him to lose his breath and grunt in pain.

“I did,” he gasped out and you snapped.

“Fuck you! I was just a kid!” you screamed as you grabbed him by the throat and lifted him in the air. “You took me away from my home! You killed my mom in front of me!” you shouted ferociously before throwing him away. He rolled on the floor and grasped his aching throat. “I’m strong because of you… but the price I had to pay was not worth that! Now it’s time you pay yours!” you choked, coughing, as you fell on your knees. Tony rushed to your side and grabbed your shoulders, steadying you.

“For God’s sake, don’t strain yourself! Do you have a death wish?” he contained himself from yelling as he watched you with red, concerned eyes. You calmed down as your breathing evened and you grabbed Tony’s shoulder, using it to support yourself as you stood once again. You walked slowly to Fromir who backed away in a corner and you only bared your teeth at him with pure resentment shining in your eyes.

“Whatever you did to me, I will do to you… tenfold… and then I’ll kill ya,” you grumbled out as you spat on him before turning around and limping towards the fallen crutch, staring at it for a second, contemplating, before bending and taking it, turning to look at Tony.

“I know my limits… I know when I need help,” you murmured and he let out a long sigh before he also stood up and neared you.

“I think that’s enough visits for one day. I’m not letting you out of your room until you fully recover,” he told you with a promising look in his eyes and you pouted but nodded nonetheless.

“So… do you have something to tell me?” you asked as you stood with crossed arms in front of a kneeling man. He shook his head. “Because I have a lot of words on the edge of my tongue, waiting to be spilt,” you growled lowly before your hands grabbed his collar and hoisted him up, shoving him violently, making him stumble, although he didn’t lose balance. “When dad told me that he got some cowardly brat as a hostage, I didn’t think for a second that it would be you. After all, you were always so cocky. Such a big mouth. Hiding behind that favourite whip of yours. You looked so big back then. So scary and intimidating… I never thought you would be such a coward,” you huffed as you leaned on the table behind you. The man looked at his feet. You chewed angrily on your lip before you bolted and grabbed his hands, turning him around and kicking the back of his knees, making him fall down. You didn’t waste time to tie his wrists to the metal pole and secure him tightly. Ignoring his whimpering and pleading, you walked calmly to the table and grabbed a long, thin whip.

“I’ve always wondered… what would it be if I was on the other side… I’m quite anxious to finally have that question answered,” you sneered and before he even realized it, the whip connected with his back with a loud smack. He yelled. You did it again and again and again until his whole back was bloody and chunks of his skin littered the ground alongside drops and pools of blood.

“I remember this agent. Gods, I don’t know how she survived in HYDRA. She was so strong... She was probably the only truly good person there. Raised in captivity she was. But even thought they raised her with their ideals, she still held tightly to her own that she had secretly built… much like me, I guess… She was a great actress. Never let them doubt her loyalties. She was only true to me. She always took care of me. Whenever I was hurting. She healed me. She mostly helped me with the wounds you inflicted. She would put ice on my back. She would hold my hand. Stay by the bedside even,” you spoke quietly as you dropped the whip on the ground and leaned helplessly on the table as memories flooded you once again.

“And then she was sent on a mission. No details were revealed, of course. Just one thing. That she almost revealed HYDRA to SHIELD. A disgrace. One hundred whips she got… from you… I heard. Then you flayed her… She died screaming…” you reminded him and he gulped as he whispered pleas.

“P-please! I’m s-s-sorry!” that only made you laugh.

“Do you remember what they taught us in HYDRA?” you asked as you grabbed a knife and straightened, walking slowly towards him. “We beg for no mercy. And we show no mercy… Every time I begged for mercy, they would double the tortures until I stopped begging altogether,” you smiled bitterly as you tilted your head. “Are you so brave, all of a sudden? Do you dare ask me for mercy? I mean, I may consent and give it to you. But then again, after everything I’ve been taught and after everything you’ve done… do you think I will? Maybe you’ll just anger me so much that I would decide to flay you as well. Or maybe split you in half? Or do the blood eagle torture? That’s classic! I love classics,” you waved your free arm excitedly, laughing, and he sniffed, trying to keep his tears at bay.

“P-p-please,” he whimpered and you scrunched your nose in disgust. You leaned and breathed into his neck, almost causing him to sob and soil his pants.

“I think I’ve made up my mind,” you whispered and you cut the ropes on his wrists, setting him free. He fell on the ground and let out shaky sighs of relief.

“Thank y-you,” he sniffed but then he felt your boot on his body, turning him around so he was laying on his back, facing you. He groaned because of the pain but managed to compose himself and open his eyes to look at you. You were tilting your head left and right, observing him. And then you lifted your foot and drove the high heel of your boot right through his throat. He choked and sputtered and when you removed it, his hands flew to clutch his throat, to try and stop the flow of blood sipping through the hole. And then you threw the knife, hitting his head powerfully. It embedded into the floor below. He was dead in an instant.

“There is your mercy,” you whispered as you turned around and grabbed a handkerchief from your pocket, wiping blood drops from your hands and heel and throwing it over his body before walking away.

“Now… round two.”

“Gah!” screeched a woman as blood and saliva flew from her mouth.

“My, my… How the cards have turned,” you whispered as you faced the woman, your noses touching, before you licked her cheek. “I told you… that you would choke on your tongue and teeth,” you smiled crazily as you looked down at Narween. After another week or two, your healing factor had kick-started and helped you make full recovery. You were up and running in no time. And now… now there you stood, right after dealing with the coward, facing three people tied to chairs with special chains that didn’t allow them to use their powers… well, two... except Fromir.

You hummed a melody from Alice Madness Returns as you circled them. Your hands and front were drenched in blood. Teeth, nails, tongues, fingers… you could find anything on the floor.

“Now, I didn’t need to interrogate you per se… Abraham already told me of your plans, abilities, etcetera… But I needed a reason to torture you,” you revealed and their eyes widened. “Oh, yes. Abraham didn’t lose his memories of me at all. When he had the opportunity, he revealed everything to me. Funny, he thought you had erased MY memories of him… He died a second time because of you… and now you will pay the price,” you growled lowly as you came to stand behind Narween. The woman breathed shakily, her eyes watering, as you grabbed your shoulder with one hand.

“The Four Horsemen of the Apocalypse… in modern terms, the edgy, emo book club,” you snorted. “Have you read poetry?” you asked as you tilted your head, your hand squeezing Narween’s shoulder painfully until a pop echoed in the room and the woman’s muffled yells followed, causing the men to cringe. “It’s quite nice. Let me recite something for you. It’s called “A Poison Tree” by William Blake,” you smiled evilly as you licked the stained with blood blade of your knife.

“I was angry with my friend; I told my wrath, my wrath did end… I was angry with my foe: I told it not, my wrath did grow,” you recited as you brought your knife and slit Narween’s throat. “And I watered it in fears, Night & morning with my tears: And I sunned it with smiles, And with soft deceitful wiles,” you whispered in Fromir’s ear as you walked to stand behind him. He let out a pathetic whimper when you squeezed his shoulder. ”And it grew both day and night. Till it bore an apple bright. And my foe beheld it shine, And he knew that it was mine,” you growled huskily before driving the knife through his throat, much slower than you did Narween. He choked for a while, his body jerking before he stilled. You straightened and slowly stalked over to Enzo.

“And into my garden stole, When the night had veiled the pole;” you kept on reciting as you came to stand in front of the man, crouching down and grabbing his face with one hand, caressing his cheek with your thumb. You leaned and placed a kiss on his lips. “In the morning glad I see;” you whispered, your breath tickling his skin, before you, once again, drove the knife down and slit his throat. “My foe outstretched beneath the tree,” you mumbled the last words as you watched him gag, blood spurting on your face, neck and collarbone. He stilled. The light in his eyes disappeared. You stared at his face for a little while before standing up. The knife slipped from your grasp and clanked as it fell on the tiles. You turned your back on the corpses.

Study the Physico-Chemical Properties of Sapota (Achras Sapota L.) - Juniper publishers

Abstract

In the present work, the physical and chemical properties of fresh sapota fruits (Achras sapota L). And the Physical Properties studies such as moisture content (%), length (mm), width (mm), thickness (mm), volume (cc), Sphericity , weight of fruits (g), Bulk density (g/cc), True density (g/cc) and Porosity (g/cc). Chemical properties is TSS °(B), Acidity (%), pH, Reducing sugar (%), Total Sugar (%), Protein (%), Fat (%), Carbohydrate (%), Fiber (%), Color L, a and b.

Moisture content of sapota found to be in the range of 73.07 % wet basis (280.283 % db), the results showed that The length, width and thickness is sapota fruits was found to vary in the ranges from 44.08 to 60.19,37.00 to 49.34 and 41.06 to 52.91 mm, respectively, The volume of the sapota fruits range is 20 to 70 cm3, Sphericity of sapota fruits range is found to be 0.842 to 0.990, average weight of sapota fruits was 52.99±7.the weight of sapota fruits are recorded the range 41.15 to 74.99 (g), Sapota fruits are bulk density was in the range of found 0.341 to 0.414 g/cc, True density of sapota fruits was in the range of found 0.952 to 2.1095 g/cc, The porosity is calculated by the sapota fruits was found in the range of 16.62 to 42.22. chemical properties results shows the The fresh sapota fruits the TSS range is found 17 to 23, Titratable acidity of sapota fruits was in the of range 0.2 to 0.25, pH of sapota fruits range was observed in the range 5.5 to 6.0, Reducing sugar of fresh sapota fruits range was 15 to 17.3, Total sugars of fresh sapota are range between 46 to 52.2.

Introduction

Sapodilla, (Manilkara Zapota L.) which belongs to the family sapotaceae, is underutilized tropical fruits commonly known as “sapota” in India and “chiku” in Malaysia. Immature fruits are hard, gummy and rich in tannin (astringent), while the ripe fruits are soft and juicy, with a sweet taste an attractive range colour, which makes them wonderful dessert fruit [1]. In India it is grown in an area of 82000 ha with 8 tones production at 14.19 tonnes per hectors productivity. Sapota is grown on a commercial basis in India, the Philippines, Srilanka, Malaysia, Mexico, Venezuela, Guatemala and other central American countries [2]. In Maharashtra, Gujarat, Tamilnadu and Karnataka states sapota is grown commercially [3]. Raw fruits of sapota are astringed, while ripe fruits are sweet. It is mainly used as dessert fruits bedside many processed products are prepared from sapota namely Halwa, Juice, Milk Shake, Shrikhand, fruit Jam. Mature fruits are used for making mixed fruits jams and provide a valuable source of raw materials for manufacture of industrial glucose, protein and natural fruits jellies. They also are canned as slices [4]. Sapota is a small fruit, generally with a diameter range from 5 to 9 cm with round to egg shaped appearance, and 75- 200 g weight. It consists of a rough brown skin, which enclosed a soft, sweet, light brown to reddish brown flesh. The flesh is often gritty, much like a pear, and which holds three to four flat, smooth black seeds, although some fruits are seedless. Figure 1 shows the sapota fruits and cut sapota fruits. Superior strains have a time smooth texture with a slight fragrant and sweet flavour [5].

Sapota fruits is reported to contain sugar, acids, protein, amino acid, phenolics viz, galic acid, catechin, chlorogenic acid, leucodelphinidin, and leucodelargonidin and Leucopelargonidin, carotenoids, ascorbic acids, and minerals like potassium, calcium and iron (Selvaraj and Pal) [6-9]. Fruits contains carbohydrate (50.49 g-100 g), protein (0.7 g – 100g), fat (1.1 g – 100g), fibre (2.6g -100g), and minerals nutrient viz. calcium (28mg -100g), iron (2.0mg -100g), phosphorus (27mg -100g), ascorbic acid (6.0mg -100g), Golpalan et al., Size and shape are most often used when describing grains, seeds, fruits and vegetables. Shapes and physical dimensions are important in sorting and sizing of fruits and determination how many fruits can be placed in shipping containers or plastic bags of a given size. Quality difference in fruits, vegetables, grains and seeds can often be detected by differences in density. When fruits and vegetables are transported hydraulically, the design fluid velocities are related to both density and shape [10]. Quality is defined as the absence of defects or degree of excellence and it includes appearance, color, shape, injuries, flavor, taste, aroma, nutritional value and being safe for the consumer [11]. Due to a higher market exigency as for high quality products, the juice and pulp industries have been looking for fruits with better internal and external features, including fruit length and width; fruit weight; pulp, seed and peel percentages per fruit; number of seeds per fruit; seed size and peel diameter; soluble solids (ºBrix); Titratable acidity (%); vitamin C content (mg/100g of fresh fruit); pulp pH and soluble solids/ Titratable acidity ratio. The physical properties affect conveying characteristics of solid materials by air of any sample. Size, shape and physical dimensions of sapota are important in sizing, sorting and other separation processes. Bulk and true densities of sapota are necessary to design the equipment for processing and storing. The porosity of fruits is the most important for packing, pH is used to determine the acidity and alkalinity of the fruits, and TSS is used to determine the amount of sugar concentration. Many studies have been reported on physical properties of fruits such as Apple, Apricot, Banana, Olive, Pomegranate and grape by the researches [12-17]. The literature on physico-chemical properties of sapota is scarce. The present work was undertaken to study the physico-chemical properties of sapota fruits.

Materials and Methods

Moisture content

The moisture content of sapota kalipatti variety fruits was used for the experiments. The moisture content was determined by using a standard hot air oven method [18]. The sapota was cut into slices around 10 to 15 g and slices were kept in pre weighed moisture boxes by using electronic balance of 300 g capacity having the least count of 0.001 g. These samples were kept in hot air oven for 105ºC ± 1ºC for 24 hours. The moisture content (wb%) was determined as equation (1)

Dimensions (L, B, T)

The three principal dimensions namely length, width (Diameter) and thickness was measured for each individual sapota along X, Y, and Z axis with the help of Vernier caliper (least count of 0.01mm). The spatial dimensions were measured for 50 fruits and average value has been reported. Geometric mean diameter was calculated by following equation (2)

Sphericity

It is defined as ratio of surface area of sphere having same volume as that of the sapota to the surface area of the sapota [19]. This criterion was used to describe the shape of the sapota. Sphericity of sapota fruit was determined by using equation (3).

Fruit weight

Samples of sapota were taken and their weights were measured on an electronic weighing machine with the 0.001 kg least count. The maximum, minimum, and average values of these parameters were recorded and standard deviation of the mean values was tabulated.

Fruit volume

A 1000 ml measuring cylinder was used for measurement of fruit volume. Measuring cylinder was filled with water up to 500 ml. the fruit is dropped in the measuring cylinder. The initial volume before placed was recorded for fruit. The volume change after dropping the fruit in to the cylinder was recorded. The measurement was repeated 10 times the change in volume was reported as the volume of fruit. The average of 10 measurement were reported as a fruits volume using equation,

Bulk density

The bulk density was determined by using the mass/volume relationship. Sapota were filled in gunny bag having volume (100cm×60cm×30cm). Total mass of the sapota were measured with the electronic balance with accuracy of 0.01 g. Fruit density (kg/m3) was calculated by using the following equation (5). The experiments were repeated with five times and average value was reported. The bulk density of sapota fruit was determined by using following formula as suggested by Mohasnin.

True density

The true density of sapota fruit was determined by using toluene displacement method. Weight of single sapota fruit was taken with electronic precision balance with least count 0.001 g and fruit was immersed carefully into measuring cylinder partially filled with toluene. The volume of toluene displaced by the fruit was noted down. The true density was calculated by using following equation (6).

The porosity of sapota was computed from the value of bulk density and true density using relationship.

Total Soluble Solids⁰ (BRIX)

Total soluble solids sapota pulps were determined using Refractometer (M/s. Atago, Japan) at atmospheric temperature. The equipment was calibrated with distilled water and the TSS of the Sapota juice was determined. The experiment was replicated three times. The total soluble solid content of fruit samples was determined by a digital Refractometer (Kyoto Company, Kyoto, Japan).

Titratable Acidity

The Titratable acidity of sapota fruit pulp was determined as per the procedure Ranganna. A known quantity of sample was blended in mortar and pestle with 20-25 ml distilled water. It was then transferred to 100 ml volumetric flask, made up the volume and filtered. A known volume of aliquot (10ml) was titrated against 0.1N sodium hydroxide (NAOH) solution using phenolphthalein as an indicator (Ranganna). The acidity was calculated as given below and the results were expressed as percent anhydrous citric acid. The three replications were carried out and the average readings were reported.

pH of sapota was measured using digital pH meter. The digital pH meter is firstly calibrated by using 4 pH and 7 pH buffer solution. The electrode was washed with distilled water and blot led with tissue paper. 10 ml of sapota juice was taken in beaker, and then the tip of electrode and temperature probe was then submerged in to the sample. The pH reading display on the primary LCD and temperature on secondary one. The pH of fresh sapota was determined for three replications. The chemical properties such as pH of meddler fruit were determined according to the methods presented by the Association of Official Analytical Chemists.

Reducing Sugar

The reducing sugar of sapota pulp was estimated by using Lane and Eynon Method with modifications reported by Ranganna. A known weight of Sapota slices were crushed with distilled water using lead acetate (45%) for precipitation of extraneous material and potassium oxalate (22%) to de-lead the solution. This lead free extract was used to estimate reducing sugars titrating against standard Fehling mixture (Fehling ‘A’ and ‘B’ in equal proportion) using methylene blue as an indicator to brick red end point. The three replication were carried out and the average reading was reported.

Total Sugar

Total sugars of sapota pulp estimated by same procedure of reducing sugar after acid hydrolysis of an aliquot of deleaded sample with 50 percent of hydrochloric acid followed by neutralization with sodium hydroxide (40%) and calculated as below. The experiment was repeated three times to get the replication.

Colour

The fresh sapota fruit pulp was used to measure the colour value by using colorimeter (Konica minotta, Japan model-Meter CR-400). The equipment was calibrated against standard white tile. Around 20 g pulp of sapota was taken in the glass cup; the cup was placed on the aperture of the instrument. The colour was recorded in terms of L= lightness (100) to darkness (0); a = Redness (+60) to Greeness (-60); b= yellowness (+60) to blueness (-60).

Protein

The protein content of fresh sapota fruits was determined by Lowry’s Method (Lowry et al.,) using spectrophotometer (Make: Systronics- UV Visible spectrophotometer; Ahmadabad; Model No: 106). In this method, 1 g sapota pulp was mixed with 5 ml of alkaline solution which was prepared from 50 ml of Part one (2% sodium carbonate in 0.1 N NaOH) solution and 1 ml of part two (0.5% copper sulphate in 1% sodium potassium tartarate) solution. Mixed solution i.e. part one and part two was rapidly diluted with folin-ciocalteu reagent. After 30 min, sample was loaded in the cuvet of spectrophotometer upto >3/4 of its level. The absorbance was read against standard protein solution at 750nm. Absorbance is recorded as protein content.

Fat

Fat of sapota fresh fruit pulp was determined using soxhlet fat extraction system (AOAC) by using Soxhlet apparatus (Make: Elico, Hyderabad). In this method, initially weight of empty flask was weighed. 2 g sapota pulp wrapped in filter paper was siphoned for 9-12 times with the petroleum ether in soxhlet apparatus. After removing assembly, evaporation of petroleum ether was allowed by heating. Residue remained at the bottom of the flask and was reweighed with flask. The quantity of residue was determined as fat content of sapota pulp.

Carbohydrate

The carbohydrate from sapota pulp was estimated by anthrone method in which prepared a series of Glucose solution and distilled water in the ratio (0:1; 0.2:0.8; 0.4:0.6; 0.6:0.4; 0.8:0.2; and 1:0) by using spectrophotometer. One gram ground sapota pulp was mixed with 5 ml of 2.5 N HCL and then heated for 3 h in water bath. The mixture was allowed to cool for 1.3 h, and it is added with sodium carbonate till effervescence stops. It is seen by naked eyes. After filtration, anthrone reagent (2 g anthrone powder 100 ml H2SO4) was added in filtered solution. The mixture was heated for 8 min and allowed to cool. The solution was taken in the cuvette of spectrophotometer, and absorbance was recorded at 630 nm. A graph was plotted, i.e., absorbance versus concentration (glucose stock: distilled water), and concentration of unknown sample was measured by using formula,

Results and Discussion

Table 1 shows the physical properties of sapota fruits & Table 2 shows the chemical properties of sapota fruits

Moisture content

Moisture content of sapota found to be in the range of 73.07 % wet basis (280.283 % db). The result was in general agreement with the result obtained for fresh sapota fruits by pawar et al., which having range is 69.80% to 75.80 % (wb) for kalipatti and Athmaselvi et al., reported the moisture content of sapota verity kalipatti 77.93% (wb).

Dimension

The length, width and thickness is sapota fruits was found to vary in the ranges from 44.08 to 60.19, 37.00 to 49.34 and 41.06 to 52.91 mm, respectively. The Average values of dimension in terms of length, width and thickness were found to be 50.29±4.15, 42.78±3.12 and 46.53±3.130 mm, respectively. The shape of sapota fruit may be classified as Eleptical as per classification given by Mohsenin [19]. The result were in general agreement with the result obtained for fresh sapota fruits by Gupta et al., 50.10 to 62.19, 31.90 to 42.16 and 27.40 to 41.42. And Athmaselvi et al., 41.51, 42.16 and 40.3.

Fruit volume

The volume of the sapota fruits range is 20 to 70 cm3 and average volume are found of sapota is 43.2±15.19cm3.). The result was in general agreement with the result obtained for fresh sapota fruits by Gupta et al., is 408.3 to 587.7 (cc).

Sphericity

The Sphericity of sapota fruits range is found to be 0.842 to 0.990 and average value is 0.908±0.052 .and the shape of sapota fruit may be classified as elliptical as per classification given by Mohsenin [19]. The results were in general agreement with the result obtained for fresh sapota fruits by Athmaselvi et al., is 0.957.

Fruits weight

The average weight of sapota fruits was 52.99±7.the weight of sapota fruits are recorded the range 41.15 to 74.99 (g). The result reported in literature for fresh sapota fruits by Gupta et al., range of 38.20 to 55.50 (g) verities in sapota kalipatti and Athmaselvi et al., was 48.42 kalipatti [20] reported average fruits weight of sapota was 55.6 verities cricket boll (g). And pawar et al., reported the sapota fruits weight range of 60.66 to 85.42 (g) for kalipatti.

Bulk density

The result were in general agreement with the result obtained for fresh sapota fruits by Gupta et al., and Athmaselvi et al., range is 0.891 to 0.912 g/cc, 0.61 g/cm3.

True density

True density of sapota fruits was in the range of found 0.952 to 2.1095 g/cc. and average true density is sapota 1.323±0.40 g/cc [22]. The result were in general agreement with the result obtained for fresh sapota fruits by Gupta et al., for kalipatti and Athmaselvi et al., range is 1.013 to 1.055 g/cc and 1.12 g/cm3.

Porosity

The porosity is calculated by the sapota fruits was found in the range of 16.62 to 42.22 and average value of porosity is31.492±8.45 [23]. The result were in general agreement with the result obtained for fresh sapota fruits by Gupta et al., and Athmaselvi et al., range is 12.82 to 13.62. And 0.35 g/cm3.

TSS

The fresh sapota fruits the TSS range is found 17 to 23 and average value of sapota fruits is 19.45±1.40. The result were in general agreement with the result obtained for fresh sapota fruits by Pawar et al., which having range is 19.00°B to 23.60°B reported TSS of sapota average 24°B. Gupta et al., reported TSS of sapota average range 17°B to 22°B [20].

Titratable Acidity

The Titratable acidity of sapota fruits was in the of range 0.2 to 0.25, the average Titratable acidity is 0.16±0.14. The result were in general agreement with the result obtained for fresh sapota fruits by Pawar et al., which having range is 0.10 % to 0.23%.

The pH of sapota fruits range was observed in the range 5.5 to 6.0 and average pH is 5.72 ± 0.14. The result were in general agreement with the result obtained for fresh sapota fruits by Pawar et al., which having range is 5.30 to 6.30. Gupta et al., range 5.2 to 5.7 [24].

Reducing sugar

Reducing sugar of fresh sapota fruits range was 15 to 17.3, average reducing sugar are 16.3±1.23. The reducing sugar reported for fresh sapota fruits by Pawar et al., was in the range of 8.90 % to 11.08 %. And Take et al., average 8.91 %.
