Dinner is packed Economy Rice or Cai Png (菜饭) as we called it in our local dialect. Crispy chicken cutlet on the left with deep-fried fishcake roll filled with carrot, seaweed and imitation crabstick in the middle. Lastly, a dish of stewed egg tofu with egg over white rice.

beetroot risotto with sautéed beet greens
Seasonal beets! I had a bunch and wanted to use them. I used this beetroot risotto recipe, and it was my first time cooking risotto in the oven but oh my god I am converted. It came together so easily, and felt so much quicker than a stovetop risotto.
I chopped up the greens from the bunch, and sautéed them with garlic in olive oil and butter. I also kept a few leaves aside to coat in oil and bake, for a crispy garnish.
I served the risotto with a scoop of the greens and a few crispy leaves, then scattered around some goat cheese and sprinkled it all copiously with chopped dill. I’ll definitely be doing this one again, and I’m so glad I have leftovers!
