Ginger Prawn Spring Wraps
These Ginger Prawn Spring Wraps are bursting with flavours, and full of refreshing, crisp seasonal vegetables. And they taste even better if you can eat them in the sunshine, should the skies be blue, after a spot of gardening, maybe... Happy Tuesday!
Ingredients (serves 2):
a dozen fresh prawns
1 heaped tablespoon Petit Piment (Ginger and Onion Condiment)
1/3 large cucumber, rinsed
half a dozen small radishes (with their leaves), scrubbed and rinsed
a dozen leaves garden mint
a small bunch Garden Cilantro
a small lemon
a pinch of fleur de sel and freshly cracked black pepper
1 tablespoon olive oil
1/3 cup Labneh
1 tablespoon olive oil
2 thin Swedish flatbreads
Peel prawns, and place them in a medium bowl. Add Petit Piment, and give a good stir, to coat the prawns well. Place in the refrigerator, to marinate, at least a couple of hours.
Halve cucumber, and remove its seeds. Cut cucumber into small dices, and spoon cucumber dices in a medium bowl.
Trim off radish leaves; set aside.
Halve the bigger radishes and cut all radishes into thin slices. Add to the cucumber dices.
Gather mint leaves, radish leaves and Cilantro bunch, and chop finely. Add half of the chopped herbs to the bowl, and grate in a little lemon zest. Season with fleur de sel and black pepper. Drizzle with olive oil, and give a good stir, to mix. Keep in the refrigerator, at least 1 hour.
In a small bowl, combine Labneh and remaining chopped mint, radish leaves and Cilantro. Give a good stir. Keep in the refrigerator as well.
Heat olive oil in a large skillet over medium-high heat. Once hot, add marinated prawns, along with Petit Piment, and cook until bright pink and just starting to brown, about 4 to 5 minutes.
Lay both thin Swedish flatbreads onto counter-top, and spread generously with Herb Labneh. Divide cucumber and radish mixture between each flatbread. Arrange hot ginger prawns into two layers onto each flatbread and gently, but tightly roll. Cut in halves.
Serve Ginger Prawn Spring Wraps immediately, with dressed lettuce.
