Popping in to share the joy of Maggi Masala Macaroni, that spicy, joy-on-the-plate food that's a hodgepodge of taste, comfort and good ol’ masala that gives life and mood a boost on ‘those’ days. I’m sure a lot of you are heaving that ‘been there done that’ sigh so feel free to move on; the recipe below is for those who wouldn’t mind doing a save + share of a recipe that might just be helpful in the future. So here goes… Ingredients (makes enough for 2-3) · 1¼ cup of elbow pasta/macaroni · 8-10 cloves of ginger · 1 large onion · 2 cups chopped veggies of choice · 2-3 sachets of Maggi Masala e Magic · Butter/oil Method · Cook 1 ¼ cup of elbow pasta aka macaroni as per cooking instructions on the packet. Don’t forget that ‘al dente’ bit please! · Do NOT throw away the pasta water when draining it. We’ll use it later when putting together the Masala Macaroni. · Multitask…while the macaroni is jumping and twirling and bobbling in the water, chop the onion and mince the garlic cloves. · Heat oil in a pan, throw in the onion and garlic and sauté till the onion is translucent. · I prefer using oil but hey, feel free to add a dollop of butter. · Hopefully you’ve done the vegetable prepping/chopping bit by now so throw that into the onion-wala pot and sauté for a few minutes (just FYI, I used capsicum, stringy carrots, some corn) · Add the Maggi Masala e Magic to the vegetables, a dash of water (pasta water works), mix, cover and cook for a few minutes (till the vegetables are cooked or till your patience holds – whichever comes first). · Then dump in the pasta into the vegetables, 1/4th cup of water, mix well, cover and simmer for a few minutes. · Do a taste check – remember to go easy with the Maggi Masala e Magic coz both this and the pasta water will have salt and we don’t want to have to enter the ‘let’s fix things zone’ because we know how that goes! · Taste check done, plop in your favourite plate/bowl, garnish with some coriander, grab that spoon and tuck in. #macaroni #elbowpasta #pastarecipe #maggi #amateurcooks #cookingathome #vegetarianmeal #veganrecipe #easyrecipes #food #indianbloggers #ahmedabad #fromthecornertable #traveltuckintalk https://www.instagram.com/p/CqHuNaTP-gT/?igshid=NGJjMDIxMWI=

Tomato Frittata
Feeds an army, tasty enough for them to come back for seconds.  It works well for breakfast or dinner.  This frittata is chock full of vegetables and protein - an important part of my healthy diet plan.  Serve with romaine spears on the side for a fresh, cold crunch and cantaloupe chunks as a sweet ending.  
1/2 t. coarse salt
1/2 t. Italian herb mix
18 eggs, whisked together
2 c. half and half
4 c. toasted bread, scissor cut into small chunks
3 c. fresh spinach leaves, scissor cut into ribbons
1 c. mushrooms, chopped
1 med. onion, diced
1 green bell pepper, seeded, diced
1 - 4 oz. can jalapeno peppers, with liquid
2 T. + fresh basil, scissor cut into ribbons
2 T. + fresh parsley, scissor cut
1 1/2 c. feta cheese, crumbled
1 c. Parmesan, grated
1 c. cherry tomatoes, multi-color
Preheat oven to 400 degrees.  In a spouted mixing bowl, whisk salt, Italian herbs, eggs and milk.  In a large greased, flat baking dish (lasagna pan works well) arrange bread pieces in a layer.  On the bread, layer spinach, mushrooms, onion, and bell pepper.  Add jalapenos, basil, parsley, and feta to egg mixture which will help evenly distribute the smaller pieces throughout the dish.  Pour egg/milk/vegetables mixture over bread/vegetables coating all.  Bake until a knife inserted in the center comes out clean - 60 min. approx.  When it's done baking, let it rest for a short time on top of the stove to finish setting up...if you can wait that long.

Chicks in a Nest
Layering sunny-side-up eggs on sauteed mushrooms nesting on a bed of baby spinach is a great way to start the day as a protein/vegetable rich way to start the day.   Best of all…it’s part of my healthy diet.
olive oil
2 mushrooms, sliced thin
2 eggs
dash salt/pepper/garlic powder
dash Smokey Spanish Paprika
a handful of fresh baby spinach leaves
In a small fry pan, saute mushrooms in olive oil, then add seasoning.   Layer mushrooms on a bed of spinach.  Fry eggs sunny side up in olive oil, add seasonings.  One trick to fry the egg sunny side up is to cover the fry pan with a tight fitting lid to hold the heat in which cooks the top.  Layer the egg on top and congratulate yourself on starting your day right with a good breakfast.
