Can whoever knows science explain to me what exactly in an egg I’m allergic to if I can have it when baked in combination with flour?

Like, I cannot eat: custard, quiche, omelet, merengue (even baked), Mayo/aioli, egg fried rice, etc. without becoming violently I’ll within 30 minutes.

But I can eat: cake, cookies, waffles, etc.

The exact limit of what I can eat seems to be a Korean pancake, which is pretty eggy, but I guess is mixed with enough flour to not set off whatever reaction I’m having.

What is the thing that I am allergic to??????
