For a delicious dinner the whole family will enjoy, this keto chicken and broccoli casserole is a great way to use up leftover chicken, both white and dark meat. 4 tablespoons butter, 3/4 cup crushed pork rinds, 3 cups chopped cooked broccoli, 2.5 cups cooked chicken cut into bite-sized pieces, salt and ground black pepper to taste, 1 cup heavy cream, 1/2 package cream cheese cut into 1-inch cubes, 1 tablespoon extra virgin olive oil, 1/4 cup sliced almonds, 4 ounces grated sharp Cheddar cheese

This chicken and broccoli keto casserole is cheesy, creamy, and easy to prepare. Use your favorite cheese and any white or dark cooked chicken meat.
50g diced Chicken Breasts
2 Tbsp diced White Onion
1 Tbsp diced Red Bell Pepper
1 clove Garlic, crushed
1 Tbsp minced Jalapenos
1.5 cups Chicken Stock
1/3 cup sugar-free Tomato Sauce
1 Tbsp Olive Oil
2 tsp Taco Spice Mix
50g diced Avocado
Fresh Cilantro for garnish

1) Sear chicken pieces slightly in olive oil.
