DIY Kimbap
One of my favorite things to make for a picnic or bento boxes is Kimbap, also known as Korean Seaweed Rice Rolls. Kimbap is easy to make at home, and you can customize it with any filling you choose. Today we are making a vegetarian recipe, but you can add bulgogi beef, canned tuna, or fish cakes! You would never know that this delicious kimbap has five vegetables!

Triple Bento with Rice Rolls
Oh I do love it when there's an excuse for packed lunches!
What have we here? Rice rolls/mini onigiri/gimbap/not-quite-sushi with cucumber and yakiniku hot dog fillings, with yakiniku sauce for dipping; boiled eggs (or a babybel for one family member who doesn't like eggs); lemon and bramble jelly; prawn cocktail Wotsits; grapes and a Groovy biscuit.
Close up of those rice rolls! The hot dog ones are rolled in sesame and spring onion.

Forgot to share it, but birthday dinner consisted of gimbap and wakame soup, with some sparkling cider! Mom made wakame soup beforehand but we both prepped the gimbap ingredients so it was super fresh. My mom has shown me the best ingredient for gimbap is actually tuna with mayo, it is so yummy. My special skill is overfilling the gimbap until parts of it split.....
And forgot to get a picture of the finished product, but we also made carrot cake with cream cheese frosting as my birthday cake. 🎂
