Brunch is a takeaway box of Vegetarian Rice (斋饭) from the nearby coffee shop. Starting with my favourite curry mock mutton & potato, bitter gourd & carrot omelette and creamy sweet mock pork ribs that is still “pink” inside. :D The “bone” you see is a shaved stick of sugarcane.

It's definitely not a personal choice if you are affecting the lives of so many animals every time you pay for their carcass parts, milk and eggs. If it were a personal choice, it wouldn't be supporting their suffering every day and making other innocent beings go through hell on earth just for you to satisfy your filthy mouth!

Meatless Chili - 6 Servings
*** I use the prices from the WalMart in my sister's college city. Your prices may vary based on your location***
With Meat Prices rising Let's look at a Meatless Chili Dinner with a side of corn bread. The Chili Comes out to $7 for the entire recipe, Corn Bread Comes to $5.11 - this price includes leftover eggs and milk. Total for the meal 6 servings each is $12.11 with leftover eggs and milk to make scrambled eggs for Breakfast the next day.
Chili Recipe 1 pound sweet Potato $.98 1/2 yellow onion -$.90 2 cans Black beans - $.72 1 can pinto beans - $.72 1 28oz can Diced Tomatoes - $.98 1 can Rotel - $1.24 1 packet Chili Seasoning - $.74 1 1/2 cup Water(Optional and not included in price: use broth/stock instead)
Heat the olive oil in a large pot over medium high heat. Once shimmering, add in the onion. Sauté for 2-3 minutes or until almost translucent. Stir in the 1/2-inch sweet potato chunks. Stir until quite tender, around 9-10 minutes.
Add the undrained pinto beans, drained and rinsed black beans, and undrained tomatoes. Add in your Chili Seasoning
Stir everything to combine and bring to a boil. Once it is boiling, reduce the heat to medium low and cover the pot. Allow to simmer for 8-15 minutes or until a good amount of the liquid is absorbed and the sweet potatoes are tender. The time will vary, depending on your stove. For best results, check the chili every 3-5 minutes and give it a good stir at each check to avoid burning or sticking to the bottom.
Corn Bread 1 Jiffy Cornbread mix 1 Egg (We bought 6) 1/3 cup Milk (We bought a quart)
Preheat the oven to 400 degrees Fahrenheit. grease a muffin tin or use paper baking cups.
Blend ingredients. Batter will be slightly lumpy. Let batter rest 3-4 minutes and give another light mix before filling cups.
Fill muffin tin 2/3 of the way full.
Bake for 15-20 minutes, or until golden brown.

Starting to prepare myself to go back to uni and One of my goals for the upcoming year is to drastically cut the amount of meat I eat (no meat at all when my bf is not there and less meat when he is, considering I haven't managed to convince him to stop eating meat yet).
Soooo if anyone has recipes to recommend, I'd be more than happy to try them !! :)
