Umami, fermented, and fresh flavors are combined in this sweet-and-savory, thick, hearty stew. This dish is often called "pumpkin curry," but the "pumpkin" is actually kabocha—a sweet winter squash with edible green or orange skin.
This recipe uses fried TVP meatballs in place of the pork belly more commonly combined with kabocha (though pork meatballs are used in Burmese cooking, as in ဝက်သားလုံးဆီပြန်, pork meatball curry). The meat may also be omitted entirely: this curry is frequently vegetarian.

Ingredients:
For the spice mixture:
3-4 dried bird's eye chilis, or to taste
2 tsp ground turmeric
1 tsp of prik bon, cayenne pepper, or other ground red chili pepper may be substituted for the chilis. Substitute ground sweet paprika for all or some of the chili if you prefer less spice.
For the meatballs:
1 1/4 cup TVP
1 cup water
1 tsp vegetarian 'beef' broth concentrate or pho seasoning
1/2 Tbsp soy sauce
1 1/2 Tbsp vegetarian fish sauce, or 1 Tbsp liquid from jar of fermented bean curd + 1/2 Tbsp white miso paste (optional)
1/2 tsp spice mixture
1/4 cup chickpea flour (besan), toasted
1 Tbsp tapioca flour
1 1/2 Tbsp peanut oil
1 1/2 Tbsp sesame oil
I used toasted besan because it is common in Burmese cuisine and is excellent at holding eggless meatballs together. If you don't have any, you could substitute a baking egg replacer, or equal parts flour and tapioca starch.
Any neutral oil may be substituted for the peanut and sesame oils in the case of allergies.
For the soup:
700g kabocha, halved, seeds removed, and chopped
2 yellow onions, minced
1-inch chunk (10g) ginger, minced
4 cloves garlic, minced
1 green chili, sliced
Remaining spice mixture
About 3 1/2 cups water
1 tsp sugar
Salt to taste (if you're adding meatballs)
1/2 Tbsp soy sauce + 1 1/2 Tbsp vegetarian fish sauce (if not adding meatballs)
1 1/2 Tbsp peanut oil
1 1/2 Tbsp sesame oil
Chopped cilantro, mint, or green onion, to serve
Lime wedges, to serve
Kabocha can be found in the fall at an Asian grocery store, or at a Western grocery store that has a good selection of produce. You can substitute it with pumpkin or butternut squash.
Instructions:
For the spice mixture:
1. Toast chilis in a dry skillet on medium heat for a few minutes, agitating occasionally, until fragrant and a shade darker. Set aside.
2. Remove the skillet from heat and toast ground spices, stirring constantly, until fragrant, about 30 seconds. Remove from heat and allow to cool.
3. Grind chilis with turmeric in a mortar and pestle or spice grinder to desired consistency.
For the meatballs:
1. Whisk hot water, broth concentrate, soy and fish sauces, and about 1/2 tsp of the spice mixture together until combined. Add TVP and allow to rest for about 10 minutes, until hydrated.
2. Meanwhile, toast chickpea flour in a dry skillet, agitating every few minutes, until it is golden brown.
3. Add chickpea and tapioca flours to the TVP mixture and stir to combine. The TVP should hold its shape when pressed into a ball—add more besan if necessary. Shape TVP into balls of the desired size and refrigerate.
For the soup:
1. Halve the kabocha squash and scrape out the seeds, then chop each half into 2-inch (5cm) wedges and then cubes. There is no need to peel the squash. If you're having trouble chopping the squash, you can soften it by microwaving it for 30 seconds to a minute.
2. Heat oil on medium in a large pot. Add onion and a pinch of salt and cook for 10-15 minutes until golden brown. Add garlic, ginger, and chili and cook until no longer raw-smelling.
4. Add spice mixture and allow to fry for about 30 seconds, until fragrant.
5. Add squash and stir to combine. Fry for about 2 minutes more.
6. Add sugar, salt or soy and fish sauces, and water to cover. Cover and simmer until squash has softened, 10-15 minutes. Taste and adjust salt and spices.
To assemble: 1. Heat oil in a large skillet on medium. Fry meatballs, occasionally turning over carefully, until browned on all sides. Set aside.
2. Ladle in about 1/2 cup of broth from the soup and cook it down, turning meatballs occasionally, until the broth is thick enough to coat the meatballs.
3. Place meatballs and soup in serving bowls and serve warm with mint, cilantro and/or green onion, and lime. Serve alone or alongside rice.
Notes:
Typically, pork belly is fried in a mixture of minced or pureed onion, garlic, and spices (turmeric and chili powder, to which is sometimes added dried prawn), then water is added and the pork is boiled to produce the soup's broth. The squash is then added and simmered until tender. I have called for the meatballs to be fried separately, since they would fall apart with long simmering.

Katy and Harry’s wedding

I catered my brother and sister-in-law’s wedding in November 2016. It’s taken me this long to agree to another one. But Katy was at my brother’s wedding and we love her and her wonderful husband dearly, so offering to cook for 80 people was my gift to them. I am so pleased that I said I would.
The theory behind the menu was to offer everyone, whether an omnivore, pescatarian, vegetarian, or vegan, a similar dining experience. With hindsight, I would have offered fewer choices, and maybe more cold options, but there were no disasters and I managed to change into a red dress and dance until the disco stopped when service ended.
Main courses - roughly for 25 people each
Chicken with artichokes, potatoes, and rosemary
Cannellini beans with artichokes, potatoes, and rosemary
Lentil salad with either roast lamb, feta, or vegan equivalent
Chana masala
Goan fish curry
New potatoes, plain rice, asparagus
Desserts - roughly for 30 people each

Notes from a very hot kitchen
The Goan fish curry was a cinch to make. I prepared the base the day before the wedding. At the venue, I heated it through with the coconut milk and then dropped in the salmon to poach it before decanting it straight to chafing dishes.
I cooked the lentils with garlic, onions, red wine, and stock, then made up the salad with red onions, tomatoes, cucumbers, mint, parsley, and dill, together with pomegranate seeds and pomegranate molasses. It was dressed with olive oil, lemon juice, and red wine vinegar. 
The two lamb legs were butterflied by Carter Street butchers in Fordham. I marinated them in a mint salsa verde for 24 hours, and then roasted them at 200º Celsius for 15 minutes on each side before wrapping them in tin foil and leaving them to rest for at least 30 minutes before carving. I am now a firm advocate for butterflying, and will ask the butcher to teach me how to do it. A butterflied joint cooks faster and is far simpler to carve.
The lemon meringue roulade was an adapted Mary Berry recipe, found everywhere from the BBC website to the Sainsbury’s magazine. 
I made two of them. Each used 6 egg whites and 320 grams of caster sugar, spread into a 33 by 23cm baking sheet, and cooked for 10 minutes at 180º Celsius followed by a further 10 minutes at 140º Celsius. I made these the day before the wedding and rolled them just before service. Here, I spread them with a pint of softly whipped cream and dolloped on most of a jar of top quality lemon curd. I splashed some lemon curd over the top of the roulades and scattered raspberries around them. 
The vegan chocolate mousse was made using Elmlea Plant double, and to a recipe adapted from one on the Elmlea website.
1.5 litres Elmlea Plant Double
525 grams vegan dark chocolate
150 grams caster sugar
Bring one quarter of the plant cream to the boil with the sugar, whisking as you heat it. Off of the heat, melt in the chocolate. Pour in the remaining cream and whisk it until it forms a light and fluffy mousse. Leave it to cool and serve with blueberries.
I could barely stand yesterday (but somehow still managed to make baked green rice for 14) and just felt so ridiculously proud of myself. No, I won’t do it again in a hurry–this sort of catering is reserved specifically for people whom I love beyond words–but I have a clearer idea of how to go about doing it. Which means that if the right person asks, yes, of course I will.

Gujarati Food

Gujarati food originated from Gujarat, the western coastline state of India, often referred to as "Jewel of Western India". Although the long coastline ensures huge variety of seafood, the influence of Jain culture and philosophy makes the region a predominantly vegetarian barring some communities who incorporate non-vegetarian items such as goat, chicken, eggs and seafood in their platter. Gujarati cuisines are not only varied and lip smacking but also high in nutritional value. Different cooking styles and combination of spices are incorporated in preparing different dishes marking uniqueness of each. Traditionally a Gujarati thali comprise of rotli, kadhi or dal, rice, and shaak/sabzi. Some of the dishes are stir fred, while others are boiled. Gujarati food is more often served on a silver platter. Gujaratis use a combination of different spices and flavours to cook their meals and this is what makes their food truly exotic. People in Gujarat eat one or the other type of curry along with rice and roti in almost every meal. Gujarati dishes usually have a very subtle taste that makes it truly distinct from other Indian cuisines. Most of the Gujarati dishes are sweet, while others have a quite larger concentration of sugar as compared to salt and spices. Sometimes, jaggery is used as an alternative to sugar.
Traditional Gujarati Thali
The Gujarati thali has garnered much fame not only outside the Gujarati diaspora but also beyond the national boundary.  A typical Gujarati thali served as lunch or dinner in households and restaurants consists of an array of selective dishes arranged in a thali or plate. The platter usually consists of rotli or chapatti that is homemade bread; rice; a shaak/sabzi, that is a sweet or spicy dish prepared out of varied combinations of vegetables and spices; and either dal (lentils) or kadhi, a thick gravy made of chickpea flour, yogurt and vegetable fritters known as pakoras. A farsaan (snacks item) such as pathra, dhokla and samosa among others; a dish made of whole beans or pulses; a sweet dish or mishthaan such as jalebi and mohanthal also find place in the platter.    
While the daily meal of the Gujaratis prepared in households which they often refer as dal-bhat-rotli-saak remains simple, special occasions or festivals witness dozens of items in a Gujarati thali including a variety of farsans and mithais or sweet dishes, adhering strictly to the dietary rules regarding combinations of items to be served. For instance when kadhi is served, a dal preparation like mug ni dal or vaal is also served in the platter. The sweet dish for this particular platter would be items like shrikhand or doodhpak that is the ones based on milk or yogurt, but raita although made of yogurt would not compliment such a thali. Sweets like ladoo or lapsi that are wheat-based would find place in festive meals that are dal based.
The varied dishes that can be served in a Gujarati Thali include items like steamed basmati rice; chapati; Gujarati khatti mithi daal that is lentil sweet and sour in taste; bhakhri, a round flat unleavened homemade bread crispy and thicker than rotli; badshahi khichdi, a preparation made of rice and lentils (dal); undhiyu that is a preparation of mixed vegetable cooked with paste of spinach; ringana methi nu shak, eggplant or aubergine prepared with methi or fenugreek leaves; aloo rasila, a thin curry made of potato and tomato; and bhindi sambhariya, that is a ladyfingers curry among others complimented with kachumber salad comprising of freshly chopped cucumbers, tomatoes and onions dressed with curd or vinegar and a varied range of chutneys that is sauces or dips made out of different ingredients.
Distinct Features of Gujarati Food
Gujarati cuisines vary in flavour and other aspects with different regions; the most distinct being the ones from Surat, Kachchh, Kathiawad and North Gujarat. Tastes also differ according to choice and preference of families. A bent towards sweeter taste is quite palpable from many of the popular dishes of the region. Traditionally sugar or jaggery is used in preparing some vegetable items and dal which give them a more sweet flavour and offsets the otherwise insipid vegetables. Again some of the dishes taste spicy, salty and sweet at the same time. As the region remains quite hot and dry in summers with temperature soaring to around 50 °C, ingredients like lemon, tomatoes, salt and sugar are used commonly in preparing different dishes to avoid dehydration. The cooking style of Gujarati food is also quite unique. While some dishes are stir fried other are steam-cooked with the vegetables along with spices or dal being boiled and then vaghar (Chaunk) is added to it to enhance flavour of the dish. Vaghar is a cooking technique where depending on the dish a specific combination of whole spices and sometimes other ingredients are fried in ghee or oil following which these ingredients along with the oil is poured in the boiled vegetables or dal. One of the staples of the region is khichdi prepared out of rice and lentils and served with items like pickles and chaas or buttermilk, a yogurt based drink quite popular in different parts of India.
Cuisines of the populace vary round the year with availability of different seasonal vegetables and fruits. For instance, during the summer when mangoes are available, the traditional Gujarati dish ‘Keri no Ras’ or Aamras usually dominates a Gujarati platter. This dish, which is generally savoured with rotli or pooris, (unleavened roundish deep-fried homemade bread) comprises of sugared fresh mango pulp.
There is a custom of consuming moong dal on Wednesdays in many Gujarati families. Gujaratis also have the habit of keeping fast regularly with their diet being restricted to dried fruits, nuts and milk. In recent times, the populace has shown a knack towards more fried and spicy items. Although predominantly a vegetarian state, some of the communities consume non-vegetarian items like fish, chicken and eggs. For instance the Kharwa community developed a style of cooking that comprise of fresh as well as dried fish. Some of the seafood usually consumed includes prawns, lobster, pomfrets, crabs and khandwas among others. Many new recipes have emerged from a blend of Gujarati and Western cuisines courtesy modern chefs.  
Commonly Used Spices & Seasonings
Spices play a pivotal role in most of the Gujarati dishes. The spices and seasonings commonly used in preparing Gujarati cuisines includes hardar or havej (turmeric powder), elaichi (cardamom), jeeru (cumin), kothmir (coriander), aambli or aamli (tamarind), kesar (saffron), god (jaggery), kokum (garcinia indica), methi (fenugreek seeds and leaves), pudina (mint), hing (asafoetida), laving (cloves), soonth (ginger powder), lal marchu (cayenne pepper), chaat masala, mitho limbdo (curry leaves), lilu marchu (green chilli) and garam masala ( a combination of spices roasted and powdered). Traditional mixes of different spices used in preparing different Gujarati items are considered to expedite digestion. Again some of the spices or combination of spices are avoided or used in lesser proportions during summer months such as Garam masala and its components.      
A sneak Peak at the Different Items of a Meal
Bhat (Rice)
Rice forms an integral part of a Gujarati thali, however its form may vary. It can be plain rice; a Khatta-mittha bhat that is a rice preparation boiled with spices and potato having a sweet and sour taste complimented with lemon peel; a biranj that is rice seasoned with sugar, dried fruits and saffron; a pulao where rice is prepared with vegetables, and khichdi. A rice pudding called doodhpak prepared by boiling rice with sugar and milk and seasoned with saffron, cardamom, almonds, cashews and raisins usually forms part of dessert in a thali.

CONSCIOUS CONSUMPTION: 3 Healthy Recipes for Old Age
Old age is a very sensitive time frame in a person’s life. The daily habits and routine can impact health easily. The food being the most crucial player in this. 
To keep health in There are various recipes out there that can be fun as well as healthy to consume. Detailed below are three such recipes. 
Ingredients:
WholeWheat Sugar-Free Banana Pancakes: 
2 bananas (ripe)
½ cup of whole-wheat flour
2 eggs
½ teaspoon of baking soda
¼ teaspoon of salt
Honey (optional)
¼ cup of milk
Oil spray
1 cup of fresh fruit, diced
Cook the rest of the mixture similarly.
Method:
First, mix banana, eggs, milk, salt and baking soda.
Blend all the ingredients together smoothly.
Now coat some oil in a pan.
Put 4 tbsp of pancake mix to it. Cook it on medium heat. Keep cooking until it turns brown.
Flip and follow the same steps.
Ragi Upma: 
Ingredients:
1 cup of ragi flour
1/2 cup of rava
2 tsp oil
1 tsp mustard seeds
A pinch of hing
2-3 kadi patta
2 1/2 tsp of finely chopped green chillies
1/4 cup of finely chopped onions
1/2 cup of finely chopped carrots
Salt to taste
1/4 cup of finely chopped coriander
Serve it hot.
Method:
On a medium heat, roast the Ragi flour(dry) and semolina. Keep cooking until it becomes light brown in colour.
Keep it aside when done.
Take a non-stick frying pan and heat some oil. Add mustard seeds to it.
Add asafoetida with green chillies, curry leaves and onion when the seeds start to crackle. On the low heat, keep sauteing.
Add carrots to the same pan and keep cooking for another minute.
Add the roasted semolina and ragi into the pan with salt to taste. Keep sauteing for another minute or two.
Put in 4 cups of hot water to the pan. Cook this on a low heat until the water evaporates.
Throw in some coriander, mix thoroughly. Keep this aside.
A pinch of fruit salt
Oats Idli:
Ingredients:
2 cups of oats
1 tbsp of mustard seeds
½ l of curd
1 tbsp of urad dal
½ tbsp of chana dal
½ tbsp of oil
1 cups of grated carrots
2 tbsp of finely chopped green chillies
2 tbsp of turmeric powder
½ tbsp of turmeric powder
2 tbsp of salt
When done, remove them from the steamer.
Method:
Take a tawa and dry roast the oats until they start to turn brown. In a mixer, make a powder of these oats.
Take a pan, first add oil, then toss in mustard seeds, chana dal, urad dal. Then let the mustard seeds crackle and dals to turn brownish.
In this pan, put in chopped green chillies, grated carrots and coriander
Add some turmeric powder and fry for another minute.
Mix in all this to the powdered oats. Then add curd and make a batter. Keep the consistency just like Idli's batter.
Add in as much curd to achieve the right consistency.
Oil the idli steamer plates. Put in batter into all areas of the steamer.
Steam them for around 15 minutes.
