Homemade chocolate recipe that is unbelievably easy to make with just 4 ingredients. Have you tried making chocolate at home? Yes, I’m talking about homemade chocolate made from scratch in the comfort of your own home! Making chocolate at home is not a tedious process as many assume. There are many methods to make this chocolate recipe but the one which works great for me is the sugar syrup method. The secret to making that perfect homemade chocolate that will give any store bought chocolate a run for its money is in preparing the sugar syrup to one string consistency. It is very very crucial to the making of a successful batch of homemade chocolate. You must achieve one thread consistency of sugar syrup which can be tested by touching the syrup between your forefinger and thumb. A thin string should be formed and should not break. If the string breaks, allow the sugar syrup to simmer for some more time.
Milk powder and cocoa powder are the important ingredients that go into the making of homemade chocolate recipe. I must mention that using good quality butter and cocoa powder is imperative. A chef once told me that margarine works best but I have not used it for health reasons. You can add different flavors like chocolate essence, vanilla essence, cinnamon or espresso. I have not added any nuts or any other flavors. Nuts like crushed pistachios, pecans or almonds make for a good choice. Alternately, you can roll the finished homemade chocolate in desiccated coconut or colored sprinkles.

Ingredients
 Cocoa powder 5 tbsps
 Milk powder 1 1/4 cups
 Butter 1/4 cup
 Sugar 2/3 cup
 Water 1/2 cup
Method for making Homemade chocolate
Sieve milk powder and cocoa powder and keep aside.
Heat water and sugar in a vessel and bring to a boil. Reduce flame and continue cooking till the syrup reaches one string consistency. Add the butter and mix well till it melts and blends with the syrup. Turn off heat.
Add the cocoa-milk powder mixture gradually (a few tbsps at a time) and mix well till glossy. Grease square pan or plate. Pour the mixture into the pan and smooth the top with a spatula allow to set for 10 to 15 mts at room temperature.
Place in fridge for 10-15 mts. Remove from fridge and use a cookie cutter to cut into desired shape.
 Wrap them in colored papers and gift to family and friends.
 You can add crushed nuts of your choice.
 You can add 1/2 tsp of vanilla essence at the time of adding butter. Alternately, 2 tsps of strong coffee mixture can be added.
 If using cinnamon, add 1/4 tsp to the cocoa-milk mixture and sieve.
 To check for one string consistency of sugar syrup - allow the sugar to dissolve in water. Continue to cook the syrup on low flame. It will begin to thicken. When you touch the syrup between your forefinger and thumb, a thin string will form and it should not break. If it breaks, the syrup should simmer for a little while longer.

1. Don’t shy away from salt!
These cookies are loaded with chocolate chips which is why the salt is perhaps a tad higher than you are used to seeing in your everyday chocolate chip cookie recipe. The balance of sweet chips with a salty dough is key to achieving the iconic chocolate chip cookie flavor. Take it a step further and top each cookie with a sprinkle of flake salt before baking.
2. Switch up the size.
Making different size cookies using scoops is a fun way to add variety to chocolate chip cookies. Just make sure you adjust cook time so smaller cookies don’t over bake!  Try using a ½-inch scoop to many tiny cookies and put them on some vanilla ice-cream.
3. If you like a flat, chewy cookie – try this!
In the middle of baking, gently slam the cookie sheet on your counter. This will release the air in the dough, resulting in that decedent ooey-gooey-ness. If you prefer a puffy cookie, throw your cookie dough balls in the freezer for about 10 minutes before baking. This will allow the dough to keep its shape while baking, giving you a cakier texture.
Chocolate Chip CookiesIngredients:
1 1/4 cups (6 1/2 oz./200 g) unbleached all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup (1 stick/4 oz./125 g) unsalted butter, at room temperature
1/2 cup (3 1/2 oz./105 g) firmly packed light brown sugar
6 Tbs. (3 oz./90 g) granulated sugar
1 large egg
1 tsp. vanilla extract
2 1/2 cups (15 oz./470 g) semisweet chocolate chips
Instructions:
Preheat the oven to 350°F (180°C). Line 2 baking sheets with parchment paper.
In a bowl, sift together the flour, baking soda and salt. In a large bowl, using an electric mixer on medium speed, beat the butter, brown sugar and granulated sugar until smooth, about 2 minutes. Add the egg and vanilla and mix on low speed until blended. Slowly add the flour mixture and mix just until incorporated. Switch to a wooden spoon and stir in the chocolate chips.
Using a small ice cream scoop or heaping tablespoon, drop the dough onto the prepared baking sheets, spacing the dough mounds 2 inches (5 cm) apart.
Bake the cookies, 1 sheet at a time, until the bottoms and edges are lightly browned and the tops feel firm when lightly touched, 10-13 minutes. Let the cookies cool on the baking sheets for 5 minutes, then transfer the cookies to wire racks to cool completely. Makes 30 cookies.

Heat the oil in a pan and add the garlic, onion, and ginger. All Purpose Flour / Maida - 1 cup
Salt to taste

Instructions
Take flour, salt, oil and rub oil into the flour. Add water and knead to a dough. Set aside for 30 mins.
Take filling ingredients in a blender except cashews, raising and oil. Blend till coarse. Add remaining ingredients and crush coarse. Set aside.
Divide the dough into equal small balls.
Take a ball and roll it into a small roti like.
Spoon filling in and seal the edges.
Deep fry in medium hot oil and fry on low flame till light golden for around 6 to 8 mins.
Drain and cool down.
Serve.

Chakli recipe with step by step photos. Chakli is a deep fried snack made from rice flour, gram flour, wheat flour or a mixture of lentil flours. They are also known as Murukku in south.
I am still making Diwali snacks and sweets before the badi Diwali (big Diwali) & laxmi puja tomorrow. Made quite a number of goodies today, but managed to click only two recipes, which includes this chakli and Cornflakes chivda.
Chakli or Chakri are made as a part of the Diwali faraal (Diwali snacks and Diwali sweets) in maharashtra and Gujarat. There are many versions of making chakli. Sharing today a family recipe of instant chakli or rice flour chakli.
You will need a chakli maker to prepare these chaklis. these chaklis are made from rice flour and gram flour (besan). I have not made them spicy, but if you add more red chili powder or even garlic-green chili paste, they will become spicy. I have given tips wherever possible in the step by step recipe.

How to make chakli recipe
1. First take the rice flour and gram flour in a bowl.
2. Add the carom seeds, cumin seeds, sesame seeds, turmeric powder, red chili powder, asafoetida and salt.
3. Mix everthing with a spoon.
4. Heat butter or oil in a bowl or small pan.
5. Add the hot butter or oil to flour mixture.
6. Mix the butter/oil with your fingertips with the flours.
7. Heat water till it starts boiling.
8. Add this hot water in parts to the flour mixture. Mix with a spoon.
9. Add more hot water as required and begin kneading.
10. Knead and form a dough.
11. Knead to a dough which is firm. Cover and let the dough rest for 30 minutes.
12. Apply some water in the chakli/murukku maker and place a portion of the dough inside it.
13. Tighten the lid and Press the chakli maker to prepare the chakli. move in rounds to get a spiral shape. Make the chaklis on butter paper or aluminium foil, so thats its easy to remove them. Tip 1 – if the chakli breaks while forming them, this means that the dough does not have enough moisture. Add 1 or 2 tbsp of water and knead the dough again. Tip 2 – if you are not getting proper shape, this mean that the dough is too moist. Add some flour and knead again.
14. Break the dough towards the end and press it to the last concentric circle of the spiral.
Frying chakli
15. Heat oil for deep frying in a pan. Take a small piece of the dough and check the temperature of the oil. If the dough comes up gradually, then the oil is ready. If the dough sits at the bottom, the oil is still cold. If the piece of dough comes up briskly and quickly, the oil is too hot. Tip 3 – have a bite into the piece of dough and if it tastes hard, add a 1 or 2 tsp or ½ tbsp of oil or butter to the dough and knead again.
16. Lift the chakli gently and slid into the hot oil.
17. Fry 3 to 4 chaklis at a time. Don’t over crowd the kadai or pan while frying. Tip 4 – check the first batch of chakli. If it appears that the chakli has absorbed oil or breaks in oil, then add some rice flour, about 1 to 2 tbsp and knead again. This happens if too much fat has gone in the dough.
18. Make chaklis with remaining dough on the butter paper. Cover them with a dry kitchen napkin, so that they don’t dry out.
19. Fry the chaklis till golden.
20. Drain chakli on paper towels to remove excess oil.
21. Fry the remaining batches in the same way. Once the chaklis are cooled at room temperature, then store them in an airtight box or jar.
22. Serve chaklis plain as a snack with some masala chai.

1 teaspoon red chili powder or add as required
a generous pinch of asafoetida (hing) - optional
1 tablespoon sesame seeds - white or black (safed til or kala til)
oil for deep frying
salt as required
InstructionsMaking Dough

Notes
I have not made them spicy. To make the chakli spicy, you add more red chili powder or even garlic-green chili paste.

1 cup all-purpose Flour/ Maida
1 cup chana flour(gram flour)
1 tsp ajwain/carrom seeds
To taste salt
1 cup dry coconut/dessicated coconut
2 tbsp sabut dhania(coriander seeds)
1 tbsp Jeera /cumin seeds
1 tbsp saunf(badisheb) fennel seeds
1 tbsp sesame seeds (til)
1/2 tsp khaskhas(poppy seeds)
1/2 tsp Hing/asafoetida
to taste powdered sugar
1/2 cup jaggery
As needed oil to deep fry
2 tsp tamarind
1 tsp chilli powder
Steps
In a bowl mix maida, chana flour, ajwain, salt with oil
Knead, once mixed well in a medium consistency and keep aside
In a pan dry roast, dry coconut, dhania seeds,jeera souf,sesame,khaskhas,hing, sugar and salt (without oil)

1 cup chana flour(gram flour)
1 tsp ajwain/carrom seeds
To taste salt
1 cup dry coconut/dessicated coconut
2 tbsp sabut dhania(coriander seeds)
1 tbsp Jeera /cumin seeds
1 tbsp saunf(badisheb) fennel seeds
1 tbsp sesame seeds (til)
1/2 tsp khaskhas(poppy seeds)
1/2 tsp Hing/asafoetida
to taste powdered sugar
1/2 cup jaggery
As needed oil to deep fry
2 tsp tamarind
1 tsp chilli powder
Steps
In a bowl mix maida, chana flour, ajwain, salt with oil
Knead, once mixed well in a medium consistency and keep aside
In a pan dry roast, dry coconut, dhania seeds,jeera souf,sesame,khaskhas,hing, sugar and salt (without oil)

Take 1 cup soya bean flour and 1 cup chickpea flour, add 1 tsp red chili powder,1/2 tsp coarsely ground black pepper,1/2 tsp turmeric powder,1/2 tsp carom seeds,1 tsp cumin seeds,1 tsp coriander powder,Less than 1 tsp salt, 1/3 tsp baking soda and oil.Mix well.
Add water in small portions and make soft dough as that for a chapati. Cover and keep it for 15 to 20 minutes to set. 3/4 cup water is used to knead this quantity of dough.
After 15 minutes, Grease hands with oil and smoothen dough. Meanwhile put oil to heat.
To make soya sticks take sev making machine,Put the star jali, used for making chakli. Fix machine.
Grease thali with ghee. Press and make straight sticks.Cut these into 2 to 3 inch pieces. Check if oil is rightly hot then put these to fry.
Stir and fry well until golden brown, fry on medium flame. Fry all soya sticks likewise. Once ready take them out.Hold the laddle on edge of the wok.So that extra oil drains back to the wok. Keep in plate. It takes 4 to 5 minutes to fry soya sticks at once. When cool keep in any air tight container,and relish it for 2 to 3 months.

Navratri as per meaning signifies Nine nights which are dedicated to the Divine Mother or Shakti. This festival is celebrated in the month of Ashvin Sud from 1 to 9 (September- October). Navratri is the longest celebrated Indian festival.
Navratri History
The practice of goddess worship was prevalent in India since the time immemorial even before the advent of Aryans. Our ancestors have always placed Devi or Stree (as she was referred to) into the highest pedestal of the prevalent social system at that time and they worshipped her as Shakti. There are references in our Shastras which confirms the existence of such practices. There are several myths and legends associated with celebration of this Navratri Festival.
As per one legend Mahishasura the mighty demon worshipped Lord Shiva and obtained the power of eternity. So he started to kill and harass innocent people and set out to win seven lokas. Intimated by his power all the gods from swargaloka appealed to Lord Shiva to tame the demon. Then Brahma, Vishnu and Maheshwar (Shiva) united their supreme powers and created a divine being called Shakti or Durga the Warrior Goddess. Mahishasura who happened to see this divine beauty Durga got mesmerized by her beauty and approached her with the intention of marriage. Goddess Durga agreed to marry him but in one condition that Mahishasura should win over her in duel. Mahishasura who was proudy of his power agreed for the duel. The duel went on for 9 nights and the end of 9th night Goddess Durga beheaded Mahishasura. So the nine nights for which the war was fought is called Navrathri. The tenth day is celebrated as Vijayadashmi.
According to other legend King Daksha of Himalayas had a beautiful and Virtuos daughter Uma who had a wish to marry Lord Shiva. As a result she worshipped Lord Shiva and pleased him. Lord Shiva married Uma. Once Uma visited her parents to participate in a Yagna conducted over there, during that time King Daksha insulted Lord Shiva unable to bear the insults meted on her husband Uma decided to end her life by jumping into the agnikund where she was united with the eternity. Henceforth she was also known as Sati. Sati was reborn again and peace was restored between her and parents. In that birth also she married Lord Shiva and lived happily thereafter. It is believed that Sati comes to stay with her parents for 9 days in every year and that time is celebrated as Navarathri.
One hypothesis states that in ancient times Kshatriyas debarred themselves from participating any warlike activities during monsoon season. Once monsoons got over they found the time to start afresh with their war activities. So before the start of their war journey these Kshatriyas worshipped different aspects of Devi for 9 days which is today celebrated as the Navratri.
According to one legend Lord Rama who wanted to release Sita from the clutches of mighty demon king Ravana prayed Goddess Durga in nine aspects for nine days in order to gather the strength and power to kill Ravana. Those nine nights became to be known as Navrathri and on the tenth day Rama killed Ravana that day is called Vijayadashmi or Dashera.

Long drawn celebrations and festivities are a part of the social and cultural fabric of India. The Festival
Ganesha Chaturthi in most places in India is a day to invoke Ganesha, the god of wisdom, prosperity and good fortune. On this day, devotees worship Ganesha idols, perform the aarti and offer prasad of fruits and sweets, especially modak, which is considered to be the favourite of Lord Ganesha. In several places, clay idols of Ganesha, big and small, are made months in advance and thousands of devotees take them home to worship. It is customary to immerse these idols in water once the festivities are over with a prayer requesting the god to visit his devotees again the following year.
In Maharashtra
Ganesha Chaturthi is especially popular in Maharashtra, where the festival was invoked by the Maratha ruler Shivaji and then reinstated by political thinker and freedom fighter Bal Gangadhar Tilak. The festivities here last for about 10 days. Ganesha or Ganpati is welcomed into homes and massive pandals in the form of beautiful clay idols. In fact, there are several pandals in Mumbai, which compete against one another, by setting up larger and more impressive idols; there are also prizes to be won for the best pandal. It is a time for devotion and prayer with individual households organising an evening aarti with songs and hymns. Women dress up in the best of their saris and jewellery and make beautiful rangolis outside their homes. This is also a time for family gatherings, visiting friends, relatives and neighbours.
The idol immersion days are the first, third, seventh and tenth days. The immersion ceremony is another grand affair where devotees carry the idol in joyous processions accompanied by thumping music and dancing to the beats of the dhol. Devotees throw gulal at one another and perform a final aarti before immersing the idol in a water body like a lake or sea. The Ganpati festival in Maharashtra, especially Mumbai, is equivalent to the Durga Puja celebrations in Kolkata, West Bengal.
Celebrations Beyond Borders
This is one religious festival that is celebrated with equal fervor in India and abroad. The festivities among the Indian population in UK, USA and Canada is well known. Onam festival history dates back to the Sangam period, when Onam was used to be celebrated for a month. According to the ancient legends, this festival of rain flowers was celebrated to commemorate the arrival of Asura King Mahabali’s annual visit from Patala (the world underneath). The story revolves around the time when Kerala was ruled by the demon king Mahabali (grandson of Prahlad) who was known for his generosity. His growing popularity became a threat for the gods and they came to Lord Vishnu for seeking help. Sensing their concern, Lord Vishnu disguised himself as a poor Brahmin called Vamana.
When he arrived at the kingdom of the demon king, he asked Mahabali to grant him the land which he can cover within three feet. Being a kind hearted and charitable person, the king granted his wish and soon the Vamana started to grow in size and his first and second step covered the sky and earth. As the brahmin was about to take the third step, the demon king stepped up and asked him to keep his last step on his head which lead him to Patala. However for the good deeds of Mahabali, Lord Vishnu granted him a boon that he can annually visit his people which led to the celebration of the Onam festival in India.
Cultural Relevance Of Onam Festival
Onam festival in Kerala holds an important significance for the Hindus, but this occasion is enjoyed by every religion. The grand festivities and gala of this ancient festival eliminates all the religious disparities and propagates harmony in the society. Apart from the hindu rituals, it is witnessed that the Christians of Kerala also celebrate this annual festival in great zeal. Their rituals includes lighting of Nilavilakku which is followed by an arati and waving of flowers over the Bible which is called Pushparati. Dussehra, Kullu
Kullu, a town in Himachal Pradesh is renowned for its unique Dussehra celebrations. Idols of gods and goddesses from nearby villages are carried on the heads of worshippers and brought to the fair ground where they meet their main deity, Lord Raghunath.  For seven days, the valley wears a celebratory look. On the last day, the procession is taken to the Beas River where a pile of wood and grass is set afire; symbolizing the burning of Ravana’s Lanka.
What you can’t miss
• Participate in the Rath Yatra or the procession of Lord Raghunath on a decorated chariot led by the King of Kullu.
• Visit the fair to enjoy the folk music and dance. Do shop for authentic handicrafts. A tip for shoppers: Buy the traditional Pattu patterned shawl or cap.
Dussehra is celebrated as Navratri when Goddess Durga is ceremoniously revered for nine days. Here, Dussehra is synonymous with the colourful and vibrant Garba dance. You’ll find all of Gujarat dancing with their dandiya sticks and swinging to foot tapping folk music all night long.

•  Participate in the Garba dance wearing traditional Gujarati attire.
•  Match-making! If you’re single, Garba parties are a great place to meet that special someone. Go, try your luck!
n Delhi, Dussehra is celebrated as the day when Lord Ram defeated the evil Ravana. Temples are decorated, religious music is played and Ramlila is performed. Effigies of Ravana, Meghanad and Kumbhakaran are set on fire in almost every neighbourhood in the city with crowds cheering enthusiastically.
What you can’t miss
• Must watch Ramlila,a traditional theatrical representation of the Ramayana. Storytelling is in a traditional folklore style with fancy costumes and dramatic dialogues.
• Ravana’s effigy is burnt amidst fanfare followed by an amazing fireworks’ display that lights up the sky in beautiful colours.

I am compiling easy to prepare Indian snack recipes on my blog and sev puri chaat is one among many chaat recipes. Please pre-plan and prepare all the basic base ingredients used in chaats like the puris or papdis and chutneys ahead of time and store it. Papdis can be stored upto 2 weeks in a airtight container and chutneys store in the fridge upto 2 to 3 weeks I normally freeze it.  The assembly is very easy later. This recipe measure serves 4 generous portions. We normally indulge in such snacks during tea time or before dinner and also serve these snacks at birthday parties.
ngredients:10 Pre-made Papdis (Please follow the recipe and prepare ahead of time)2 Large Boiled Potatoes1 Large Onion (finely chopped)1 Large Tomato (finely chopped)2 Large Carrots (Peeled and grated)10 Sprigs Coriander (finely chopped)1/2 Cup Store-bought Sev (oma podi)1 Tbsp Chaat Masala8 Tbsp Tamarind Chutney8 to 10 Tbsp Chilly Chutney8 to 10 Tbsp Coriander ChutneySalt as per taste...
Method:I normally cook the potatoes in a pressure cooker and allow to reach room temperature and place the potatoes in the fridge until use. To prepare chaats always prep up some potatoes and reserve in fridge. I would normally thaw the potatoes 2 hours a head of time before serving and then start to peel the potatoes  and gently crush in-between my fingers to crumble it or I will use a fork, please make sure not to mash it. Once the potato is crumbled season with salt and reserve. Line a serving plate or tray with banana leaf we can also use fancy wrapping paper to make it look attractive depends on which occasion you want to serve these papdis.
Smear each papdi with 1 tbsp tamarind chutney. Top with crumbled potato followed by the onion, tomato and grated carrots. Before serving top with chilly and coriander chutney garnish with sev and chopped coriander, sprinkle chaat masala and salt serve right away...Enjoy😊

Sev is a deep fried snack made of gram flour and spices. It is crispy and spicy and kids and adults love this snack! I am always looking for ways to 'hide' vegetables in food that my kids like to eat and this is a wonderful way to include spinach in your kids snack. And as expected, they never suspected anything, they just found it real fun to eat the green sev!
added a whole bunch of spinach leaves for this recipe and I could get a faint taste of spinach(palak) while eating the sev, my kids didn't complain but if your kids are fussy then add a little less spinach. 
PALAK SEV
Preparation time 15  mins | Cooking time 20 mins | Makes about 3-4 cups
Ingredients
Palak (spinach leaves) - 1 bunch or 1 cup of palak puree
Gram flour/Besan flour/Kadala maavu - 1.5 cups
Rice flour - 1/2 cup
Butter - 20 gms (about 1.5 tbsp butter)
Red chilli powder - 1 tbsp
Turmeric powder - 1/2 tsp
Cumin seeds - 1 tsp
Ajwain (omam) - 1 tsp
Salt - to taste
Oil - to deep fry
Method 1. Wash the palak well and add it to a pan. Without adding water, allow it to cook for 5 minutes. The spinach leaves will leaves water and it will get cooked, no need to add extra water.
2. Once it's cooked, the leaves will shrink. Remove from flame and let it cool. Then transfer to a blender and puree till it becomes very smooth. Make sure it's very smooth otherwise it wont pass through the press.
3. In a wide bowl, add the besan flour and rice flour. Mix well. 4. Now add the turmeric powder, red chilli powder, cumin seeds, ajwain and salt. Mix again.
5. Add the butter and the palak puree, mix to form a smooth dough. Let it rest for 20-30 minutes. 6. Take the press and oil it lightly. Take a small amount of dough and fill the press.
Heat oil in a kadai. When the oil is hot, press the dough into the oil using the chakli/murukku press. 8. Watch carefully, when one side id done flip over and cook the other side. You can find out that it's cooked well when the bubbles become less and the frying sound also reduces.
9. Remove to a tissue paper and break it up once it's cooled. Enjoy the healthy snack!
Notes 1. Since I used 1 cup of palak puree the taste of the palak comes through slightly. You can reduce to 3/4 cup or even 1/2 cup of palak puree but adjust with the flour amount. 2. When you deep fry the sev, watch carefully. With the normal sev, you can find out with the color change that the sev is done but with this batter being green, it is very difficult to find out of the sev is done based on the color change. Be careful otherwise it will get burnt. I burnt two batches!! 3. I did not add ajwain since I did not have any. 4. Make sure the palak is well pureed otherwise it will not pass through the press. 5. Also if the holes in your press is very small then it is better to crush the cumin and ajwain seeds otherwise it will not go through the press. 6. If your kids don't like too much spice then reduce the amount of red chilli powder added. Experinece the taste of indian culture.
