#Repost @plantbasedrd #inrepostme @insaver.best —— Happy Friday! I’ll keep it short so you can get on with your day. Made this yesterday and it hit the spot for real. 😌 Just some simple grilled maple mustard tempeh, and it was everything I was hoping it would be. 👏🏽 Maple Mustard Tempeh 3 tbsp soy sauce (or gluten free alternative) 2 tbsp maple syrup 1 tbsp Dijon mustard 1 block tempeh Whisk mustard, maple syrup and soy sauce together and set aside. Cut tempeh into strips. Dip tempeh strips into sauce. Place coated strip onto preheated grill or in a non-stick pan or greased pan and cook for 3 minutes before flipping. Baste tempeh once flipped with more sauce and cook for another 3 minutes. Remove from grill or pan and drizzle with a little extra sauce before serving. For the salad, I used a base of massaged kale (rubbed with tahini, lemon juice and salt) and topped with cilantro, spring onions, sliced apples, cucumber, roasted red pepper, fire roasted corn and the cooked tempeh. 🥗 (at Santa Monica, California) https://www.instagram.com/p/CFBhycAlcHG/?igshid=wuqqkrgmwa2i

Thank you to @plantbasedrd for this amazing post I'm going to try to make it myself —— I forgot to set the type of produce I wanted for a recent @imperfectfoods box. 😅As a result I got a number of tomatillos. It was probably fate because tomatillos make the perfect salsa...and I was in the mood for salsa. 💃🏽 Tomatillo salsa is super easy to make and goes really well with empanadas. I have an empanada recipe on my blog with step by step instructions (link in bio). Only difference with this one is the lentil corn filling. Tomatillo Salsa 6 tomatillos, remove wrap and stem 1/2 small yellow onion 1 jalapeño pepper 4 cloves garlic 1/4 cup fresh cilantro with stems Juice of one lime 1 tsp oregano 1/4 tsp salt or to taste Preheat oven to 400F. Rinse skin of tomatillos really well to remove any stickiness. Place tomatillos, quarter onion, jalapeño, and 4 garlic cloves (I very lightly crushed it) on a lined baking sheet. Place in oven for 15 minutes. Allow ingredients to cool, remove our skin of onion and garlic then place all roasted ingredients in a food processor along with the remaining ingredients. Pulse all ingredients together until a nice chunky salsa forms. Set aside and place in fridge to set prior to serving. Lentil Corn Filling 1 cup brown lentils 2 cups vegetable broth 1 tbsp tomato paste 2 tsp sugar 1 tsp smoked paprika 1/2 tsp coriander 1 tsp garlic powder 1 bay leaf 1/2 tsp cumin seeds 2 tsp hot sauce of choice 1 tbsp creamy tahini 1 cup frozen fire roasted corn In a sauce pan over medium heat, add rinsed lentils, veggie broth, tomato paste, sugar, paprika, coriander, garlic powder, pinch of salt (optional), and cumin seed. Stir well and add bay leaf. Bring to a boil, then reduce to a low heat and cover lentils. Allow to cook for 15-20 minutes. After cooking you should have a small amount of liquid (about 1/4 cup) left of broth. Remove pan from heat and add tahini and hot sauce. Stir well, then add 1 cup frozen fire roasted corn and stir to combine and thaw. Use as desired. Wanted to share the full recipe here too. 🥜If you want to see me making this peanut noodle bowl, I uploaded the video to IGTV in case you missed it. Peanut Sauce 3 tbsp natural peanut butter 2 tbsp soy sauce (opt for gluten free soy sauce or coconut aminos to make gluten free; use low sodium if preferred) 1 tbsp maple syrup 1 tsp garlic chili sauce or sriracha 1 tsp mustard 1/4 tsp garlic powder 1/4 tsp ginger powder Juice of half a lime 2-3 tbsp water Add all ingredients to a bowl and whisk together until smooth. Adjust consistency of sauce to your liking, by adding additional small amounts of water until satisfied. 🥣 Baked Garlic Chili Tofu 1 block extra firm tofu drained and pressed for at least an hour or super firm tofu 2 tbsp soy sauce 2 tsp chili garlic sauce Set oven to 400F. After pressing tofu, cut tofu into even cubes and place in a bowl or Tupperware container. Add remaining ingredients, and if using a bowl just gently toss together. If using a tupperware container, seal container and gently shake contents to evenly coat tofu. Remove tofu and place on a lined baking sheet making sure tofu cubes aren’t touching. Place in oven for at least 25 minutes or until edges have browned. Remove from oven and serve as desired. (Alternative, feel free to pan fry until tofu is browned on all sides) Noodle Bowl 1 recipe of baked garlic chili tofu 2-4 servings of cooked noodles (I used 2 packages of Yakisoba noodles from @jslfoods, but ramen and rice noodles works too) 1 recipe of Peanut sauce 1 head broccoli 1/4 onion, diced 2 tbsp water 2 tsp soy sauce 1 tsp garlic chili sauce To a pan on medium heat add onion and sauté until softened, about 1 minute. Add in broccoli and 2 tbsp of water. Lower heat to low medium and cover with a lid for about 3-4 minutes. Remove lid and add soy sauce and garlic chili sauce. Stir to combine then add in cooked noodles and tofu. Add half the sauce from recipe and stir to combine. Serve as desired. They coming in!!!🙌🏻really happy with the gains I’ve been making. Def comes down to proper training and diet. I discovered @1stphorm last year and started noticing a lot of improvement in lean muscle mass. I’ve never been the type of person to get behind one supplement brand.
