I am facilitating a retreat at the beautiful Mapleton right now and I been loving sharing my plant-based food with the retreaters.
Today I had a few ingredients left over and found myself creating something brand new, which I just love to do when I have the space to create.
This is what I had leftover 👇🏽 so I threw it in a blow and it was amazing!
🥄 1 eggplant - so I sliced it up, rubbed the leftover pesto I had over the slices and baked it in the oven
🥄 Small amount of focaccia dough - so I baked it, then tore it up with my hands and used them as salty croutons
🥄 Cherry tomatoes
🥄 Basil - half a bunch
🥄 Rocket - small handful
I dressed it with olive oil, balsamic vinegar and salt.
I would have to say it was my favourite salad today. So refreshing, simple and a great way to use up all the bit and pieces in the fridge.

For my kanzuri salad we have the following ingredients. Dark red kidney beans seasoned white rice that involves soy sauce extra-virgin olive oil and fresh small grain rice. Next we have a vegan so – which is really killer vegan cheese mozzarella style on this followed by White raw. Onion’s. On mixed greens like arugula radicchio red leaf romaine Swiss chard and kale. Followed by two dressings one of them happens to be Briannas vinaigrette it has the picture of an artichoke on it. It’s a really killer sauce because there’s no sugar in it as well and it’s vegan. And finally we have this vegan Romano cheese sauce I’d like to make. And the sauce is on top or the Sriracha original sauce and the kanzuri sauce. To keep my peace I pray three times a day. This is one of the best salads I can recommend if you’re looking for something refreshing and if you’re looking for something with more pizzazz and clean fuel.
