💗Let me tell you how to create it 👇🏼 Once you read this, you'll be like, Wow, that's so easy. I'm totally doing that this week 😉
⭐Step 1: On the bottom of a platter, spread a generous of Hummus. Store bought or home made. Easy right?
⭐Step 2: Break up a cauliflower into florets. Then make your marinade in a bowl consisting of:
1/2 cup olive oil (if your cauliflower is small then less oil)
1 teaspoon turmeric
1 teaspoon coriander powder
1 teaspoon paprika
1 teaspoon salt
Cracked pepper or chili to taste
4 cloves crushed garlic
Mix together, then toss your cauliflower in marinade and combine well making sure cauliflower is well coated.
⭐Step 3: Bake cauliflower at 180 degrees for about 25 minutes.
⭐Step 4: Boil 1/4 cup of lentils. I love to use French/Puy Lentils. Set aside
⭐Step 5: Dry roast some slivered almonds
⭐Step 6: Lay your cooked, roasted cauliflower over the Hummus and top with cooked lentils and roasted almonds.
⭐Step 7: Top with fresh parsley or coriander. You choose.
⭐Step 8: Eat 🍽️

Can't get more simple than this Classic Dhal. I was so fortunate to marry into an Indian family 20 years ago, and my mother in law is an incredible cook. She taught me how to make a masala paste, and it's been on repeat ever since.
1️⃣ Sautee diced brown onion and 1 teaspoon in olive oil or coconut oil.
2️⃣ Then add 3 cloves, crushed garlic, and one easpoon grated ginger. Fry off a couple of minutes.
3️⃣ Add a tsp turmeric and tsp coriander powder along with 3 tbla passata to make the masal paste. This takes a couple of minutes.
4️⃣ Add rinsed lentils, handful diced potstoes' tsp salt, and hot water.
These lentils expand quickly, so add more hot water as needed.
Cook about 25 minutes.

I'm not going to lie, I was improvising today because some of the usual ingredients I use were not in the kitchen…
And.. must say was my best ever! Sometimes, it's a blessing to surrender and just trust yourself. GET CREATIVE. Anything is possible.
So here is a loose recipe
BASE
Almonds, hazelnuts, dessicated coconut, coconut sugar, coconut oil, almond butter, vanilla extract and rice malt syrup.
TOP
Frozen raspberries, frozen blueberries, coconut cream, cashews, and rice malt syrup
So damn good!

Growing up, I used to love Pollo Cacciatore. Having been plant-based for 17 years now, here's my version using tofu.
The exact same recipe, just swap out the chicken for tofu.
I like to bake the tofu after coating in cornflour, garlic powder, and herbs.
Then, using garlic and onion? Create your base. Add baked tofu, tomato 🍅 olives, white wine, herbs, and that's it.
A one pot dish is yes for me.
Serve with pasta or foccacia bread.

2 teaspoon mustard seeds
1 cup raw peanuts
1/2 to 3/4 cup lemon juice
