Irv’s Burgers, 1000 S La Brea Ave, Los Angeles (Mid-City), CA 90019
The classic LA burger joint, Irv’s Burgers started in 1946. The La Brea location, which opened earlier this year, is not their original but it feels like a classic LA burger joint on a busy intersection. And they have their own parking lot which is important in this area. The burgers are smashed.
The menu includes burgers (with the option to build your own or sub a Beyond Meat or turkey patty), sandwiches (BLT, pastrami, tuna melt, patty melt), dogs, fries, milkshakes, floats, cookies, and soda (canned or fountain). You can add an egg, pastrami, cheese sauce, and even fries to your burger.
Original roadside burger, single $8: pressed to order patty, toasted bun, American cheese, Irv’s sauce, lettuce, tomato, grilled onion, pickle. The burger looked great – carefully assembled. The toasted bun was still warm and soft, the American cheese melted, the pickles sour and crunchy, the shredded lettuce crispy, the tomato ripe. The smashing of the patty gave it a charred flavor and crispy bits. The sauce was sweet, reminiscent of Thousand Island dressing. It was bigger and better than In N’ Out’s burger.
There’s indoor seating and a large outdoor patio. They have pictures of celebrities on the walls (Irv’s fans?) and a red, white, and blue color scheme. If you take it to go, they write your name on the bag

I made French Onion smash burgers today, fuckers. I documented the process this time, so buckle up.
I sliced some sweet onions, pole to pole. I loaned my mandolin to a one-armed pickle maker, so these are as thin as I could manage.
Just a few minutes on the heat later and these little sumbitches are already looking more French.
From there, I just roasted these assholes until they could tell the difference between a baguette and pain ficille, but before they started protesting the retirement age.
Then, as you do, I smeared a little mayo on some toasted brioche buns, spread a healthy scoop of these sweet slimies on em, smashed some American Wagyu burgers out, and assembled.

Tortilla Smash Burgers with Guacamole & Pickled Onions
Let’s just call these Tortilla Smash Burgers irresistible! If you love a regular smash burger, you’ll love these even more! A crispy tortilla replaces the bun so you can really taste what’s inside! Seasoned ground beef, melty cheese and delicious toppings give you a burst of flavor when you take a bite!
A traditional tortilla smash burger (if that’s even a thing) has more of a mayonnaise based sauce and is topped with American cheese, lettuce and tomato, but I decided to switch up the toppings and use one of my favorite combinations…pickled onions and guacamole! I used a Mexican blend cheese as well. The beauty of these is that you can make them different every time and try different flavor combinations. I even had someone ask if ground turkey would be good and I think it would be delicious! The recipe is below and you must make these soon! I promise you won’t be sorry!
Other than the guacamole and pickled onions, I chopped a fresh tomato and added jalapeno slices for a little heat!
I purchased these fun taco stands from Amazon (linked below) and it made serving the smash burgers so easy and made a nice presentation! If you want to feed a crowd, make these ahead, reheat and then add the toppings. I used my counter top griddle and decided that I definitely need an outdoor black stone griddle for next time!
These burgers cook up very quickly and they disappear just as quickly so be sure to make plenty!
