Pampúshka (пампушка)
So the third food mentioned in the series is Pampushka (when Sherlock is criticizing the Borscht lol). Pampushky (that's the plural) are sweet or savory bread buns which are a side at meals. Kind of like dinner rolls. I'm going to share here a recipe for Garlic Pampushky since those seem to a)come up as the most common variant and b)cause I'm positive these would be delicious with the borscht.
Ingredients:
Buns
1/2oz (2 packets) of ActiveDry yeast
1/2 cup of water
1/2 cup milk
2 tsp sugar
2 eggs, room temp
Half stick unsalted butter (or you can use salted, but taste how salty it is and depending on that adjust the added salt)
1 1/2 tsp salt
3 1/2 to 5 cups of unbleached flour (no self rising!)
1-2 tbsp of butter or oil for greasing. (You can also use nonstick spray but I don't recommend it.)
Garlic sauce
2 garlic bulbs, about 12 cloves (or a tbsp of dried garlic powder; can also be measured with your heart here)
1/2 bunch of dill, minced (like around half a cup here)
1 tsp salt (again, adjustable to taste)
1-3 tbsp of melted butter or vegetable oil (I think butter tastes better)
To Make the Buns:
Open the yeast packets and pour them out in a large bowl. Heat the milk and water to very warm (but not hot! you should be able to dip you finger in without scalding yourself) and add half of each to the yeast. Then add the sugar and mix milk, water and yeast a few times with a spoon. Pour in the remaining milk and water. Let stand in a warm place for like 5-10 minutes so the yeast has a moment to wake up.
Beat both eggs and add them to yeast mixture. Stir to combine. Then add salt and stir again.
Gradually add in flour. I like to do this by quarters when I'm making breads. Add a quarter of flour and stir it in until just combined, then add another quarter, stir, so on and so forth until the dough becomes a dough. You'll know it's become a dough when it's difficult to mix with a spoon. You also might not use all of the flour called for, that's okay.
Grease a large bowl with the butter or oil for the dough to rise in after kneading. Transfer your dough to a floured surface and knead with your hands. The dough will be sticky and stick to your hands, that's ok. Just keep kneading until it's a bit less sticky (about 10 full kneads) and it holds a ball-ish shape.
Transfer the dough to the greased bowl and cover it with a hand towel or cling film. Let the dough rise in a warm place for 1-1 1/2 hours. (I like to turn my oven on it's lowest setting-200°F- and set the dough on a trivet on top of it. If it's a cold day I recommend keeping the doors and windows closed during this part. If it's a hot day you'll probably be fine.) Should roughly double in size.
Grease hands with butter or oil and knead the dough one more time (5 to 10 full kneads). If it's still sticking to your hands you can also ad more flour to your kneading surface and knead it in.
Divide the dough into little balls of equal size (around the size of a baseball for reference) and shape them into round buns.
You can use a flat pan or round pan to bake these. Whichever you choose, either coat with butter or line with parchment paper (if using nonstick you can use neither I guess, but I don't use nonstick). Place the buns side by side about an inch or so apart if you want them to have a crust, butt them up against each other if you want more of a pull apart bread.
Cover the dough balls once again lightly with a towel or cling film and place it in your designated warm spot for a rise. Should only be about 30 mins to an hour; they should double in size.
While the buns do their final rise, preheat your oven to 350°F and make sure you have a rack in the middle of your oven. Also take a shallow pan and fill it with a bit of water. You'll be putting this in the oven on a rack under your pampushky tray; the water will create a steam effect.
Once the buns have completed their final rise, remove their cover and put the tray in the preheated oven. Then, put the tray with water under the tray with the pampushky. Bake the buns at 350°F for around 18-20 minutes. They should become a light golden brown. Watch them towards the end because, like all breads, they'll burn quickly. It's okay if they take a bit longer then 20 minutes as long as you're watching them. As soon as you pull the buns out of the oven, brush them heavily with the garlic sauce.
To Make the Sauce (which I would do while the breads are in their final rise):
Wash and chop the dill finely, if using fresh. Peel and crush the garlic, if using fresh. Combine the dill, garlic, parsley, salt, and butter/vegetable oil. Mix to combine and let the sauce rest on the counter at room temp until ready to use.
Eat them hot or let them cool! Either way they'll be yummy!
