Cheese Tier List
I am lactose intolerant and american but goddamn do I fuckin love cheese. I haven’t had a lot of different types but I’d like to think I know a fair decent amount of them.
American: F
Fuck American Cheese. You are not worthy of the moniker. You are oil and starch and filler and a splash of milk that only pretends to be cheese. You disgust me.
Asadero: C
It’s pretty good but nothing special to write home about. I do like it in shredded blends and they’re great for more latin inspired dishes… although tbh I can’t parse it alone. This ranking can certainly go up given further research.
Asiago: B
Very good, especially as a companion to parmesan. I’m not the biggest fan of it solo, but I appreciate what it brings to the plate.
Babybel: B
It’s got a very good texture to it that I think beats out the bland mundanity of the taste. The packaging is cute too. And the serving size is great for snacking. I’d rather eat their other varieties, typically white cheddar, but the OG is more than acceptable.
Bellavitano Merlot: S+
This is the most delicious cheese I have ever eaten in my life. It is also the one I can digest the least. I will eat a tiny block of this despite the horrible abdominal cramps that come with it because it is just that worth it. I especially love the way the grape flavor was paired; it’s not too much to overpower or be overpowered by the cheese. I love you Bellavitano. And I hate my local stores for not carrying this specific flavor. I haven’t had the others yet.
Blue: S
BLUE. MY LOVE, I’M SO SORRY I FORGOT ABOUT YOU! you smell like hell but you taste like heaven. you are the best thing to dip chicken wings into. I love you blue.
Brie: B
Very very rich. I’ll have it every once in a while and like it but I won’t eat it very regularly.
Camembert: C
Didn’t really stand out much to me but it wasn’t bad.
Cheddar: S
Probably the ultimate everyman cheese, and the one with the most potential. White, Sharp, Smoked, I love how adaptable it is. I don’t care much for mild but the more intense and flavorful kinds more than make up for it. Sharp cheddar is also very very good on apple pie.
Colby: D
Mediocre at best, boring at worst. It’s about the baseline for edibility for me. It’s ok if I encounter it but I wouldn’t go out of my way for it.
Colby Jack: C
Slightly better than Colby alone but not by that much.
Cottage: X
I am not a fan but it’s just that the texture bothers my palate. I refuse to give it a bad ranking just for that.
Cream: C
I wouldn’t eat it on its own, or as a condiment. But it’s a fantastic ingredient in other things.
Feta: A
Supremely underrated because Americans are always like EW GROSS ITS FROM A GOAT like shut the fuck up Karen goats are way less disgusting than cows, you’re just scared of a little word called FLAVOR. Now I maybe wouldn’t eat a block of it like I would an S rank but there is nothing else that goes as well with beef onion & pita.
Fondue: A
This doesn’t really count because any cheese can be fondue but all of the cheese I’ve encountered that is SPECIFICALLY “fondue cheese” has been great. It’s kind of cheating but melted cheese is a great thing to dip shit into.
Fontina: B
It’s not bad, but it’s not my favorite. Very light.
Gorgonzola: C
Pungent but doesn’t really have that much substance. Maybe I just had bad gorgonzola. That bumps it up from D.
Gouda: A+
I want so badly to give this an S but it’s just too rich to eat like it’s an apple. But it’s great for sandwiches with lighter meat.
Halloumi: A
It was surprisingly way better than I expected it to be. I would definitely get it again, and explore different ways to heat and eat.
Havarti: S
The lightest fluffiest and best pairing for darker meats bar fucking none. I’d absolutely snack on this all day because it’s light enough. I love you havarti. 😘
Mascarpone: A
Real good but better as an ingredient than by itself. And if you pronounce it “mar-ska-pwn” you’re WRONG.
Monterey Jack: C
It’s alright. Boring, but alright. I prefer cojack for the slightly increased flavor palette but I’d pick others first.
Mozzarella: SSS
Come on now. We all know this is the king of cheese. Melted on top of bread, paired with olive oil, garlic, basil, pesto, and anything tomato, HOLY SHIT PLEASE GET IN MY MOUTH. Or chicken, red onion, and barbecue sauce. Or fried potatoes and gravy. Even solo in string form it is just… the best. Perfect texture. Perfect flavor. And the best part is, I’ve only ever had shitty mozzarella. There is nowhere to go but up. I don’t even use cold mozzarella on sandwiches very much, but it has earned this ranking through blood sweat and tears.
Muenster: A+
Chef’s kiss. It’s mozzarella with a little bit of edge to it. I prefer it to mozz on sandwiches but that’s just about it.
Nacho: D
It’s serviceable on certain things in ways that most other cheese can’t but I couldn’t eat it alone. It’s… not good.
Parmesan: A
It’s special. There’s nothing else quite like it. I don’t know how to describe it. It’s just parmesan. I’m not quite ready to put mustard on it just yet, but I’ll definitely put it on all things even remotely Italian.
Pepper Jack: B
It makes jack cheese better but not by a high enough margin to rank it any higher. Also I’m not the biggest fan of pepper. But if I was, it would be incredibly appealing because the flavor profile suits it.
Provolone: D
I fucking hate provolone. It’s just so goddamn boring. I only eat it at Subway where that’s the only goddamn option and I haven’t eaten at Subway in like five years. I haven’t eaten Subway since Jared got arrested. Freak.
Ricotta: B
I don’t like it alone for the flavor, but it is one of the best ways to add volume to something like lasagna.
Swiss: A
I don’t think the flavor is all that good by itself, tbh. But it is a very mellow low-to-the-radar kind of cheese. It’s a good combination with other things. It’s like the mortar to the bricks that are recipes. It’s the best companion to ham bar none. I respect it more than I like it on its own.
Velveeta: F
FUCK YOU VELVEETA IS NOT ACTUALLY CHEESE. it is the vanilla extract of cheese because if you put s little bit of it into the recipe it can be good but if you want to eat it straight you are a freak so DNI.

Gonna make this all one list for convenience and my own sake lol
Papa i:
Licorice. Black licorice. The strong kind that you can usually only buy in like, German food marts that come in the strong beige coloured bags with strings. 
Remember those old fashioned root beer barrel hard candies? He’s almost always got some of those in his pockets for the Siblings around the grounds... and himself. 
Prefers things that last a while, since he doesn’t have time to “snack” when he’s in the garden, or studying writings. He relies a lot on gum, hard candies, or tall drinks that take ages to run out. 
His favourite meal is a comforting Shepherd’s Pie with a side of hot black tea. Pinch of sugar, no cream. Something about the density of the meal and the bitterness of the tea makes him feel recentered. 
Papa ii:
Secondo likes to indulge, but not as much as you would expect. 
His favourite meal is a medium rare filet mignon with a pinot. He loves rich and bold tastes, juicy meats, and small tasting portions that he won’t fill up on. 
He greatly prefers things that he can eat and go back to working quickly, things like charcuterie boards or finger snacks. Grapes, nuts, bites of fruits, etc. 
It’s for this reason that he dislikes meals like soup, chili or goulash. The meals are too involved and often require the person to make noise while they eat-- another thing he finds distasteful. 
Prefers smoked, aged or herbed cheeses. Primo makes a great herbed havarti that he’s in love with. His lunch meats or tasting plates are often peppered, smoked, or mild tasting. 
He avoids salami or any “hard” red meats like that. Heartburn. He won’t admit that though. 
His favourite meal is a simple one. Abbey baked crackers, herbed cheese, smoked gouda, peppered and shaven turkey, and a cup of crisp green grapes on the side. 
Papa iii:
He’ll eat almost anything that you put in front of him, even if he isn’t the biggest fan. He was raised to be polite, so he’ll at least give it a try. 
His favourite late night snack after writing is a root beer float. Loves the fizziness that makes a small crust around the ice cream, and the bite of the root beer itself.
Terzo loves expensive and decadent foods that show off the wealth of the Emeritus family line, but he knows when to reign it in and settle for a nice sandwich instead... that being said, he doesn’t do that often. The Abbey bill is astronomically high from the kitchens. 
Papa can cook, but he prefers not to very often. He prefers to ask his Ghouls to find something for him. Cooking reminds him of his mother who he lost early, so he tries to avoid it if at all possible. 
His favourite meal to have, as a sit down meal, is a thick and rich chicken fettucini alfredo with garlic bread. This is also his comfort meal for himself. It’s something he’ll cook for you if you’ve had a bad day, but there’s a very small chance you’ll know it was from him. It just appears. 
He stashes candy around his offices, and prefers things that last a while but that he can chew on. Gum, licorice, caramel, toffee, etc. Focusing on his chewing keeps his mind focused on whatever he’s doing at the time.
His vice is milk duds.
Copia:
He loves strong tastes. Black tea, black coffee, mint, etc.
Copia loves those chocolate covered espresso beans and always has a small baggie of them inside his cassock pocket. He says it keeps him going “like a eh.. jackrabbit, yes?” without making him take the time to sit down and eat.
THIS PAPA INDULGES. Anything rich, you name it. Fudge cake, lobster tail, crab cakes, creme brulee, baked alaska, pot roast... He loves the indulgence of a large meal and a satisfied stomach. 
Post sex, he’s a big fan of eclairs. It’s light enough but it feels substantial, and he loves relaxing and being decadent with his lovers. Also loves food that he can feed to you-- grapes, strawberries, bites of cake, shrimp, etc. 
His favourite meal is whatever he’s currently eating, although he does have a deep love for lasagna and garlic bread. 
Copia’s favourite candy is a tie between Skittles and stealing Papa iii’s milk duds. They just taste better when they’re obtained through thievery.

What kind of cheese(s) are your favorite(s)?
Ohhhh, don’t ask me what my favorite child is...
Havarti is a big weakness for me, especially when it has dill. Smoked gouda is AWESOME but it gives me a migraine. Goat cheese I love mostly as a spread in a sandwich or a filling, but damn is it good. Hm...I loooove soft cheeses a lot. 
I think the only cheese I don’t really like is monterey jack and derivatives of it. I can only eat it in mixes, like colby jack or mexican cheese blends, but even then I’d prefer to not have the monterey in it at all.

ugh fuck thats difficult 
so like i tend towards the softer or harder cheeses — the middling things like cheddars and swisses and the like arent my faves (altho ill fuck with a good subtle emmentaler), but i love love love a good gruyère or a manchego or aged asiago, and i will Fuck Up anything blue. not big on most goat and sheep cheeses, tho with the right herbs i definitely can be won over. i ADORE a brie, especially a baked brie (altho keep jam the fuck OUT!!! if i want a baked brie i want two things: brie, and pastry!!!! i do NOT need JAM around COMPLICATING my TEXTURES). i love a smoked gouda in the right context. i do not care for havarti one bit.

Recipe development was always one of your favorite parts of the job. Inventing some new product that no one else had thought of, testing it out, and then tasting the end result was a satisfying process. Baking was a science and in order for it all to come together, you had to have the right ingredients in the correct amounts. Some people struggled with baking because it required more attention to detail and a lot of patience. You loved it though, every bit of it. Ever since you started making cookies in your mother’s kitchen as a young girl, you felt at home.
In order to avoid wasting time and ingredients, you grabbed a few of your current recipes and took them back to your desk to formulate a plan. After about 20 minutes, you decided to modify a scone recipe and a filled croissant. Having written down your adjustments, you grabbed your bag and told Wanda you’d be back shortly before walking down the street to the market.
Stepping inside the store, you felt your stomach clench at the memory of the last time you were there, that night when you’d run into Jimmy. It was mid-morning, though, and the chances of having a repeat interaction were slim to none. Fetching a basket, you walked down the aisle and selected the ingredients you had in mind before stopping at the cheese department and then checking out.
Back at the bakery, you set out your savory ingredients and got to work. You already had a sweet scone that was selling well in your pastry case. The flavor pairing of tart, zesty orange and rich dark chocolate pieces filling the scone and then drizzled with an orange glaze after baking made for a tantalizing treat.
English scones were much like a crumpet or a buttermilk biscuit, but a little more complex. For the savory version you had in mind, you weighed out your dry ingredients like flour, baking powder, and salt, but reducing the amount of sugar so the other flavors would be more prominent. Cutting up the butter into small cubes, you mixed them into the flour until the butter pieces were the size of peas. Next you slowly added the heavy cream and egg mixed together until it became a dough. Last came the sun-dried tomatoes and cubes of Havarti cheese that would bubble and melt to perfection in the oven. The thought of it made your mouth water.
You turned out the dough onto a floured surface and kneaded it with your hands a few times before patting it into a circle and then cutting that into triangles. You placed each one on a baking sheet, brushed them with cream and sprinkled coarse salt on top before sliding them into the oven. Washing your hands, you cleaned up the table and checked in on Wanda before starting your next project.
The filled croissant combination seemed a little odd, but if it worked out, the taste would be divine. Plucking the pears from your grocery bag, you peeled one of them, halved it, removed the seeds, and then began to slice it thinly. After rolling out a piece of croissant dough and cutting it into long triangles, you spread a small amount of spicy mustard on the wider side, placed a slice of smoked gouda cheese over that, and then layered the thin slices of pear on top. Carefully, you rolled up the croissant and placed it on a baking sheet.
It was easier to adjust and experiment with the croissants, since they were rolled individually. You put more cheese in some, more pears in others and then did a few without the mustard, in case the taste was too overwhelming. You wrote the contents of each one on a piece of parchment in black marker and then brushed them with an egg wash before baking. As the timer went off for the scones, the croissants were ready to go in.
You waited a few minutes before trying the scones and as you glanced at the clock, you were surprised so much time had passed. Caught up in your new experiments, it was a shock to realize it was almost lunchtime. Your internal clock was out of whack anyway, given your extra early wake up call this morning. Just then, your phone chimed so you pulled it out and woke up the screen.
A text from “B”. Seeing the initial pop up on your phone made you smile, and just like this morning, there was an attachment. He seemed to be respecting your desire to keep your interactions anonymous, so you weren’t expecting a selfie or anything. However, you also weren’t expecting a picture of a slice of pizza with the sign for Ruby Rosa’s Pizza. The caption read “Best slice in the city.”
Grinning with a bite of your lip, you pulled up the keyboard to respond.
FG: I might have to fight you on that. Their sauce is much too sweet. I prefer Capizzi’s.
“B” replied with an emoji of a shocked expression with a hand on each cheek.
B: You can’t be serious. Their crust is all wrong! I really thought we could still be friends after the whole Beatles/Stones debacle but this might be the last straw…
Letting out a chuckle you, rested your hip against the table and replied.
FG: If that’s how it is, then so be it. I stand by my pizza. You and your sugary sauce deserve each other. I should have known you’d love it, considering your THREE SUGARS in your coffee.
Those three dots appeared and lingered for a few minutes, so you took that time to taste one of your scones. They were delicious and just as you had hoped, the melted cheese had created delectable little pockets of gooey-ness in the scone, but the sun-dried tomato flavor was much too subtle. It would take at least one more adjusted batch to get it right. You weren’t surprised; sometimes you had to re-make something five times before the recipe was perfect.
B’s response finally arrived.
B: Whew. Alright, alright. We’ll drop the subject for now. I’ll definitely convert you one of these days, though. So how’s your day been?
You felt a flip in your stomach first of all, because it meant that he wanted this…whatever it was…to continue. And honestly, so did you. It had only been a short time, but hearing from him had become the highlight of your day. It didn’t matter that you didn’t know his name or what he looked like, in fact it was part of the fun at this point. Pecking out a reply, you sent it and then made notes on your scone recipe as you awaited his reply.
FG: Day started earlier than I’d like, and ran into that insufferable person but it’s been all uphill since then. :) How about you?
B: Man, can’t that jerk take a hint? Franny doesn’t need any of your dickhead-ed behavior. Especially running on less sleep. ;) I’m sorry that happened again. Need any more distractions? I’m available.
Your heart skipped a beat at that last phrase. He probably didn’t mean it in the way you might have interpreted. Maybe? In fact, since you knew almost nothing about him, it was possible that you were conversing with someone who might be…involved? Married? It was a ridiculous notion, since all you were doing was texting, but there was definitely a flirty tone in your conversations. Or you thought so. It was difficult to tell through text.
Just as you were about to respond, you got a phone call and the name on the screen made your face light up as you answered.
“Hi, dad,” you said with a smile.
“Hey, how’s my little Flour Girl? The big city still treating you alright?” you heard your father’s voice through the phone. You spoke at least twice a week and he always asked how you were getting by in the city, even after living there over a year and half. You loved that he still worried, though, so you just smiled and shook your head.
“The city is fine, dad. The shop is still doing great. How are you?” you asked, peeking in the oven at your croissants at the same time.
“Oh, I’m just fine. Not much changes around here, not like in the city.”
You grinned, knowing how much your dad preferred the quiet, small town life. You told him all about your new savory pastries and everything about the shop, but you held back the information about Barnes Bakery and this new “competition” with Jimmy, or whatever it was. That information would only make your father worry and besides, you had it under control.
Your parents had always been supportive of your career choice, never failing to taste your latest cookies or cake experiments growing up. Some of your first memories were of spending time with your mom in the kitchen. Whenever your dad came home from work, most nights he found you in the kitchen covered in flour. Thus, you became his little Flour Girl. A play on words that also rang true.
When your mom got sick during your senior year of high school, you became obsessed with finding new recipes that would sound good to her and that the doctors would approve. So for starters, Nicely always makes his own hamburger patty, he uses special seasonings and I am not permitted to have that information, so we will make this recipe using any regular patty or even one with your special seasonings. No matter the patty, cook it to your liking and add cheese. (We love cheese, and we use anything from smoked Gouda to brie, swiss to sharp cheddar) Allow patty to rest while cheese melts.
Heat up a waffle iron. (Yes waffle iron) when hot, add tater tots. cook until brown and crispy. When the tater tot bun is complete, add the Italian dressing, and patty melt. Serve warm.

February 26th
It’s not the day after like it had been when I wrote the journal entries before. Now I’m sad, a little more in love, and a lot less creative.
It’s been the most domestic morning we’ve ever had together and yet one of my favorites.
I fell asleep last night before you even selected anything on Netflix. Head hit the pillow and I fell into a deep sleep. I woke up to you still sleeping but not minding when I rolled over closer to touch you. It was a slow, quiet wake with soft morning kisses before I decided to crawl out of bed.
Now you’re joining me in the shower. The shower is plenty big for both of us but the water is only enough for one of us to stand under. This morning I don’t mind though, I just want to be close to you.
Your grey tank top is on the bathroom counter so I slip it on with my Calvin Klein panties to make you breakfast. We really didn’t buy a lot knowing we only have a hot plate. Really don’t want to fuck this up or I’lll never live it down. Maroon Five’s Sunday morning song seems fitting. Crank it up to an appropriate morning volume.
Eggs, check. Cheese, check. Bacon? Prosciutto will have to do. Do we have oil? Yes!
Hmm lets see how this prosciutto fries...looks kinda grey. Oh well. Crack two eggs on the counter because that episode of Chef says its a better way of keeping shell out of the pour and avoids breaking the yolk. Nice, it works.

How to Build a Simple Cheeseboard
My favorite tips and tricks for building the perfect cheeseboard with all your favorite charcuterie that is simple, beautiful and made in just minutes!  Perfect for everyday entertaining!
Okay so cheeseboards are kind of my jam.  I LOVE charcuterie and always like to put boards together any time I have people over or we head to wineries because not only are they beautiful, but there is always something for everyone!  A good charcuterie board should have a variety of cheeses (I like to have at least 3 different options), a variety of meats, fresh fruit, nuts and crackers.  Think salty, sweet and savory!  I also like to throw in a seasonal fruit spread and pop in fresh herbs for a little touch.  Details are everything!
These are my tips and tricks for building a basic cheeseboard, but the great thing about these beauties are you can make them as simple or as fancy as you’d like.  Cheeseboards are literally great any time, whether for a small girls night, a picnic or winery outing, a celebratory event or even a big holiday party!  For more holiday cheeseboard inspiration, be sure to check out my ultimate patriotic cheeseboard and my holiday cheeseboard!
WHAT YOU NEED TO TO MAKE A CHEESEBOARD
1. The cheeses
I always like to have a wide variety of cheeses because everyone is different in what they prefer, but I like to serve at least 3 different types on my board – firm, soft and semi-soft.  A few staples to have are soft cheeses like brie or burrata, semi-soft cheeses such as havarti, fontina or gorgonzola and firmer cheeses such as aged cheddar, manchego or smoked gouda.  I also like to throw on a strong blue cheese as well because some people just love it!  Variety is key.
I also like to cut my cheeses in different ways too, which makes styling the board much more fun and adds dimension.  Cut your firmer cheeses into cubes, the softer cheeses into slices and I like to leave the brie and blue cheeses whole, while crumbling the blue just a bit to give the overall board some texture.  You really can’t go wrong though because no matter what you do, it is sure to be a beautiful mess!
2. The meats
Along with the cheeses, I always like to have a variety of cured meats on the board as well.  Some of my favorites are spicy salami, prosciutto, soppressata, and capicola.  I also like to display them fun ways too, thinner slices rolled up and arranged around the cheeses or bowls while thicker slices I like to pile up to fill in any gaps which adds more texture and dimension to the overall board.
3. Fresh and dried fruit
When building a cheeseboard I like to keep things seasonal depending on the time of year.  For instance, in the spring and summer months you could have fresh melon (which goes great with prosciutto!), a variety of berries, mango, and apricots.  In the fall and winter months you could add fresh pears, apple slices, oranges, pomegranate seeds and cranberries.  Fruit is always a hit and the sweetness pairs so well with the salty and savory aspects of the board.  Keep it simple by using whatever you already have on hand in your fridge!
In my opinion, grapes and figs are fruits that are winners year round and are my personal favorites for cheeseboards.  Grapes just always look amazing when displayed and I always like to add a fig spread to top the cheese and crackers.  Dried fruit is also a great addition as well and is actually really helpful when needing to fill in little gaps on the board.
4. Assortment of crackers
Your cheese needs a vehicle, right??  I like to use an assortment of different types of crackers to add a nice variety and options that everyone will love:
Salty crackers
Seeded crackers
Table water crackers
Sliced baguette
Try getting different size and shape crackers as well.  To display them, you can spread them out around the cheeses, fan them out in various places and even pile them in any gaps you may have on your board.  The possibilities are endless and offering a good variety is always a plus!
5. All the extras!
Here is where you add all the little fun items and garnishes that not only make your board super pretty to look at, but so much more abundant!  Try adding a variety of nuts such as marcona almonds, spiced pecans or cashews, salty items like olives or pickles, and I love throwing in fresh herbs like rosemary, thyme or sage (depending on the season) to add a little greenery which is the perfect finishing touch!
Another extra I love to add (as long as you aren’t displaying your board outside on a 90 degree day) is broken up chocolate!  I mean who doesn’t love the delicious combination of wine, cheese and chocolate?  I like to use a salted dark chocolate, but feel free to choose whatever is best for your board!
CHOOSING A BOARD
So depending on where I’m displaying my platter, I usually always opt for a medium sized board, but this is where you can get creative!  Don’t feel like you have to stick with just a classic cheeseboard, you can use a cutting board, a round or square wooden pizza board, different types of serving platters, slate or stone boards or you can even use a baking sheet.  Any flat surface will work.  You can even place some brown paper down and build it right there on your table!  Talk about the ultimate centerpiece.  You can easily use whatever you have at home, but THIS board is a personal favorite for everyday entertaining and the handles make it easy for transporting!
TIPS AND TRICKS
