No Bake Energy Bites (Vegan)
Ingredients:
1 cup rolled oats
1/2 cup vegan chocolate chips
1/2 cup ground flaxseed meal
1/2 cup crunchy peanut butter
1/3 cup maple syrup
1 tsp vanilla extract
Directions:
Combine all ingredients together in a bowl (I recommend adding the chocolate chips last after the other ingredients are mostly blended together). To make the process easier, you can use a mixer. After blended, form the mix into balls. It could help to use an ice cream scooper or spoon.  
Store in the freezer until set. You can keep the bites in the freezer or the refrigerator depending on what you prefer (I keep mine in the freezer). 
Makes about 10 energy bites; the amount may vary depending on how large or small you make them.
