Pomegranate Maple Fizz Cocktail !
Ingredients:
1 pomegranate
2 tbsp maple syrup
500ml indian tonic water
2 shots of vodka (optional)
Instructions:
Remove the arils from the pomegranate. If you place them in a bowl of water, the fleshy bits will rise to the top and you can scoop them out.
Place the arils in a blender and blitz until it turns into a juice.
Pour into a fine sieve over a mug and discard the seedy pulp. It will produce around a 1/4 cup of pomegranate juice.
Add the maple syrup and stir. Then divide between 4 glasses. Add a shot of vodka (optional) and top with the tonic.
Serve and enjoy!

🍄🍕Spinach Mushroom Pizza🍄🍕
📝Recipe
2 Pizza Bases
1 Cup Cashews
3/4 Cup Plant Milk
1/2 Juice of Lemon
3/4 tsp Salt
2 Garlic Cloves
2 tbsp Nutritional Yeast
6 Chestnut Mushrooms
4 Handfuls of spinach
4 tbsp Pine nuts
Fresh basil and olive oil to finish
📍INSTRUCTION:
Preheat the oven to 200C.
Make the cashew ricotta. Place the cashews, plant milk, lemon, salt, garlic and nutritional yeast in a high speed blender and mix for 30 seconds to a minute. If you don’t have a high speed blender you will need to soak the cashews in hot water for 30 minutes, and then drain.
Smooth the cashew ricotta onto the two pizza bases, leaving a cm gap around the edge.
Cut the mushrooms into slices and place on top of the ricotta
In a bowl place the spinach and cover with boiling water until wilted. Drain and squeeze out excess water. Roughly chop and the place on the pizza bases.
Scatter 2 tbsp of pine nuts on each pizza. Drizzle both pizzas with some oil and then place in the oven for 15-20 minutes. The crust should be starting to brown and crisp.
Finish with some fresh basil, black pepper and a drizzle of olive oil.

Lemon and Poppy seed loaf cake at it's best. 🤤💛 Do you like poppy seeds? Have you ever tried it? Poppy seed Strudel and Makovnjača (google what it is) is one of my fav cakes ever. This one I made with double frosting, as you can see. 🤣 I didn't know that the frosting made of only powdered sugar and lemon juice it hardend as soon as it touches the cake. So my poppy seeds as a decoration couldn't stick to the top, they fell of. Same happened to the second frosting. 🤣 Better frosting is: mix one egg whites with 20 dag powdered sugar until thickens. Add one tablespoon of the lemon juice, and continue to mix a little more until incorporated. Ingredients: 300g self raising flour 1 tsp baking powder 185g caster sugar 3 tbsp poppy seed 120ml rapeseed oil 230ml unsweetened almond milk Juice of 4 lemons (125ml) Zest of 3 lemons (3 tbsp) 1 tsp vanilla essence Icing: 1 egg white 20 dag powdered sugar 1 tbsp lemon juice Method: 1. Preheat oven to 180°C. Grease 9x5" loaf tin. 2. Sift flour and baking powder into a bowl. Add the sugar and poppy seeds and mix with a wooden spoon. 3. In a separate bowl mix together the oil, milk, lemon juice, lemon zest and vanilla. 4. Pour the wet ingredients into the dry and mix until just combined. 5. Pour into the loaf tin and bake for about 55 mins or until lighly browned. 6. Make a frosting mixing egg white, sugar and the lemon juice. Most importantly, enjoy every bite of it. Finely dice the onion and fry in a large frying pan on medium heat. After a few minutes add crushed garlic and cook for a couple more minutes. Add the curry powder, garam masala, salt and chilli and cook for 30 seconds until fragrant. Drain the chickpeas and mash with the back of a fork in a bowl until roughly mashed, you can leave some whole for texture. Check the sweet potatoes are soft all the way through, if not cook for a few more minutes. Remove the sweet potatoes from the microwave and carefully slice open length ways. Scoop out the flesh, place in a bowl and mash until soft. Add the mashed chickpeas, onion and spices, flax eggs, chopped coriander, chickpea flour and nutritional yeast. Mix well. Wipe the frying pan clean and heat some oil. Take a tbsp of the patty mixture, roll into a bowl and press down gently to form a patty shape. Fry for a few minutes on each side until golden brown. I was able to fry 4-5 at a time. Keep cooked patties in the oven on a low heat to keep warm. Don't let another half of a good avocado go bad again!
