Herbed Bean Salad
After several evolutions, this salad has become a spring favorite, tossing warm beans with the first lettuces and herbs to appear in my garden. Learn to make Herbed Bean Salad.

Four Bean Salad

Avocado and Pepper Bean Salad (Vegan)
I love sunny days, not only for the warmth and sunshine; but also because it means a salad makes an excellent meal. One can be lazy in the kitchen, one needn’t even cook, per se. Just pick fresh herbs in the garden, mix them into an assortment of colourful, juicy, ripe vegetables, a little dressing and voilà, that’s lunch sorted! And lazy and easy does not mean that light meal is not also absolutely bursting with flavours, like this delicious Avocado and Pepper Bean Salad. Happy Monday!
Ingredients (serves 2):
2 sprigs Garden Cilantro
a small Green Onion
1/2 lime
1 tablespoon olive oil
1 teaspoon Hot Pepper Sauce
2 mini bell peppers, rinsed
1 ripe tomato, rinsed
1 jar or can red kidney beans (205 grams/7.25 ounces once drained)
1/2 ripe avocado
Finely chop Garden Cilantro and Green Onion. Add both to a small salad bowl.
Thoroughly squeeze the juice of the lime halve, and add to the bowl, along with olive oil and Hot Pepper Sauce. Give a good stir to blend.
Finely slice mini bell peppers and dice tomato. Add to the bowl, and toss once more, to combine.
Rinse kidney beans under cold water and drain them thoroughly. Pit, peel and dice avocado halve. Add both to the bowl, and toss gently, to mix and coat in dressing.
Chill in the refrigerator, at least a couple of hours.
Enjoy Avocado and Pepper Bean Salad well-chilled, for lunch or dinner.

Even though my family is in VA helping my sister to recover I’m embracing a little of our Easter traditions. I put on a cute-ish outfit and I plan on making some deviled eggs, a mini ham and some scalloped potatoes. And enjoying my peace & quiet while watching Father Brown.
#and I found a recipe that makes 2 peanut butter cookies and sounds promising#and also the only time I ever want sweet pickles is when I have ham#and that’s mostly because leftover ham gets ground up and some mayo added in to make ham salad sandwiches#honestly the ham is not really gonna be eaten today it’ll be used to make ham and potato green bean soup and sandwiches 😂
