Spicy veggie noodles

I’m not big on frozen or instant meals but I’d be lying if I said I didn’t like frozen veggies and fruits.  Frozen veggies and fruits are the best for meal prep or when you don’t have enough time on your hands.

I also enjoy leading a minimal waste life but sometimes life throws some curve balls at you and it’s not always possible to be minimal waste.  For those times buying a bag of frozen veggies and keeping it in your freezer just in case is pretty perfect.  Alternatively I do also cut my own veggies and store them in the freezer but I’ve run out of those so I used a store bought bag for this recipe.

Recipes like this come together under half an hour especially when most of your veggies are already prepped.  I only had to cut up some onions and bell pepper for this recipe while I was boiling my noodles so it didn’t take up any extra time.

For the masala powder I try to keep a jar of the mix I liking using for these noodles ready to go but I unfortunately ran out of that, too.  But here’s to the next best thing!  I bought some Maggi Masala powder packets and used 2-3 of them for my noodles.  Maggi masala really is a life saver sometimes.

Specifically this recipe, in my opinion, is one of the best meal prep recipes there is because you can use frozen veggies and  pre made masala powder and throw everything together with some noodles and have a full meal.  You can always utilize the rest of the frozen vegetables for other meal prep ideas for the entire week.  If you haven’t tried this recipe, please do.  You’ll 100% enjoy it!

5 clove garlic minced,(add 2 tbsp oil, cook in microwave for 2 minutes)

VEGAN OIL-FREE MEE HOON by #RawChefYin🍜 Mr Jazz Guitarist @azsamad asked me if I could make him a mee hoon (rice vermicelli) dish for him as he missed it so I whipped one up with his favourite ingredients including tempeh!😀 . I made this in the Thermomix using the usual mee hoon recipe and just refused to add any oil. He said it tasted wayyyyy better than the ones cooked in oil coz this was so clean tasting and flavourful. Yipppeee!
