Goin’ Green Frittata

Brussels sprouts baked in a frittata?  Oh, yeah!  Saute them first to start the cooking process, throw in the leeks, then add two more layers of green vegetables.  That’s the only trick to it.  Serve this with a crunchy green salad and you have a great diabetic friendly - lactose free - vegetarian - vitamin D rich main dish.  Nice job taking care of yourself!
2 T. margarine
2 c. Brussels sprouts, quartered
2 c. leeks, ribbon cut
12 eggs, whisked
1 t. sea salt
1 t. ground black pepper
2 c. tightly packed fresh spinach, whole leaves
1/4 c. fresh curly leaf parsley, chopped using kitchen scissors
Preheat oven to 400 degrees.  In a large fry pan, saute Brussels sprouts then add leeks at the last minute to finish off.  Add salt/pepper to eggs, whisk.  In a greased baking dish, layer spinach, Brussels sprouts/leeks mixture, parsley pouring eggs over everything covering well.  Bake 60 min. until a knife thrust into the center comes out clean.

Five Spice Almonds

The five spice adds a sweet flavor to almonds with no added sugar - diabetic friendly!  Treat yourself and your family!
1 1/2 t. margarine
2 c. almonds
dash sea salt
1 1/2 t. Chinese Five Spice
Preheat oven to 300 degrees.  In a deep sauce pan, melt margarine, add almonds.  Stir vigorously to thoroughly coat almonds.  Transfer to a baking dish.  Bake uncovered for 30 min.  Transfer back to the sauce pan, add seasonings, toss/stir vigorously to coat well while nuts are still hot.  This spice is at my local grocer and through Amazon.

Quinoa Artichoke Salad

Throws together quickly with precooked frozen quinoa - nutritional - diabetic friendly...sounds like a great diabetic dinner idea without too much effort.  That’s my kind of meal!
10 oz. bag frozen quinoa, defrosted
1 - 12 oz. jar marinated artichoke hearts, chopped, retain liquid
3 - 4 carrots, coarse shredded
3 - 4 stalks celery, finely chopped
1 bell pepper, seeded, finely chopped
3 - 4 green onions, finely chopped using kitchen scissors to speed process
1/4 c. dried parsley
2 - 3 tomatoes, seeded, coarsely chopped
1 - 4 oz. can black olives, drained, chopped
1 c. sharp cheddar, finely shredded
dash salt, oil, and lemon juice as dressing
Option:  3 - 4 boiled eggs, peeled, chopped
In a large bowl, toss together quinoa, artichoke with liquid, carrot, celery, bell pepper, green onions, parsley, tomatoes, cheese, and olives.  Drizzle oil, lemon with a dash of salt over all.  Top with boiled eggs and serve on a bed of greens.

Feelin’ Tired, diabetic?

Why is that?  Be a detective to get to the bottom of this.  Are your blood sugars high?  Have you had a stressful/overly active couple of days?  Did you forget to eat on time?  Just had a vigorous workout and you’re tuckered out?
Take a blood meter reading.  Is it higher than usual?  Did you eat the wrong thing?  Be honest with yourself.  If it’s really high (and you will know that), call your health care professional for their advice on how to bring it down.  Likely they will suggest you ride an exercycle for 30 min. or so...maybe go for a short walk. 
What have you been up to the last few days?  Been traveling?...Been super active?...Handled stressful situations?  Again check your meter readings, comparing them to your customary numbers.  If they’re really high, call the doc for their input.  It sounds counter intuitive, but maybe just going for a walk will work off the tired feeling.
When did you eat last?  Have something light, maybe an apple.  Give it 30 min. and see if you feel a little better.  This works for me when time flies, I look up and should have had lunch an hour ago.
Just got through with a vigorous work out?  Try taking a shower.  Check your meter readings.  If they’re really higher than normal, call the doc.  If they are good, put your feet up and congratulate yourself on a job well done.

Fried Chicken - Diabetic Style

Love fried chicken but not white flour in order to stay true to your diabetic diet?  Switch it up with whole wheat flour, add some extra spices, and enjoy!
1 c. whole wheat flour
1 t. garlic powder
1 t. onion powder
dash salt and pepper
1 t. smokey paprika
chicken parts of your choice
2 - 3 T. olive oil
Mix flour, garlic powder, onion powder, salt, pepper, and paprika in a bowl then transfer the coating to a flat dish like a pie plate.  Lay chicken part in the flour mixture, turn it over to coat the other side.  In a fry pan on a medium heat, heat the oil and lay the chicken pieces in the pan.  Fry covered on one side until the chicken is a golden brown, flip it over frying to a golden brown again.  Check for done by piercing the chicken to the bone.  The juices should run out clear.

What to expect when you have Diabetes

Great informative book for the newly diagnosed and the old hand at diabetes.  I fall in the latter category but was reading the questions and answers nodding my head in agreement with their answers to questions such as:
Q:  Can I ignore the risks of diabetic complications since the thought of them scares me?  Answer - No...
Q:  I’m confused about sugars and starches.  Which raises my blood sugar more - a brownie or a piece of bread?  Answer summary - Test and log your blood sugar reaction to foods in conjunction with the other food you ate at the same time, how fast you ate, etc.  Again, right on!
Q:  Is it true that beans can improve diabetes control?  Answer - Yes! 
Q:  Do diabetes pills contain insulin?  Answer - No...
The questions the authors pose along with their thoughtful answers confirmed my experiences and reinforced my resolve to take control of my diabetes management.  This book is available through Amazon as well as from my public library.
I have no connection with this book other than being a fellow diabetic looking for answers or confirmation that what you are doing is valid.

Black White Red Summer Salad

Great to serve at a picnic, neighborhood street party, camping side dish and fits in my diabetic diet plan - right on!  Try this yourself, see what you think!
2 cans Great Northern Beans, drained
1 can black olives, drained, halved
2 tomatoes, diced or 1 pt. of cherry tomatoes, halved
1 sweet onion, diced
1/2 c. olive oil
1/2 c. lemon juice
2 T. dried mint, crumbled fine
1 t. salt
1/4 t. pepper
bay leaf
In a large bowl, add beans, olives, tomatoes, sweet onion, and bay leaf.  In a separate bowl, mix olive oil, lemon juice, mint, salt, and pepper.  Pour over salad ingredients, toss.

Garbanzo Cucumber Salad - Diabetic Delight

Great with or without the rotini whole wheat pasta!  But, think about saving yourself some carbs...maybe work on bringing down your A1C by only using half the amount of pasta in this recipe.  Still great either way so go for it!  Fast to fix and works well with my diabetic diet.
Dressing:
3 T. red wine vinegar
1 T. lemon juice
2 t. + Brown mustard
2 1/2 T olive oil
salt/pepper to taste
Salad:
1 box rotini whole wheat pasta
2 - 3 med. tomatoes
1 red pepper, seeded, diced
1 yellow pepper, seeded, diced
1/2 c. parsley, fresh, minced using kitchen scissors to speed process
1 T. oregano, fresh, minced using kitchen scissors to speed process
1 cucumber, diced
1 - 2 cans garbanzo beans, drained
In a large mug, whisk together dressing ingredients, set aside.  In a large bowl, add all salad ingredients, pour dressing overall.  Toss well, serve on a bed of greens.

Buttermilk Muffins

Muffins with a diabetic diet?  I had long ago crossed that off my list...but then I came across this pancake mix and had an idea.  Light, fluffy, and naturally sweet without the blood sugar crash afterword...that was my experience with this recipe.  The cinnamon and poppy seed add to the already sweet flavor of Bob’s Red Mill 10 grain mix.  This also works well as waffle batter.
2 T. olive oil
2 eggs
1/2 c. buttermilk
1 t. cinnamon
1 T. poppy seed
1 c. Bob’s Red Mill 10 grain mix
1/8 c. water
Option:  1 c. sliced almonds for extra crunch.
Preheat oven to 350 degrees.  Stir together all ingredients.  Spoon into paper liners in a muffin tin.  Bake for 25 minutes.

A1C Glucose Level

I’m not a medical professional, just another diabetic like you.  The other day someone asked me what does A1C mean?  Is a measurement of 10 high?  Is 5.4 or 6 low?  Here are some notes about what I have gleaned from various sources regarding A1C.  Definitely ask you doctor or advice nurse about this and don’t stop asking until you are very clear about what A1C means and it’s importance to your diabetic life. 
What does A1C mean?  It’s “a measure of the average blood glucose level over the previous 3 - 4 months.”  It is a blood test beyond the home daily blood glucose monitor numbers you are already recording.  It measures the glucose attached to hemoglobin which is the protein in red blood cells that carries oxygen. 
Is a measurement of 10 high?  For non-diabetics, their A1C is 6.1%.  Diabetics should go for 7% or lower.  So if you are at 10%, what do you think?  Probably you need to get it lower.  If you are taking pills or insulin, then that medication you’re using needs to be taken into consideration along with your A1C level.

Double Pea Soup

Sounds very healthy, good deal!  This is a crock pot or soup pot on the stove kind of dish.  Have some fun with this twist on a standard...and have some fun with good blood meter readings!
2 c. dried split peas
2+ qt. water or vegetable broth (check for no added sugar!)
2 - 3 stalks celery, sliced thin
2 - 3 carrots, sliced thin
1 lg. onion, chopped
1 bay leaf
1/4 t. thyme
salt and pepper to taste
10 oz. frozen peas, defrosted
Option:  Add 2 c. half and half when the soup is done or 1 t. smokey paprika if the spirit moves you.
In a large cooking pot, put the split peas, liquid, celery, onion, bay leaf and seasonings.  Cover and simmer until peas are tender.  Feel free to add liquid sparingly if this really starts to thicken up.  While that is simmering, puree the defrosted peas in a food processor and combine with the soup.  Simmer for 1 1/2 or so.  Enjoy the great home cooking smells that fill your kitchen!

Fiesta Quinoa

So good fixed according to package directions served hot but with black beans (drained and rinsed) added to the pinto beans for even more protein.  This works well as a fast meal that supports my diabetic diet efforts.  I found this in the frozen section at my local New Season’s grocer.
I’m just another diabetic working to eat well and keep my blood sugar numbers at a good level.  I have no connection with Tommy’s Superfoods...just like their product.

Red White Green Salad

Balsamic vinegar on strawberries...really?  Oh, yeah!  The contrast of tart Balsamic and sweet strawberries is out of this world.  Another thing that’s out of this world is how this supports my diabetic diet.
1 bag edamame, shelled, defrosted
1 qt. strawberries, topped, sliced
1 - 15.5 oz. can Great Northern beans
1 sm. red onion, diced
1/4 c. basil, fresh, chopped*
4 oz. Feta cheese, crumbled
bed of salad greens, Romaine is very good, chopped
Balsamic vinegar
salt/pepper/olive oil to taste
Option:  1/2 c. sliced almonds for added crunch
*Use kitchen scissors to speed this prep job.
Toss together salad ingredients.  Drizzle Balsamic vinegar over all.  Serve on a bed of salad greens such as Romaine.  Enjoy!

Shitake Mushroom

Frozen mushrooms...?  You bet and a great way to have them at the ready cleaned and sliced for a special stir fry or casserole bake.  Use as few or many as you need without concern that they will go bad before you use them all.  Diabetics...you can eat well, with variety, cooking for one, without a lot of waste - no more excuses - let’s get cooking.

South American Chili

Take a walk out of your comfort zone!  You’ve seen these vegetables on the produce department shelves but never really knew what to do with them, right?  Or, how to tell if you have a ripe one?  The chayote should be firm and free of spots.  I found the okra in the frozen section at my local grocer’s so no problems there.
1 med. rutabaga, microwaved, peeled, diced
1 chayote, pitted, diced
2 carrots, diced
2 garlic cloves, smashed
1 med. onion, diced
1 med. green pepper, seeded, diced
2 - 15.5 oz. cans pinto beans with liquid
4+ c. vegetable broth
1/4 head cabbage, cored, diced
1 - 12 oz. bag okra, frozen
1 - 15 oz. can tomato sauce
1 t. coriander
1 t. smokey paprika
salt and pepper to taste
In a fabric microwave bag*, microwave the rutabaga for 3 min. on high, let cool, then prep.  Saute chayote, carrot, onion, garlic, and green pepper in olive oil until tender.  In a large soup pot, pour in beans, vegetable broth, cabbage, okra and tomato sauce.  Add coriander, smokey paprika, salt and pepper - stir.  Add in sauteed vegetables and diced rutabaga.  Simmer 30 - 45 min. until the cabbage is tender. 
When I’m not simmering soups, I’m sewing Western themed aprons for my online shop ( www.etsy.com/shop/topdrawerthreads ) or crocheting scarves for my other shop from recycled yarn ( www.etsy.com/shop/topdraweryarns ).  My daughter’s (and friend) have an etsy shop, www.etsy.com/shop/yesdesigns , where they hand make and sell afghans - scarves - hats knit from recycled yarn.  My other daughter has an online shop, www.etsy.com/shop/shroombloombags , where she designs and crochets mushroom shaped bags from recycled yarn.
