Go Natural!
 www.diabetesinsider.tumblr.com
Why gild a lily?  Why bury corn’s goodness under Parmesan cheese/garlic or poached in milk/honey or chives/smokey paprika, etc.?  It’s great as it comes...shucked then tossed in a pot of boiling water.  After a few minutes, pierce any kernel with a sharp knife.  If the blade goes in easy, then the corn is ready to eat.  Use margarine/salt if you really want but just plain, sweet corn is the best eatin’ around.  While other cooks are still fussing around adding seasonings, boiling the cob in milk, etc., your corn is done...you can tuck in and start eating.  Great diabetic food, too!
When I’m not fixing delicious, healthy meals for my family (and for myself), I’m sewing neon orange flower power chef aprons for my online shop ( www.etsy.com/shop/topdrawerthreads ).  Or, I’m blissing out crocheting berets from recycled yarn for my other shop ( www.etsy.com/shop/topdraweryarns ).  My daughter’s (and friend) have an online shop, www.etsy.com/shop/yesdesigns , where they hand make and sell hand knitted festival picnic blankets made from recycled yarn.  My other daughter has an online shop, www.etsy.com/shop/shroombloombags , where she designs and crochets mushroom shaped neck pouches from recycled yarn.

Faux Apple Pie
 www.diabetesinsider.tumblr.com
So good!  And the nearest I’ll get to apple pie while being true to my diabetic diet goals.  No really, this would be great served at a holiday meal or when you’re wanting a treat but know how you will feel afterword if you have sweets.  Another good thing is that I don’t have to try fooling myself into thinking this is good...because it is!
2 T. margarine
2 Granny Smith apples, cored, chopped, leave skins on if you’re up for it
1 - 10 oz. Pkg. frozen butternut squash, defrosted*
2 T. lemon juice
dash salt
1/4 t. cinnamon
1/4 t. nutmeg
1 c. slivered almonds
In a large fry pan, melt margarine, add apples, begin to saute.  Add squash, lemon, salt, cinnamon, nutmeg, almonds.  Stir to mix in spices and heat through.  Enjoy!
*This is a good way to use up leftover butternut squash, too.  Just add the squash after the apples are nearly done cooking to heat the squash through.  Or, if you have raw squash, seed/peel/cube it into 1/2″ pieces, microwave 3 min. on high to start the cooking process, then add to apples, etc.
When I’m not stirring up something really good in the kitchen, I’m sewing cotton canvas aprons for my online shop ( www.etsy.com/shop/topdrawerthreads ).  Or, I’m merrily knitting stocking caps from recycled wool yarn for my other shop ( www.etsy.com/shop/topdraweryarns ).  My daughter’s have an online shop, www.etsy.com/shop/yesdesigns ,  where they hand make and sell hemp macrame festival jewelry - necklaces, bracelets, anklets.  My other daughter has an online shop, www.etsy.com/shop/shroombloombags , where she designs and crochets mushroom shaped neck pouches/bags from recycled yarn.

Carrot Olive Fry Up
 www.diabetesinsider.tumblr.com
Carrots...olives...red pepper flakes...vinegar...sour cream...Parmesan cheese...mixed together in the same dish!?!  Sounds like a weird combination so I had to make it!   To better manage my diabetes, I had to learn to be open to new combinations that help me bring down my A1C.  Many of the foods I was eating before diabetes wouldn’t work for me anymore.  Give this a whirl...see what you think!
5 - 6 carrots, trimmed, angle cut
3 T. olive oil
1/2 c. black olives, chopped
1/2 c. green olives, chopped
1/2 c. Italian flat leaf parsley, chopped using kitchen scissors
dash red pepper flakes
salt and pepper to taste
3 T. white wine vinegar
1 c. sour cream
dash Parmesan cheese, grated
Saute carrots until just tender crisp in olive oil with red pepper flakes - salt - pepper.  Let carrots cool.  Add carrots, black olives, green olives, and parsley - toss with salt, pepper, chili flakes, dash olive oil, and vinegar.  Add sour cream and stir in.  Shake a dash of Parmesan cheese on top.  Serve on a bed of greens.
When I’m not venturing into uncharted territory in the kitchen, I’m sewing batik print aprons for my online shop (  www.etsy.com/shop/topdrawerthreads ).  Or, I’m knitting scarves from recycled yarn for my other shop ( www.etsy.com/shop/topdraweryarns ).  My daughter’s (and friend) have an online shop, www.etsy.com/shop/yesdesigns , where they hand make and sell hemp jewelry - necklaces, bracelets, and anklets.  My other daughter has an online shop, www.etsy.com/shop/shroombloombags , where she designs and crochets mushroom shaped bags from recycled yarn.

Fried Chicken - Diabetic Style
 www.diabetesinsider.tumblr.com
Love fried chicken but not white flour in order to stay true to your diabetic diet?  Switch it up with whole wheat flour, add some extra spices, and enjoy!
1 c. whole wheat flour
1 t. garlic powder
1 t. onion powder
dash salt and pepper
1 t. smokey paprika
chicken parts of your choice
2 - 3 T. olive oil
Mix flour, garlic powder, onion powder, salt, pepper, and paprika in a bowl then transfer the coating to a flat dish like a pie plate.  Lay chicken part in the flour mixture, turn it over to coat the other side.  In a fry pan on a medium heat, heat the oil and lay the chicken pieces in the pan.  Fry covered on one side until the chicken is a golden brown, flip it over frying to a golden brown again.  Check for done by piercing the chicken to the bone.  The juices should run out clear.
When I’m not frying up a batch of fried chicken, I’m sewing chicken themed aprons for my online shop ( www.etsy.com/shop/topdrawerthreads ).  Or, I’m cruising my favorite local recycled yarn shops to knit hats for my other shop ( www.etsy.com/shop/topdraweryarns ).  My daughter’s (and friend) have an online shop, www.etsy.com/shop/yesdesigns , where they hand make and sell macrame jewelry - necklaces, anklets, bracelets.  My other daughter has an online shop, www.etsy.com/shop/shroombloombags , where she designs and crochets mushroom pouches from recycled yarn.

What to expect when you have Diabetes
 www.diabetesinsider.tumblr.com
Great informative book for the newly diagnosed and the old hand at diabetes.  I fall in the latter category but was reading the questions and answers nodding my head in agreement with their answers to questions such as:
Q:  Can I ignore the risks of diabetic complications since the thought of them scares me?  Answer - No...
Q:  I’m confused about sugars and starches.  Which raises my blood sugar more - a brownie or a piece of bread?  Answer summary - Test and log your blood sugar reaction to foods in conjunction with the other food you ate at the same time, how fast you ate, etc.  Again, right on!
Q:  Is it true that beans can improve diabetes control?  Answer - Yes!
Q:  Do diabetes pills contain insulin?  Answer - No...
The questions the authors pose along with their thoughtful answers confirmed my experiences and reinforced my resolve to take control of my diabetes management.  This book is available through Amazon as well as from my public library.
I have no connection with this book other than being a fellow diabetic looking for answers or confirmation that what you are doing is valid.

Laughing Planet - Diabetic Delight
 www.diabetesinsider.tumbler.com
Great menu offerings, great healthy ingredients, and great whimsical attitude throughout.  The quesadillas have a lightly crispy whole wheat tortilla outside, stuffed with grilled vegetables, Killer green sauce, and tender melted cheese inside.  Even a seemingly humble offering like rice and beans is outta this world with SMART, tender pinto beans and brown rice cooked to just right.  There are so many healthy choices from this chain for diabetics whether they are meat eaters, vegetarian, or vegan - a full family pleaser. This is a healthy fast food restaurant where you can place your order online to then eat on site or take away to go.  Diabetics...your fast food days are not behind you, just choose well!
I have no connection to this business.  I’m just another diabetic looking for good food that supports my blood sugar management eating goals.  Just love their food...love, love, love!

Garbanzo Cucumber Salad - Diabetic Delight
 www.diabetesinsider.tumblr.com
Great with or without the rotini whole wheat pasta!  But, think about saving yourself some carbs...maybe work on bringing down your A1C by only using half the amount of pasta in this recipe.  Still great either way so go for it!  Fast to fix and works well with my diabetic diet.
Dressing:
3 T. red wine vinegar
1 T. lemon juice
2 t. + Brown mustard
2 1/2 T olive oil
salt/pepper to taste
Salad:
1 box rotini whole wheat pasta
2 - 3 med. tomatoes
1 red pepper, seeded, diced
1 yellow pepper, seeded, diced
1/2 c. parsley, fresh, minced using kitchen scissors to speed process
1 T. oregano, fresh, minced using kitchen scissors to speed process
1 cucumber, diced
1 - 2 cans garbanzo beans, drained
In a large mug, whisk together dressing ingredients, set aside.  In a large bowl, add all salad ingredients, pour dressing overall.  Toss well, serve on a bed of greens.

Buttermilk Muffins
 www.diabetesinsder.tumblr.com
Muffins with a diabetic diet?  I had long ago crossed that off my list...but then I came across this pancake mix and had an idea.  Light, fluffy, and naturally sweet without the blood sugar crash afterword...that was my experience with this recipe.  The cinnamon and poppy seed add to the already sweet flavor of Bob’s Red Mill 10 grain mix.  This also works well as waffle batter.
2 T. olive oil
2 eggs
1/2 c. buttermilk
1 t. cinnamon
1 T. poppy seed
1 c. Bob’s Red Mill 10 grain mix
1/8 c. water
Option:  1 c. sliced almonds for extra crunch.
Preheat oven to 350 degrees.  Stir together all ingredients.  Spoon into paper liners in a muffin tin.  Bake for 25 minutes.
I have no connection with this company, Bob’s Red Mill.  I’m just another diabetic looking for ways to eat well and keep my numbers in line.

A1C Glucose Level
 www.diabetesinsider.tumblr.com
I’m not a medical professional, just another diabetic like you.  The other day someone asked me what does A1C mean?  Is a measurement of 10 high?  Is 5.4 or 6 low?  Here are some notes about what I have gleaned from various sources regarding A1C.  Definitely ask you doctor or advice nurse about this and don’t stop asking until you are very clear about what A1C means and it’s importance to your diabetic life.
What does A1C mean?  It’s “a measure of the average blood glucose level over the previous 3 - 4 months.”  It is a blood test beyond the home daily blood glucose monitor numbers you are already recording.  It measures the glucose attached to hemoglobin which is the protein in red blood cells that carries oxygen.
Is a measurement of 10 high?  For non-diabetics, their A1C is 6.1%.  Diabetics should go for 7% or lower.  So if you are at 10%, what do you think?  Probably you need to get it lower.  If you are taking pills or insulin, then that medication you’re using needs to be taken into consideration along with your A1C level.

Grow your Own...
 www.diabetesinsider.tumblr.com
...mushrooms that is!  Oyster, Shitake, Morel, King, Chicken of the Woods, Lion’s mane, blue, or golden - you choose the variety.  They come in “logs” or as plugs for starting this foodie adventure.  These don’t take more care than an indoor kitchen counter top herb garden.  Some varieties need twice daily misting, so if you tend to over water any way this could be ideal for you.  It’s an intriguing divergence from sprouting or window sill herb gardens, also as a great fresh addition to your diabetic diet.
These are available through Amazon.  I have no connection to any seller of these.  I’m just another diabetic looking for ways to eat better and keep my blood sugar numbers in check.

Double Pea Soup
 www.diabetesinsider.tumblr.com
Sounds very healthy, good deal!  This is a crock pot or soup pot on the stove kind of dish.  Have some fun with this twist on a standard...and have some fun with good blood meter readings!
2 c. dried split peas
2+ qt. water or vegetable broth (check for no added sugar!)
2 - 3 stalks celery, sliced thin
2 - 3 carrots, sliced thin
1 lg. onion, chopped
1 bay leaf
1/4 t. thyme
salt and pepper to taste
10 oz. frozen peas, defrosted
Option:  Add 2 c. half and half when the soup is done or 1 t. smokey paprika if the spirit moves you.
In a large cooking pot, put the split peas, liquid, celery, onion, bay leaf and seasonings.  Cover and simmer until peas are tender.  Feel free to add liquid sparingly if this really starts to thicken up.  While that is simmering, puree the defrosted peas in a food processor and combine with the soup.  Simmer for 1 1/2 or so.  Enjoy the great home cooking smells that fill your kitchen!
When I’m not simmering soup for the family, I’m sewing Mother’s Day aprons for my online shop ( www.etsy.com/shop/topdrawerthreads ).   Or putting the finishing touches on handmade knit items for my other shop, www.etsy.com/shop/topdraweryarns .  My daughter’s (and friend) have an online shop, www.etsy.com/shop/yesdesigns , where they hand make and sell macrame bracelets, knit picnic afghans, and crocheted bikini tops 70′s style.  My other daughter has an online shop, www.etsy.com/shop/shroombloombags , where she designs and crochets mushroom inspired festival bags.

Fiesta Quinoa

So good fixed according to package directions served hot but with black beans (drained and rinsed) added to the pinto beans for even more protein.  This works well as a fast meal that supports my diabetic diet efforts.  I found this in the frozen section at my local New Season’s grocer.

Shitake Mushroom

Frozen mushrooms...?  You bet and a great way to have them at the ready cleaned and sliced for a special stir fry or casserole bake.  Use as few or many as you need without concern that they will go bad before you use them all.  Diabetics...you can eat well, with variety, cooking for one, without a lot of waste - no more excuses - let’s get cooking.

South American Chili
 www.diabetesinsider.tumblr.com
Take a walk out of your comfort zone!  You’ve seen these vegetables on the produce department shelves but never really knew what to do with them, right?  Or, how to tell if you have a ripe one?  The chayote should be firm and free of spots.  I found the okra in the frozen section at my local grocer’s so no problems there.
1 med. rutabaga, microwaved, peeled, diced
1 chayote, pitted, diced
2 carrots, diced
2 garlic cloves, smashed
1 med. onion, diced
1 med. green pepper, seeded, diced
2 - 15.5 oz. cans pinto beans with liquid
4+ c. vegetable broth
1/4 head cabbage, cored, diced
1 - 12 oz. bag okra, frozen
1 - 15 oz. can tomato sauce
1 t. coriander
1 t. smokey paprika
salt and pepper to taste
In a fabric microwave bag*, microwave the rutabaga for 3 min. on high, let cool, then prep.  Saute chayote, carrot, onion, garlic, and green pepper in olive oil until tender.  In a large soup pot, pour in beans, vegetable broth, cabbage, okra and tomato sauce.  Add coriander, smokey paprika, salt and pepper - stir.  Add in sauteed vegetables and diced rutabaga.  Simmer 30 - 45 min. until the cabbage is tender.

Spicy Carrots
 www.diabetesinsider.tumblr.com
Not the same tired cooked carrots, instead fix them with some nutmeg and margarine to add interest.  These work as a great side dish served with pork roast, rice and a green salad.  Hoorah for a sensible diabetic diet!
1 bag carrots, crinkle cut, frozen
dash salt
2 T. margarine
1/4 t. nutmeg, ground
In a saucepan, add 1″ water, heat carrots and salt on medium setting.  After it has come to a boil, cook until tender.  Drain off excess water, dab with butter, sprinkle nutmeg, toss to cover carrots with seasoning.  Enjoy!
