That Man became Those Men during the course of the Strive Storyline.
Because there were two of That Man, Asuka and The Original. Not sure what Asuka was doing during the Crusades. Probably damage control with poor social skills that make the situation worse (see any of his conversations with others outside of his friend/terrorist group). Also The Original was just possessing people apparently. They were both called That Man.

I often do think it is important to call myself a woman. In past I've had kids ask me "are you a man or a girl" and in hindsight I think these kids were quite perceptive of the world. Especially when you're in your 20s it's men and girls, I've seen students write pieces describing themselves as men, but their female peers of the same age they call girls, but I have also heard bisexual women say they like both men and girls. In past I've fallen into that myself and said that yeah I'm a lesbian I like girls, but do I? No I am in my twenties and I am actually only attracted to my fellow adults - women. It does feel more serious, less trivial, both to be and be attracted to women as opposed to girls, and that can be a bit uncomfortable to be faced with. It is also important to me as a butch. I am no longer a tomboy I am a butch I am no longer a girl I am a woman. I am a woman and women can be like me. I don't feel like I've succeeded enough at adulting to call myself a woman, but that doesn't matter. I am 25, and if the word bears other connotations so be it, that's not my problem.

ONCE UPON A TIME, THERE WAS A KNIGHT...
the visual inspiration for this was a combination of Frederic William Burton's Meeting on the Turret Stairs and also Bernardo Cavallino's The vision of St. Dominic receiving the Rosary from the Virgin
this was supposed to be just a one off illustration to get the thoughts out of my system, but then I started thinking about medieval politics and warfare and plagues and a castle and home as both a place of refuge, a prison, and a tomb, so perhaps they will end up as ex voto characters as well.
you may say, hey! that rosary looks like it has too many beads! it's a fifteen decade rosary, probably. dominicans are really into marian devotions. it works out.
also. spiral style stair cases. oh boy. it was that unexpectedly more difficult than I originally thought it would be to draw. the more I think about it, the less I understand them, even though I had a million photos of the stairs in front of me while I was drawing it.

Something I find very interesting about the character design in Dungeon Meshi is that the artist clearly puts a LOT of work into drawing people who look like normal people and since we, the audience, are so starved for that in Popular Media(bcs the current trend is drawing men and women so differently it's like they're a completely different species) unless they have a beard or visible tits no one has any idea what gender half the characters are.
Like I keep seeing people think Kabru and Chilchuck and Thistle are women and at first I was like "haha yeah same" but when I thought about it I was like...nah they just look like normal dudes, I know men irl who look like that, we're just so used to Hyper Masculinity being forced upon all male characters and Hyper Femininity on the women that when we see characters who look like average humans we have no idea how to process it.
And tbh I'm honestly glad that this manga has not only given us normal looking women but also normal looking men bcs fr I didn't realize how rare that was until I was faced with it. Male characters really do get forced to perform the most extreme form of their gender in popular media because of toxic masculinity and it's nice to see something break the mold.
