I'm kind of frustrated :( I think I really do have to start a meal subscription service and I just really don't want to. It feels like admitting defeat. Because I LOVE to cook, I love food. It's just that I've got, like... nothing in the tank. I don't feel impulses or inspiration during the day for food anymore. I just feel swamped and overwhelmed most of the time. I feel like part of that feeling is almost certainly coming from me NOT getting the nutrition I need, because most of the time I'm starving all day ---> dinnertime ---> eat frozen dumplings and fall asleep. And that's not good. The amount of takeout I've been getting hasn't been good either. Yes, it's been better than starving all day, and it's helped me make sure my team eats too, but it's just not good. It makes me sad and makes me feel like I'm saying that I don't want to cook or that I don't care about it. I feel like I'm losing a hobby I really love and have so much passion for.

I was wondering if any of y'all have some go-to recipes that are super simple and straightforward to make that you'd be interested in sharing? Like meals that require as few steps and prep as possible? I'm trying to make more food at home and avoid highly processed microwave meals, but I lowkey hate cooking, especially when it's just for myself. While my executive dysfunction has definitely improved over the last month, I still very much have depression and ADHD and thus struggle to tackle more labor intensive activities unless there's a lot of dopamine release involved in the process. I obviously want to improve though, and I figure it's about time to stop living off my protein oatmeal. (It's super good tho, fairly nutritious, and really easy to make--just oats, protein powder, peanut butter, and a bit of honey).
I've compiled a bunch of possible recipes over the last few weeks (mostly from blogs listing meal ideas for picky children lmao), but was just curious if any of you had personal favorites of your own. Since I'm just starting out and have a shitty little 1970s apartment kitchen, I'm pretty limited, and don't really like dealing with super perishable ingredients like fresh produce yet. So only bother with sharing the kind of shit a latchkey middle schooler could make on their own lol

My ultimate comfort food: Cook Unity Cajun stew and grits.
The first time I ever really had grits was with this dish. It is just almost too spicy for me. Spicy enough that I'm going to have to have something cold to drink with almost every bite. I'm a big wuss when it comes to spices. But oh my God is so warm and so feeling and so absolutely tasty. It is impossible to eat this stuff fast. At least for me--- my husband inhales it.
Cook Unity is fairly expensive but it is the best money I think I have spent in 20 years at least.
We can't afford to have it every single week but we usually do it twice a month. His restaurant quality food delivered. You heat it up in your oven and it is the best stuff I have ever tasted in my life. It is literally like having your own personal Shelf come and cater for you.
On days that I come home so exhausted there is no way I can prove her food not only do I get a good meal it is absolute restaurant quality.
Aside from this dish I am completely hooked on all of the Mexican food. It is prepared by a female chef, and taste almost exactly the same as the food for my favorite restaurant 90 MI away.

Had to click through several screens of guilt to do it, but I canceled my grocery box subscription. I can coast on what I've got in the fridge and freezer for the most part (with the possible exception of needing to acquire breakfast foods, but that's what living two blocks away from a panadería is for), and then my therapist says I should create the permission structure for myself to switch to pre-prepared meals for a while.
