Steam-frying dumplings
Instructions:
Heat-up oil in a pan, just enough to cover all surfaces.
Place dumplings, flat side on the bottom.
After the bottom side turns light brown (1-2min), pour in cold water— enough to cover 1/3 of the dumplings. Immediately cover with the lid.
Uncover when the water evaporates completely, or after 8 minutes.
Cook another 30 to 60 seconds to crisp up if preferred.

Today’s Dinner came from the sea, underground and surface of the earth. We started off with steamed fish fillet drizzled with shallot & ginger oil on the left. Stewed potato slices in the middle and lastly, sliced pork stir-fry with fluffy white rice.

Had an odd argument with DH bc he wanted fried potatoes in butter. In butter. Not ghee. We have red potatoes. You see my problem. I explained the smoke point of butter and the high moisture content of red potatoes, and that the butter will burn before the potatoes will brown
i mean if you cut them real small, dry them with a towel, and then toss it in some baking powder and salt they MAY brown ... in lard? or peanut oil?
But no, he just went big slabs of potato in pan with butter. I declined to partake in the experiment, and Kidlet has not eaten their share of the experiment. We're all pretending we didn't notice the burned on the outside, raw on the inside potatoes on the plate.

Here is my takeaway box of Economy Rice (菜饭) with celery stir-fry, ginger pork slices and steamed fish fillet drizzled with shallots and ginger oil over white rice. I know in Southeast Asia, economy rice stalls are aplenty, so you never really have to cook at home if one doesn’t want to. Does your country have such stalls?
