**Mandia with Sukhua Poda**
Mandia is a wholesome breakfast dish that originates from the state of Odisha, India. It is typically made with ragi or finger millet flour and is a staple food in many households in the region. The flour is mixed with water and salt to form a batter, which is then cooked on a tawa or griddle to create a thin and crispy pancake. Mandia is usually served with a side of chutney, pickle, or curry.
*Ingredients:
4 tablespoons mandia (ragi) flour
Salt, as per your taste
1 cup cooked rice
Instructions:
Boil Water:
1 Start by boiling water in a saucepan. Add salt to the boiling water.
Add Ragi Flour:
2 Once the water reaches a boiling point, slowly add the mandia (ragi) flour to the boiling water. Stir continuously to avoid lumps.
3 Saute Ragi Flour:
Continue stirring the mixture to ensure the mandia flour is well combined with water. Saute the mandia flour until it's thoroughly cooked.
4 Add Cooked Rice:
Incorporate the cooked rice into the sauteed mandia mixture. Stir well to combine the rice with the mandia flour.
Check Consistency:
5 Monitor the consistency of the porridge. Aim for a thickness that is at least "2 string and higher." This refers to the consistency of the porridge when lifted with a spoon – it should form strings and not be too runny.
Continue Sauteing:
6 Keep sauteing the mixture until it reaches the desired consistency and doesn't stick to the bottom of the pan.
7 Transfer to Another Container:
Once the mandia mixture is well-cooked and has the right consistency, transfer it to another container.
Cover with Muslin Cloth:
Cover the container with a muslin cloth. This allows the mandia to cool and set properly.
8 Allow to Set:
Let the mandia (ragi) set with the muslin cloth cover. This is typically done overnight or for a few hours.
Consume in the Morning:
The next morning, your mandia (ragi) porridge should be ready to consume. Enjoy it as a healthy and nutritious breakfast. Remember, you can adjust the salt and consistency according to your taste preferences. Additionally, you can add other ingredients like dahi, jaggery, or fruits to enhance the flavor and nutritional value of the porridge.
Sukhua Poda, ( i have used patharmundy dry fish ) a delicacy hailing from the coastal region of Odisha, is a unique dish made from dry fish, specifically the variety named Patharmundi. The preparation involves a meticulous process of smoking and sun-drying the fish, followed by roasting it on a stove. The smoked and dried fish is skillfully mixed with a blend of spices ( smashed garlic and green chilies ), resulting in a dish bursting with flavor.

जो खाना हम खाते हैं, वो प्राण है। प्राण ही हमारा जीवन है। जीवन को बनाये रखने के लिये प्राण रूपी भोजन अति आवश्यक है। दूसरे जीवन के प्राण को समाप्त कर जो भजन ग्रहण किया जाता है, उस भोजन के साथ हम मनुष्यों का शरीर सही ढंग से व्यवहार नहीं करता है। जितना हमारा शरीर भोजन के साथ संवेदनशील है, उतना ही प्रकृति में उत्पन्न होने वाले उद्भिज यानी पेड़-पौधे, शाक-सब्जियों, फल और फूल भी संवेदनशील है। हमारा प्रकृति के प्रति व्यवहार और भावना सही ढंग का होना चाहिए, यह वही सही ढंग है, जिस ढंग से ईश्वर ने मनुष्य के शरीर और प्रकृति को रचा है।
जिनके भी कान बाहर दिखाई देते हैं, वे पिण्डज यानी (गर्भ से उत्पन्न होनेवाले) होते हैं ये सभी बच्चे को जन्म देते हैं और जिन जीवों के कान बाहर नहीं दिखाई देते हैं वे अंडे देते हैं। जिन जीवों की आँखों की ऊपरी संरचना गोल होती है, वे सब माँसाहारी होते हैं, जैसे- कुत्ता, बिल्ली, बाज, चिड़िया, शेर, भेड़िया, चील आदि, तो ऐसे जीव जिसकी आँखे गोल हैं वे माँसाहारी ही होते हैं। ठीक उसी तरह जिनकी आँखों की बाहरी संरचना लंबी या लम्बाई में होती है। वे सभी जीव शाकाहारी होते हैं। जैसे - भैंस, हिरण, खरगोश, नीलगाय, गाय, हाथी, बैल, भैंस, बकरी कबूतर आदि। इनकी आँखों की बनावट गोल नहीं होती है। मनुष्य की भी आँखें गोल नहीं बल्कि लंबाई में होती है।
माँसाहारी जीवों के दाँत नुकीले होते है, जबकि शाकाहारी जीवों के दाँत चपटे होते हैं। जिन जीवों के नाखून तीखे नुकीले होते हैं, वे सभी माँसाहारी होते हैं, जैसे- शेर, चीता, सांप, बिल्ली, कुत्ता, बाज, गिद्ध आदि और जिन जीवों के नाखून चौड़े चपटे होते हैं वे सब के सब शाकाहारी होते हैं, जैसे - मनुष्य, गाय, घोड़ा, गधा, बैल, हाथी, ऊँट, हिरण, बकरी आदि। मनुष्य के नाखून तीखे नुकीले नहीं होते हैं बल्कि ये चौड़े एवं चपटे होते हैं।
मांसाहारियों के लार अम्लीय (acidic) होते हैं, जबकि शाकाहारियों के मुँह के लार क्षारीय (alkaline) होते हैं। मांसाहारियों में कार्बोहाईड्रेट नहीं होता इस कारण मांसाहारियों की आंतों में बैक्टीरिया की किण्वन (Fermentation) क्रिया नहीं होती हैं। शाकाहारियों के आंतों में (Fermentation) होते हैं, जो कार्बोहाइडेट के पाचन में सहायक होते हैं। मांसाहारियों का रक्त अम्लीय (acidic) होता है, जबकि शाकाहारियों का रक्त क्षारीय (alkaline) होता है।
जिन जीवों को पसीना आता है, वे सभी जीव शाकाहारी होते हैं, जैसे- घोड़ा, बैल, गाय, भैंस, खच्चर आदि, जबकि माँसाहारी जीवों को पसीना नहीं आता है, इसलिए कुदरती तौर पर वे जीव अपनी जीभ निकाल कर लार टपकाते हुए हाँफते रहते हैं। इस प्रकार वे अपनी शरीर की गर्मी को नियंत्रित करते हैं। मनुष्य को भी पसीना आता है और वह अपने तापमान को जीभ निकालकर संतुलित नहीं करता है, इसका अर्थ है कि मनुष्य का शरीर पूर्ण रूप से शाकाहार के लिए सृजित किया गया है।
मांसाहारियों के खून के लिपो प्रोटीन अलग होते हैं। जबकि शाकाहारियों और मनुष्य के खून के लिपो प्रोटीन (lipo – protein) एक जैसे होते हैं।
मांसाहारियों की रीढ़ (spinal cord) की बनावट ऐसी होती है कि वे पीठ पर भार नहीं ढो सकते, जबकि शाकाहारी पीठ पर भार ढो सकते हैं।मांसाहारियों के श्वास की रफ्तार अधिक होती है जबकि शाकाहारियों की कम। मांसाहारी पानी भी कम पीते हैं, जबकि शाकाहारी ज़्यादा पानी पीते हैं।
शाकाहारी प्राणी रात में सोते हैं, दिन में जागते हैं जबकि मांसाहारी प्राणी ऐसा नहीं करते।
मांसाहार क्रूरता की निशानी है। जरूरत पड़ने पर मांसाहार जानवर अपने बच्चे को मारकर खा सकता है। शाकाहारी ऐसा नहीं करते। गुर्राने वाले सभी जानवर मांसाहारी होते हैं, जबकि शाकाहारी गुर्राते नहीं है। शाकाहारी घूंट-घूंट कर होठ बंद कर पानी पीते हैं जबकि मांसाहारी जीभ से चाट-चाट कर पानी पीते हैं। शाकाहारियों के संतान की आँखें पैदा होते ही खुलती हैं, बंद नहीं रहती, जबकि मांसाहारियों की दो से तीन दिनों तक बंद रहती है। सारे तथ्य मांसाहार और शाकाहार की प्रकृति को स्पष्ट करते हैं। वेज या नॉनवेज के टेस्ट की बात करें तो पता चलता है कि टेस्ट मांस का नहीं उसमें प्रयोग किए जाने वाले प्याज, लहसुन और विभिन्न प्रकार के मसालों के मिश्रण का स्वाद होता है, जो हमारे जीभ में पाए जाने वाले चार प्रकार के स्वाद कालिकाओं द्वारा ग्रहण किया जाता है।
