Mackerel Udon I grew up eating tinned mackerel. When I was younger I would often indulge in my own concoction of mackerel fillets straight out of the can on hot buttered toast. (It’s very good - as far as I can remember). I haven’t had tinned mackerel in a long time so was happy to see @ixta.belfrage showcasing the humble shelf staple in this absolutely delectable udon dish. The vegan bean cookbook, by fellow food blogger, Andrea Soranidis, (@thepetitecook) is packed with protein rich, delicious sounding, healthy meals that have me raring to get stuck in. The book is divided into seven chapters where beans feature centre stage. Mains, burgers, soups & stews, pasta, salads & sides, snacks and finally desserts. Yes, you read correctly, desserts! Beany brownies are nothing new, but have you thought of pulses in your banana bread or chocolate chip cookies? Andrea has all three of these and more. I’ve already highlighted a couple of recipes I can’t wait to try: spaghetti & bean no-meatballs and mung bean coconut curry. But mostly I’m looking forward to trying out the recipes in January. Recipe Testing For Our New Dessert Cookbook - Coming Out Soon! Testing traditional family recipes and converting them into gluten-free deliciousness is one of our very favorite things to do. These past few days we worked on perfecting the classic ‘Cannoli’, ‘Mamma’s Twist Cookies,’ and ‘Roccoco.’ It's what I like to call "Kitchen Chemistry.” After several tries, we finally created the perfect gluten-free recipe for all three! In addition, we decided to make mini tarts with the ‘Cannoli’ dough filled with our homemade cherry marmalades. They were incredibly delectable!! And just because we were in the groove, we decided to make gluten-free pasta for dinner.
