Easy and Minimal recipes to cook during Lockdown

And we are back with a bang and news of lockdown extension. The whole country is trying to deal with the stress of COVID-19 by staying indoors. Each one of us is coping to keep the COVID-19 at bay either by cooking or painting or following a fitness regime. Lately, I found all of my social media got filled with a news feed of the very famous and trending Dalgona coffee. People are going crazy over the frothy beaten coffee and it has become a must-have quarantine food.

Due to this complete lockdown, many moms are stressed as they are running short of ingredients. So today, I am going to share some quick and easy recipes that you can prepare in no time with easily available ingredients.

Malai Paneer Chilli Flakes Balls

Crumbled cottage cheese balls, a no-fuss starter that can be made very quickly and has a melt in the mouth texture. Healthy and tasty!!

Ingredients: • 1 cup Cottage cheese crumbled • Salt to taste • 2 tbsp dry red chilli flakes

Method: 1. To make malai paneer chilli flake balls, combine paneer and salt in a bowl and knead well to form a soft dough. 2. Divide the dough into equal portions and roll them into a round. 3. Now roll them into chilli flakes till they are evenly coated from all the sides and serve them immediately.

Stuffed Cheelas

Loaded with nutrients like vitamin A, iron and folic acid these cheelas are helpful in boosting immunity. Treat your family with the goodness of health. Serve them with a glass of milkshake or smoothie as breakfast.

Ingredients: • Stuffing: • 1 cup mixed sprouts • 1 tsp butter, oil or ghee • 1 tsp cumin seeds • 1 tsp chopped green chillies • ¼ cup finely chopped onions • ½ cup chopped tomatoes • 2 tsp chaat masala • Salt to taste

For the Cheela Batter • 1 cup besan • A pinch of hing • ¼ tsp turmeric powder • 1 tsp ginger garlic paste • Salt to taste

Method: 1. Heat oil or butter in a pan and add the cumin seeds. 2. Add green chillies and onion and let it cook for 1 minute. 3. Add tomatoes, mix well and cook on a medium flame for 2 minutes. 4. Add the mixed sprouts, chaat masala, and salt. Mix and cook on a medium flame for 5 minutes. 5. For the cheelas, combine all the ingredients in a bowl. 6. Add water to form a batter of pouring consistency. 7. Heat a non-stick Tawa and grease it with butter or oil. 8. Pour a ladleful of the batter and spread it evenly to make a thin circle. 9. Cook till it turns golden brown from both the sides. 10. Now place the stuffing in half of the cheela and fold the other half to make a semi-circle. 11. Serve immediately with sauce or chutney of your choice.
