🥣 Memu's Hearty Chicken Noodle Soup Recipe 🍲

Welcome back to Cooking with Memu! Today, I'm excited to share a comforting and nourishing recipe: Hearty Chicken Noodle Soup. This classic soup is packed with tender chicken, wholesome vegetables, and flavorful broth – perfect for warming you up on a chilly day or whenever you need a comforting bowl of goodness!

Ingredients:

1 tablespoon olive oil 🫒

1 onion, diced 🧅

2 carrots, sliced 🥕

2 celery stalks, sliced 🌿

2 cloves garlic, minced 🧄

8 cups chicken broth 🍗

2 cups cooked chicken, shredded 🍗

1 cup uncooked egg noodles 🍜

1 teaspoon dried thyme 🌿

Salt and pepper to taste 🧂

Fresh parsley, chopped (for garnish) 🌿

Instructions:

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and sliced celery. Sauté for 5-7 minutes, or until the vegetables are softened.

Add Garlic and Herbs: Add the minced garlic and dried thyme to the pot, and sauté for an additional minute until fragrant.

Pour in Chicken Broth: Pour in the chicken broth, and bring the soup to a simmer. Let it cook for about 10 minutes to allow the flavors to meld together.

Add Chicken and Noodles: Stir in the cooked shredded chicken and uncooked egg noodles. Continue to simmer for another 8-10 minutes, or until the noodles are tender.

Season to Taste: Season the soup with salt and pepper to taste. Adjust the seasoning as needed.

Serve and Garnish: Ladle the hot soup into bowls and garnish with freshly chopped parsley for a pop of color and flavor.

Super delicious onion soup, made from 1kg of onions. I thought it is going to be too much, but hey, it really doesn't. Made from vegetable stock is such a perfect warm up bowl, with a garlic bread. 🤤🤤🤤 Who want's to try? 🙆‍♂️🙆‍♀️ @aliceeatsgrass made it at first, I saw it, liked it, and saved it for later. 🤗 You do the same now, save the post, and you have super easy, delicious and quick onion recipe at hand. You just need to go to saved up posts. That it it! Here is her recipe, whatcyou will need and method to make it: 1 kg onions 6 cups of broth 1/2 cup of white wine salt, pepper baguette + cheese olive oil I used for the first time vegan alternative cheese called Koko, it is soo good. Start with slicing the onios and opening a bottle of white wine. Poup some in glass for yourself to enjoy. 😉 Heat up butter or oil in a pot and fry the onion on low heat until soft and goldish. Pour the wine, stir and let it evaporate. Add the broth and cook for 15 mins more. Season with salt and pepper, optionally with herbs, such as thyme. Meanwhile cut few pieces of baguette or bread. Put the cheese on top and roast in the oven until crispy. You can either blend the soup a little to make it smooth or leave as it is.
